Sushi Ginza Onodera, with the first opening in Ginza Japan in 2013 and other locations in Hawaii, Paris, Shanghai, LA and NYC following since, is a unique, high-end, exclusive, private, sushi or teppanyaki experience designed for those with sushi dollars to burn and an interest in broadening your palette when it comes to what you think you know about sushi and teppanyaki. This also explains the line up of Bentleys we have seen on the street outside this place as we walk by this spot every day. I think Sushi Ginza Onodera and Teppanyaki Ginza Onodera are in the same location, are the same business entity, but depending on what route you are going might determine then where you are seated in the restaurant and are two different experiences. I think this restaurant brand is actually more known for teppanyaki.
We made a reservation. We were casually dressed. Restaurant is located inside the bright blue painted Hotel LBP. Take the elevator you see just to the right of the hotel entrance/corridor at the street level up to Sushi Ginza Onodera. You arrive to a quite, intimate spot, very exclusive and simply decorated. We were greeted and welcomed by hospitable staff.
We were eating sushi, so upon our arrival, we were escorted to a sushi bar that could seat about 10 people that was constructed of white washed woods and was very clean/uncluttered. There is no case with fish on display at normal sushi bars, this is not your normal sushi experience. A sushi chef and his assistant arrive after you make a selection of one of the three pre-set menu's offered. You do not pick individual sushi, you select one of three menu's that are already put together. We went with the menu in which the chef puts together his best personal selections that night. We ordered sake to get us started.
Throughout the evening, we are eyed and overseen by a staff member who is virtually standing at our shoulder to offer a napkin, explain a piece of sushi that has been presented, warm our tea, fill our sake glass, etc. They are dressed in black suits and ties, which seems all very formal and also all very "Men in Black," short the black Ray-bans they wear in the actual movie. Their English is 50/50, but they are all very kind.
After ordering our pre-set menu selection, the sushi chef shows up in front of us and starts working. He seems friendly, he speaks limited English, seems like a maestro and is working so effortlessly, so delicately, so precisely on preparing each and every piece we will consume. Delicately prepare, grind out fresh wasabi, make it picture perfect, present to us to eat. One piece at a time. Repeat. The experience of watching this sushi chef prepare our meal was mesmerizing. He was so exact, he was so caring with each sliver of fish, he was so precise. I could sit there and watch it all day long. It his apparent that he is really an expert at this craft. The experience of eating here takes a bit of time.
We maybe had 10-15 different sushi selections and each seemed like sushi items we had never consumed. Silver fish, needle fish, monk fish liver, the rare rare rare trans-sexual like salmon that is like 1 out of every 10,000 salmon on the planet in which a male gives birth to a salmon...we only understood about 10% of what our "Men in Black" host was trying to explain about this, but we took a photo of the license associated with this one fish we were consuming. Each piece of sushi was unique and beautiful and made with our sushi chef's exquisite skill. They make the wasabi fresh by rigorously spinning out the wasbi root right there on a board in front of you and continually does so throughout the night as more wasabi is needed. When he then pulled out the one fancy sword that is used to only cut tuna....I think I might be dreaming and this is not really happening. Just a very interesting, very special sushi experience. I feel like our repertoire of sushi knowledge has grown exponentially since dining at Sushi Ginza Onodera.
Our experience for two, including two bottles of sake came to $4750HKD. We are glad we went and absolutely understand how special this chef and this experience is. It is an absolute 5 Star Yelp experience, but more due to quality, experience and exclusivity versus value and quantity. My husband and I indicated that we would come back sometime to enjoy the teppanyaki experience, but we most likely would not be back for the sushi experience. It is a pricey bill for two on a random Saturday where I am in a t-shirt and my husband is in flip-flops (I think you can be super casual or dressed up, either or). We appreciate the experience, but the cotton might be a bit too tall for our preferred sushi expectations.
