Visiting CK's cousin in Seattle and she took us here. The line had about 6 people when we arrived. The menu is limited with some meat and vegetarian options, which I find to be a good thing because they know what they're good at. Small parking lot shared with Benjamin Moore Paint I think and a small coffee shop. The tortilla's are like dinner size (not street taco size) and doubled up. The amount of protein they put into it is literally PERFECT. They don't overfill but it's definitely enough, and the way they place the portions, it doesn't overflow or spill out. Minimal mess to clean up afterwards. I thought the chicharron pork rinds would be crispy, but it wasn't as there was a chile sauce on top. I still enjoyed it and found it flavorful, even though the texture had changed. CK let me try the cochinita pibil and it was flavorful, and more of my preference. My favorite had to be the encebollados (steak w/ sauteed onions). The toppings for each meat are also pre-determined and not the traditional onions and cilantro. When I heard this is the best taco in Washington I knew I had to try it. I came at 12:45 on a Saturday and there were plenty of free parking spots and a short line. Within 15 min I was able to place my order, and was told it would take 25-30 min. I was asked if I wanted them "extra spicy" so I said sure. Good, modern tacos served in a food truck off of Gilman in Issaquah. When I went, it was on a Wednesday and it is an observed holiday, but they were open, so it looks like it is as crowded as a Saturday. I went around 12:15pm and it took about 5 min to order but another 30 minutes exact to get the order, so be prepared to wait. Tacos were above average but a lot of the experience went down because they used to do the combo to try more variety but now they only offer large tacos, so you are forced to only be able to get 2-3 kinds and be full and have to come back, a luxury that a lot don't have. I got the cochinita pibil and encebollados from the meat options, and the bruselas from the vegetarian options. By doing so, I make do with the variety on hand and get to try how they do the meat and vegetarian options. The tacos come with various toppings, like pickled onions from the cochinita pibil and feta from bruselas (brussels sprouts). I liked the brussels sprouts and encebollados the most, as the cochinita pibil was a bit on the salty side. It's a food truck with limited hours and good food. They have couple of benches to sit down and enjoy your meal. They have couple of vegetarian options which you hardly find. Amazing. It's the perfect mix between street tacos and restaurant versions in that they are flavorful without trying too hard to be a "fancy taco." I got three tacos which I recommend as a portion size unless you're particularly hungry. These tacos are full! I got the cochinita pibil, encebollados, and rajas which were all delicious. The meat ones are juicy and have the perfect balance of flavors from the pickles or onions, while the vegetarian option I got (rajas) had plenty of kick from the smokiness and sauce. The wait can be kind of long but it means your tacos are made fresh to order and come out piping hot. Xochi is a food truck located in a small parking lot in Issaquah. I've heard high marks about this place and I've been trying to find my Seattle taco spot so I wanted to try it out for lunch. Unfortunately they no longer have the taco combo where you can buy five smaller tacos, but I still wanted to sample as many as possible. Their single tacos are $4.98 each and are bigger than the size of the taco combo ones, and I ended up trying all five of the meat options. TINGA - I thought this was just okay. It was juicy but not super flavorful. 3/5 ENCEBOLLADOS - This was very flavorful and had a nice char to it. There was no sauce but it didn't need it. 5/5 CHICHARRÓN - This was pretty interesting; chicharrón is normally crunchy but it had a weird texture now that it was soft. It was spicy and had good flavor but the texture was a bit off for me. 3.5/5 COCHINITA PIBIL - This was a simpler taco and I liked the pickled red onions but it was just okay. 3.5/5 CHORIZO - There was good flavor in this taco and I liked the addition of the potato. This one was good. 4/5 Of all the ones I tried my favorites were the encebollados and the chorizo. Some of them had really good flavors which even made me intrigued by their veggie tacos. I was looking through Yelp for somewhere fast to eat in Issaquah and stumbled upon Xochi. It has pretty great reviews and for good reason. Xochi is located in a little parking lot shared with another little cafe cart that sells coffee and baked goods. When I stopped by on a random afternoon for lunch, there was a huge crowd of customers gathered around the Xochi cart. The lady working the register was super smiley and friendly. It was obvious she loves working here and it motivated me to buy more so great job to her. I decided on 4 tacos: the one with peppers, the one with Brussels sprouts, pork with pickled red onions and the beef. Of all 4, I liked the pepper one the most. They were all delicious, but I'd go back for the pepper one for sure. And I got that one thinking I wouldn't like it. Strange. The tacos were served hot after about a 15 minute wait. The fresh cheese and different robust flavors of the tacos really paired well and I found myself enjoying every bite. There was a lot of filling in each one too, because I was skeptical of the price when I was ordering and then understood why they were so expensive once I started eating. Since moving to Seattle I've been on the hunt for chicharron tacos. The soft melt in your mouth kind. Well Yelp Washington posted a video about Xochi and so when i went to their page the first post was one of the chicharron tacos i was looking for!! So I shared with hubby and we went immediately. OHMYGAWD. Why are y'all gate keeping Xochi? I mean I get it. The tacos are everything. Made fresh to order and expect a wait. Ours was 30 minutes but luckily I read some reviews on Yelp and was prepared for said wait. It was the perfect day on our visit so we are able to sit with some sun and shade in the picnic area next to the truck. I was told that they had combination plate with 5 tacos for $15.00 but on our visit today they did not. Only single tacos for $4.95 each. To note, when I asked about the combination plate the young lady said that 3 single tacos would equal the same amount of food for five smaller tacos on the combination plate and be the same price. So me and my man went with 4 each. Between us we had chicharron x 5, encebollados x 2, and one cochinta pibil. The young lady asked if we knew what the chicharron tacos were. I said yes, I saw the photo on their IG page. And she said a lot of people think they are crunchy and hard. I said oh no, we know. We've been on the hunt for these since we moved out here. THE BEST TACOS!! EVER!! I made a quick trip to Issaquah and did not have time for a sit down restaurant. Saw this place, food looked good and it was a food truck so I thought perfect! Quick in and out! Anyhow, Great service, nice place out back to sit, relax and enjoy the food and the tacos. Everyone loves Taco's, but these take it to another level. The flavors are awesome, I tried four including one veggie and everything was world class, plus, they had a nice bit of heat to them too! Seriously though, there are a few restaurants that I have come across in my time that I long to go back to, Red Bar in Grayson Beach, etc and this place is not on my list of top 10 restaurants; yep they are that good! I just came here for my third time and it was even better. They do yummy and unique street tacos very well. I got the chicken Tinga and the chorizo/potato street tacos. My order came out pretty quick. I was there around 12:30 on Thursday. But right after I ordered there was a line up of about 8 people. The gal that took my order gave good recommendations but I think everything is good. Note that this is a food truck experience but it's a truck that isn't going anywhere I don't think it has wheels . 2 tacos are perfect for a avg person. The best tacos in Issaquah and quite possibly the Eastside. I've been eating tacos at Xochi for several years now and I'm so happy this little taco stand finally got the notoriety it deserves. The tacos are not your ordinary street tacos. Each one is unique and to be honest, the veggie tacos might be better than the meat tacos. Coming from a Tyrannosaurus Rex like myself, that's a big statement coming from me. I always like to order the Combo Tacos, which allows me to choose 5 tacos to try. My top 4 have to be the Rajas (Poblano Peppers), Chicharron, Cochinita Pibil (Pork), and the Bruselas (Brussel Sprouts with carrots and garlic). Each taco has such a unique bite. I don't know how many times I've ordered the Combo Tacos, but once in a while, I'll order the regular size tacos. When that's the case, 3 is more than enough. I stopped by on a Saturday afternoon and there was no one waiting outside the truck, the window was closed, and I wondered if they were even open. They were, and despite looking like no one was around, they told me the wait would be an hour. We weren't starving so we decided to go for it, and ordered a mix of veggie and meat tacos to try. We left, came back about 45 minutes later, just as our number was called. The tacos were so hot and fresh, and each was flavorful and delicious. They weren't super large, so one hungry person could probably eat five, but we split. I definitely want to come back and try more tacos, but would call ahead next time and plan better. The one thing preventing me from giving it five stars was that there's no follow up system regarding your order status (like a text message). The staff is wonderful and always let you know a completion time for your order and they're spot on 98% of the time. My favorites are the tinga chicken taco, the papas taco, and the rajas taco.
