First time coming here and was not impressed at all. Truthfully I would give this restaurant 2.5 stars if I could cause I don't necessarily think it deserves three stars. If I could just say one thing everything here lacked flavor and was bland. To start off, chips and guacamole. Guac - bland. Had to add more salt and pepper and was still bland. Sangria - okay really nothing much to say here. Got fajitas for 2 and it looked promising when it first came out but wow the meat had no flavors. We got chicken and beef and there was just no flavors. Literally had to keep adding salt to make it taste better. The only good thing about the dish was the portion. Very big, had lots of leftovers. Their servic is HORRIBLE!! We sat with waiter after waiter walking by and no service. Tables around us got service waited on drinks and food not us....we had to stop someone and ask for help. They said they would send someone over. We gave our order...got water for drinks instead of diet cokes!!! I was really impressed with the food at Vaqueros- their enchilada sauce is homemade and it's delicious!! My favorite by far and will make me return were the chili rellenos! You can order soft or hard- I like soft- it was amazing!! Best I've had in the area. My husband loved his burrito! Service was great- my only gripe is cost- it was pretty expensive. Also i requested no lettuce- it's a huge pet peeve of mine that Mexican restaurants sprinkle lettuce on everything and the lettuce gets all warm and slimy. A Margarita is 16 bucks! This is one of our favorite restaurants in the springs. A great family owned place, it has a very broad menu, something for everyone, however, i get the same thing every time! I love the "crazy donkey". Wife is a big fan of the flautas. Their margaritas are some of the best in town. They saved us during the pandemic with margs to go! I hope they can continue that. They are opening a new spot in Northgate in the old CB Potts restaurant. Hopefully its as good as this one. It will have some killer views for the outdoor tables! read more

Wonder Wife and I made an impulsive decision to go out to dinner last night since neither of us wanted to bother with cooking. You know... the kind of decision we can make because we don't live in a Marxist "Worker's Paradise". We drive by Vaqueros all the time when we're on Powers, so we decided to stop in and give them a try. We were seated in the bar area, which is fine, and I figured the service would be pretty quick since there were only two people at the bar and maybe three other tables (of two) that were seated. The bartender was attentive and checked with us a few times to see if we were ready to order and was patient when we put him off. Chips are average, salsa is pretty good. I had the #18 - Tamale, Taco and Enchilada and asked for a beef taco and cheese enchilada. WW had the #5 - Enchilada and Chile Relleno and asked for a cheese enchilada, crispy relleno and green chili instead of enchilada sauce. The food came out quick enough and the plate sizes are impressive. WW liked the rice, while I thought it was bland as were the beans; I used quite a bit of salt on both before I gave up. Others have mentioned the food is greasy, and that was the case for us, too. The ground beef in the taco was pretty greasy and the chile relleno had a pool of grease form once WW cut into it. She even made the comment about the cheese on top of the beans: "Wow... this looks like it should have pepperoni on it". It's doubtful we'll be back. read more

20% upcharge for takeout. They don't tell you this on the phone but its evident when you pay the bill when picking up your food.

Maybe they were having an off night, but we did not have a good experience. Maybe our server was new, but she mumbled her questions, gave inaccurate information about the dishes we ordered, left us sitting for an an extremely long time before bringing the check, and overcharged us for our drinks. The salsa was very good; the enchiladas were not (dry, barely seasoned, canned (?) chicken inside). Everything was overpriced in my opinion, and they gave no military discount. Just not an experience worth a return visit, especially given so many better options in town. read more

I heard the green Chile here was bomb, so I had to try it out! My friend and I met up for dinner and were pleasantly surprised with the chips and salsa offered. The salsa was nice and spicy! My friend had a peach margarita (dangerously sweet) and I had the original. The small was served in a tiny glass but they gave me what was left in the shaker, so it was like bottomless margarita for a while. We ordered one each of the spicy and mild green Chile bowls, and our waitress served up some tortillas along with it. Both were delicious, and the spicy was the perfect level to compliment and not overpower. We each had burritos, and they were HUGE! Enough for two meals! Hard to decide from so many menu items! Always taste good, easy to get seated, great wait staff. Yum chips and salsa. Beautiful view of mountains if you have the right table. My new favorite Mexican restaurant in COS. I've been for lunch and dinner and got the same dish each time. Pictures are attached. Basically a fajita plate, but lunch is a perfect portion. I took half of the dinner plate home. Delicious rice and beans. The salsa has too much cilantro for my liking, so I splurged for the chile con queso tonight and we finished the bowl. It was so good! They have a good selection of tequilas and margaritas and a nice looking dessert menu. One day, I'll make it that far, but I haven't yet. Definitely my go-to Mexican restaurant here. I seriously don't know why we come back here ever, except that the food is good and it's close to our house. Every single time we come here we spend 20 minutes waiting for someone to even greet us, another 10 waiting on drinks and at least 20 waiting with dirty plates for someone to notice we are finished and bring us a check. I routinely get up to find my own boxes or track down our waiter/waitress to then actually run my card so we can leave. If you don't care at all about service, the food is always good, so there's that. read more

The last time however that my husband and I ate there we found that their food needed more spices on both their rice and the food itself. This is one of our favorite Mexican restaurants in Colorado Springs. Great food, awesome service, and solid Covid precautions in place. They even take your name, phone number, and time you arrived when you get there to make any necessary Covid tracing easier. You get chips and salsa when you arrive, the salsa is delish. It has a little kick but not too much, the cilantro in the salsa makes it one of my favs. Plenty of parking around the building, everything is always clean, and the atmosphere is great. read more

My girlfriends and I meet here almost weekly, for a girls night out. Sometimes we do margaritas, sometimes just water. The wait staff is so efficient, and very gracious when we sit jabbering long after the check has been dropped. We are respectful enough to over tip them for taking up their table and cheating them out of another turn/opportunity for more tips. However... We am finding that week to week, the food seems to be inconsistent. This week, Instead of getting something that was laden with carbs, I chose to get the coctel De camerones. . The shrimp were cooked but a hard consistency... Possibly frozen and then thrown into the coctel and allowed to defrost in it? It was a watery coctel with little flavor... but the avocado was beautiful. The guac was good, the salsa was good & the housre margarita was good, too. read more

My husband and I are here every Friday night. We enjoy the food and the drinks. Especially the employees they are friendly and welcoming.

After a couple more visits and giving them time to iron out the kinks I had the Carne Asada again today and it was PERfection. The rice and beans had more flavor, too. Still thought the guacamole was too salty. I asked for spicier salsa which she brought to me already mixed and it was delicious.
