On the other hand, the Sweetened Pistachio Cream initially fell flat -- until I discovered that mixing in the accompanying sugar coated pistachios gives the texture and some sweetness necessary to enhance the otherwise flat flavor. Unexpectedly, my favorite thing came from the petit fours. An unassuming almond shortbread cookie that proved the perfect complement to the otherwise lackluster Pistachio Cream. The outstanding thing here is the decor, for those who like luxurious opulence. Settled within the St. Regis Hotel, modern luxurious grandeur exudes throughout. Something that photos can't capture, but can be experienced in person. Service is on par for restaurants of this caliber, with the staff going above and beyond. I was super impressed when a waiter proficiently pulled out a flashlight to spotlight an abalone so I can take a better photo. Kinda funny. And a first for me. With Hong Kong being the paradise for food, amazing restaurants can be found for all price ranges. Why spend on a Michelin Star one when you can find way better food elsewhere? There are some small fish tanks in bird cages hanging in the restaurant. There are also many photo portraits which were taken by the owner, Mr. Lau Kin Wai. The steamed taro cake however was admittedly overcooked and dry. The stir-fried singapore-style vegetable and beef noodles were excellently flavoured with the delicate combination of sweet chilli and pepper emmersed in the crunchy texture of vegetables alongside the soft noodles. The fact that when ordering roast duck soup noodles the meat is served on a separate plate from the bowl of noodles is a wise decision as this enables the meat to be provided with maximum taste and accompanying sauce without drowning it in soup. The only little improvements I would make to this restaurant would be to install an escalator as currently a flight of stairs must be climbed in order to enter the dining area which may be troublesome for elderly folk and I would alter the eating bowls being used as they are a little too shallow, reducing your desired ability to gather more of the delicious food and soup into the bowl for your consumption. (Most dim sum places in the US leave the black mushrooms out of the recipe because the good ones are expensive). The dumplings were smooth and tender, and without a trace of chemical tenderizers commonly used by most dim sum restaurants. This is as good as it gets! Other staples were also amazing. Har gows were fresh, crispy and juicy. The rice noodles were so perfectly thin that they were translucent. Bean curb wraps were super yummy. Beef balls were on point, moist and flavorful, and sans the taste of tenderizer. The XLB's were good but unimpressive, but that's probably because we just had those at Wu Kong the day before. Every item was freshly steamed and served piping hot - so fresh and so hot that the steam messed up my camera lens and I had to wait for the steam to dissipate before taking my pictures. (Note: While carts are still a gimmick in parts of the US, it has been pretty much extinct in HK and many parts of Asia for decades). Other than dim sums, we also ordered a BBQ pork and roasted pork plate, which was delicious, and light on soy sauces and artificial flavorings.
