Somewhere Between New Orleans and My Table, the Sauce Missed the Tour Bus…read more I've spent enough years in New Orleans to know a thing or two about Cajun and Creole cooking. So when I saw Bar Louie's New Orleans Chicken & Shrimp Pasta for $24.75, I figured I'd give it a shot. The menu promised blackened chicken, jumbo shrimp, and andouille sausage tossed in a house-made spicy Cajun cream sauce. What arrived was essentially a plate of macaroni with chicken and shrimp piled on top. The advertised Cajun cream sauce was practically nonexistent. The chicken and shrimp were mediocre. Not awful, but nothing I'd go out of my way to order again. And the andouille? I found two small pieces, both with the texture of a rubber band and about as much flavor. In New Orleans, that might qualify as a misdemeanor. I wound up seasoning the dish myself with coarse salt, black pepper, and Tabasco just to give it some life. Now, I wasn't expecting Commander's Palace. I know the difference between fine dining and a neighborhood bar and grill. But for $24.75, I don't think it's unreasonable to expect a little flavor and something resembling the menu description. I didn't complain or send it back. The bartender wasn't responsible for the recipe, and I wasn't about to spoil an otherwise pleasant evening over a disappointing plate of pasta. I suspect this is more a reflection of the chain's kitchen concept than the people working there. Somewhere between the French Quarter and my table, the Cajun cream sauce apparently missed the tour bus. And judging by the andouille, the flavor must've been riding in the luggage compartment.
