One of our favorite things during the pandemic when restaurants could reopen was picking up their in house chicken pot pie. It's my husband's absolute favorite chicken recipe which I used to make myself. Though I am unable to make it now that l have lost a lot of vision and not a single one we have bought elsewhere was sufficient until we ordered from The Post Boulder. After a short time it became too labor intensive for the Post to make in house back then with limited staff so they contracted with a pie facility in Denver. Compared to their own it was merely adequate so we moved on to there other in house specialties. As we were ordering gold specials for Sunday!s big game, I saw that the daily specials now include Chicken Pot Pies Thursday's so we went to try it. This ficus a personal size freshly made this morning it was nice to have for a meal with a side salad. But though good, it was not as hearty as the one we loved 5 years ago. Staff was friendly and attentive and my husbands favorite beer (El Korn) was on tap and my iced tea was customized perfectly . We even brought most of the salad home as it was a large serving for a lunch. We'll be back on Sunday for our wings and other treats that we need to pick up. And we can come back again for a lunch or dinner as the have more items for people like me who cannot eat fried chucked, with their grilled chicken or salmon.

Started with the cauliflower bites in sweet chili sauce -- and let's be clear -- these were not polite, side-salad energy cauliflower. These were "touch one and we're no longer friends" cauliflower. Sweet, crispy, addictive. I fell in love against my will. Then the fried half chicken arrived. Crispy on the outside, juicy on the inside -- like someone's Southern aunt spent years perfecting it. And yes -- there's a gluten-free fried chicken option that somehow tastes just as good. A plot twist I didn't see coming. The collard greens had that smoky-sweet-Sunday vibe, and once the house hot sauce entered the chat? Full gospel choir moment. And William at the bar? Welcoming, honest, and actually tells you what's good -- not "everything is amazing" menu-script energy. The man can be trusted.

The sound and the joy gave off such a great vibe immediately when walking into this establishment. This review is based on a sit down dinner and a take out on another night because our sit down was so good! Here's all that we tried: POST CHEDDAR BISCUITS - hot and cheesy - these were not as flakey as they looked like they were going to be. Not bad, but nothing to write home about. ROASTED BRUSSELS SPROUTS - sweet and spicy peppers, garlic mojo, cotija cheese | *a portion of sales from this item go to Zero Foodprint -- an org working to combat climate change in the food & beverage industry - these were good, great crispiness, char was flavorful and the sauce was sweet and tangy. Subsequently, I made a hash for breakfast with leftovers from here and these proved to be GOOD flavoring. GREEN CHILE BISON SAUSAGE BOARD (LAFAYETTE) - Rock river bison sausages, hard boiled eggs, dill pickles, bread and butter pickle relish, baked baguette, peach honey mustard - I'm a sucker for charcuterie, the bison sausage was so delicious, I ordered another after we finished the first. This also went into the next day hash! FRIED HALF CHICKEN - our famous gluten free fried chicken, choice of side, pickles, and a biscuit - ordered this on or second visit (takeout night) and did not regret a thing. It was fantastically fried to crispy perfection. The chicken was juicy and tasted like they brined it in pickle juice. CHICKEN TENDERS - all natural tenders, breaded and fried, served with ranch - good chicken, also went into the hash. OG POST BURGER*- american cheese, bacon onion jam, special sauce, griddled sourdough english muffin & fries - good burger, personally, I'd appreciate better cheese! QUINOA & KALE - quinoa, kale, arugula, roasted sweet potatoes, pickled red onions, roasted tomatoes, cucumbers, toasted sesame and sunflower crunch, lemon tahini dressing - the dressing MADE this salad, good job Chef! PUEBLO GREEN CHILE MAC & CHEESE - nothing spectacular, I would have liked this with more green chile and a better cheese base. The parking isn't a lot, but it didn't seem like people had trouble at all. We walked. It's a great little neighborhood restaurant. As I said early on, it was tasty enough to warrant a second visit!

There was a specific spot set up for weddings with the backdrop of the river and the beautiful aspen trees that were changing colors. It was obvious that this wedding venue knows what they are doing. My husband and I joked that even if our wedding was a dud, the venue alone would wow people. The walk through video on their website is just a glimpse into the magic and joy that this spot holds!!! From the ceremony site options, to the bridal suite, to the dining area and the dance floor, we enjoyed all of the spaces this place has to offer. Our 108 guests loved the food, the drinks, and the views so much, they couldn't stop commenting all night on how beautiful and awesome this venue was. And our photos turned out incredible with the mountains, the river, the trees, and the outdoor lights. Dawn is responsive and helpful and she knows what she's doing! My one area of constructive criticism would be recommending that the venue provide a clearer timeline to the couples getting married. I typed my own up based on our meetings but the venue stated they'd send it a few times and never got around to it. Otherwise, I can't say enough WONDERFUL things about this spot. Hospitality is their jam. The rentable items like the arch and photo booth, the in-house decorations, and the food options are positively stunning. The staff is phenomenal, the on-site honeymoon suite was so clean and comfortable, and there was lots of space for kids to run around. An amazing AMAZING spot to make memories and start your married life with your partner off right!
