The meats are equally good, super thinly sliced ribeye which is cooked and then wrapped with garlic chips and scallions and then placed on a piece of bread (it's meant to soak up the oil but I guess you could eat it too!). They also did toasted bread with tons of butter and then added sugar which caramelized. So easy but so good! Epic meal! No idea how people find this place. It's really small, on the 3rd floor of a building and doesn't seem to have a website that I could find at least. The room we were in was private and I'm not sure if all the rooms are like that. A big warning: if you are uncomfortable with watching your dinner being tortured and dying a painful death, DO NOT ORDER THE LOBSTER. Our chef is great. He doesn't do gimmicky tricks but his hands work the grill with precision and flaire. He's also acutely on top of what's going on. He signals the waiters when our sake runs low, and offers to take a group picture when we are taking pictures among ourselves. He also grills some extra garlic when he sees how popular it is, and gives us extra bowls when he sees us sharing the rice. Myriad little things that get noticed and taken care of before we have to ask. While this place scores low in my book for animal rights (almost dock a star for that but then who am I to judge other culture's dining practice?), it gets points for workplace diversity: there is a female teppanyaki chef, and a few employees with disability.

Not just kind of fantastic, but "holy crap this fish is so fresh I should slap it" kind of fantastic. The sashimi scallops and sweet shrimp were so delicate and sweet and simple perfection. The tuna, the flounder and the salmon were equally perfect and cut in large fat sizes. We sat at the actual sushi bar and were able to see all the cool rolls and items that the sushi chefs were preparing. Quite the art amongst this group of sushi chefs! We ordered veggie tempura and a bottle of cold sake. Cold sake was presented in a cool serving vessel and kept pefectly chilled until the last drop. The staff was so accomodating and on it at the completion of a dish, refilling of tea or reorder of more sushi. A lot of staff, regularly available, welcoming and helpful, genuinely glad that we were there and happy for our business. The restaurant is not large, seating only 50. It does have a small sushi bar that sits about 10 and also a teppanyaki bar that sits about 10 too. Then there is the small dining room and also appeared to have a private back room of some sort. The low ceilings and the llight wooded walls make the place have a warm feel, but there is no sitting on the ground or anything here in some traditional Japanese spots. This is not a bustling area at 6PM on a Sunday, very dead really. We think this place and the restaurants all around it must have a busy work crowd during mid week lunches and such, for again it was dead when we showed up. The whole plaza around Fukumura appeared dead. But don't let this fool you, this restaurant was great and we would defiinately go back. It is expensive, so be warned. We walked out with a bill around $2200HKD for just the two of us, but you get what you pay for. They do have a $600HKD sashimi sampler that included tuna, salmon, shrimp, scallop, toro and something else. We tend to over indulge when it comes to sushi, so our bill can get out of hand. So if you are not getting out of hand, neither will your bill.

After leaving us with the menu for a 15 minutes, she came back and told us that we have 90 minutes to dine and the clock started ticking the moment we sat down. I replied that we had been waiting for someone to come by to take our order, and also needed help navigating the menu (which, while colorful with pictures, isn't very explanatory). My friend ordered a green tea, which the waitress said they don't have. Surprised that the restaurant doesn't offer tea, I checked the menu and pointed to the tea item. That's oolong tea, she said curtly. Okay, that is correct, but she could have nicely asked if we may want oolong tea instead. She also dropped off our orders without much explanation, so we were rather confused as to how to cook our food. Fortunately, a server took pity on us, gave us a step by step, and then set the alarm for us... "flip it after 5 minutes, then reset and flip it after another five". First off, a little context: Wa San Mai is huge - it's like its own world on the 22nd floor, covering over 10,000 square feet. There is a teppanyaki side, and a sushi/standard dining side, and another area for settling the stomach. A really wanted me to try the flying fish sashimi here first - mainly because they use the bones and head to make 'chips' more than the sashimi itself - so he asked the server straight off the bat. The server said that the fish hadn't been flown in from Japan yet, but should be arriving in less than half an hour. I'm not sure whether this guy was making Wa San Mai seem more decadent than it already is, but it worked - I was impressed. Of course, we ordered this on top of the mountain of food we had ordered in our set, and were not disappointed - incredibly fresh, and with bone 'chips' that offered a completely different texture to the smooth sashimi. As for our set... hedonism at its gastronomic extreme. To start, we had an abalone and shrimp amuse bouche. Followed by teppanyaki scallop, wagyu steak, sake clam soup, and lobster two ways - teppanyaki and soup. Everything was a masterful show of knifeskill and grill in front of us, by an expert teppanyaki chef. He later refused our cheers of Sake because he said he would be driving a motorcycle home that night, but we made sure to tell him how appreciative we were. After all this, how could we do without the totally unnecessary but traditional ending of fried rice? After fried rice and nearly collapsing onto the hot steel into a food coma, we were taken to another room where we were allowed to indulge in green tea and sesame ice cream for as long as we pleased, accompanied ten minutes later by tea and coffee.
