Nice, quaint little local restaurant about one block from the main train station in Brig. The staff were wonderfully pleasant, and as with many Swiss restaurants, were multilingual (i.e., spoke German, French, and English ... and probably Italian!). The food was very good, hearty and typical of Wallis cuisine.
We started with a classic "wallliserteller" of local meats and cheeses, bunderfleish (dried beef shaved thin), speck, local salami, proscioutto-style ham, and some very good, hard cheese.
A few of us had a classic Swiss rosti, with cheese, local speck (a smoked bacon), and carmelized onions. If you have never had rosti before, imagine the best, greasiest hash browns you've ever had, cooked in a ceramic dish, with cheese and other goodies melted on top.
Another in our party had the kaseschnitte, a hearty slice of bread in that same ceramic dish, covered in melted cheese (are you seeing a theme here?) and ham.
The fourth person had tomato fondue, basically a standard cheese fondue, but with tomato paste and tomato juice mixed in, giving the dish a slightly more tangy and savor flavor. It was served with hunks of hearty bread, boiled potatoes, and pickled onions and gherkins.
