I'm a big fan of Borough Market and even in such a well established market, there is still change. On a recent visit, my eye was caught by Wildes Cheese's new stand. They advertise themselves as the urban cheese maker
They get their pasteurised, un-homogenised milk from a single herd of cows in Rye and they make their 8 cheeses at their micro-dairy in Tottenham. I'm always up for some new cheese and the girlfriend and I were treated to some samples
The cheeses had character, which I love. When we had chosen our favourite, we were modestly told that that cheese had just won third place at the recent World Cheese Championships. A most impressive feat considering they've only been in business for 2 years
