We used to love Trilogy, but we've been in 7 or 8 times in the last few weeks and the consideration of Covid-protocols is just too lax. The cashier's mask was constantly off her nose and she'd make a half-hearted attempt to pull it up, and then the worn out elastic just dropped and her nose was out again. I'm sorry, but I'm tired of people who work with food taking this virus - and the protection protocols - not seriously. Wearing masks inside the small cafe is also required, but not enforced. Too many people coming in with barely anything covering their face, or dropping their masks and standing at counter, talking to the employees without covering their faces. The coffee tasted decent. However the treats were overpriced and there were tons of coffee grind in the bottom of my latte. I'm a barista back home anytime there's grind inside a drink it's due to not cleansing shot tins enough. Please be more careful when making drinks for your customers. read more

Really unique coffee shop with the ordinary coffee menu items made with high quality coffee but also, an array of fresh teas and specialty drinks with things like mushroom milk elixir and so many different types of non dairy milk such as fresh coconut, oat etc. Their staff is super friendly and the shop is located behind a very cute little complex with a yoga shop next to it. Trilogy Coffee has really good coffee. They use one of the better brands out there and their combination of flavors and pure coffee can't be beat. The coffee shop is quite a quaint little hipster joint and feels like it should be in Silverlake rather than Kilauea, although aside from the hipster vibe there is an underlying hint of surfer hip as well. It operates out of an old bungalow behind a set of hipster shops filled with local art and knick knacks. The coffee shop has a limited menu of breakfast and bakery items with options for both vegan and raw vegan. In fact, most if not all the pastries were vegan and raw vegan. In fact, the only thing that took one star away was its lack of choices of savory items on the menu. Otherwise, definitely somewhere I would frequent again. read more

DO NOT GO HERE IF YOU WANT TO WAIT FOREVER FOR OVERPRICED MEDIOCRE FOOD AND DRINKS SERVED BY SOM OF THE MOST INCREDIBLY RUDE STAFF YOU'LL EVER MEET. Went to eat here and ordered the Pesto bagel. Waited 30 min and the lady at the register kept insisting the food was coming. They called my name correctly for the coffee. We continued to wait for over 30 min. When I went in to ask about the bagel, she said it was coming. Finally, we had to leave. To preface this, I am never rude to service workers and I simply said we had to get going.  The lady at the register - who had blue eyes, dark blonde hair, slightly taller than the other worker on a Monday morning, and wearing a rag instead of a mask - huffed at me saying she had been calling "Melissa" for me to get my bagel this whole time. Obviously, my name isn't Melissa and she had correctly called my name for the coffee order.   She huffed, said "oh my goodness, can you believe this?" and gave me attitude in front of the rest of the customers. I didn't do anything wrong except wait for my very simple order and expect my name to be called. She was unnecessarily rude for her own mess up and I would not be writing this one star review if it wasn't for the attitude I received when I said I was going to leave bc I couldn't wait any longer. May want to rethink your hiring choices or at least give them a very very very basic lesson in humility and customer service. read more

Kinda snotty workers. The whole center has an air about it that has that "I am above you" vibe. Everything is very pricey but it's too be expected and wasn't so much an issue for me. Good coffee on an island that doesn't have tons of options for specialty coffee. Trilogy uses Intelligentsia Black Cat Espresso. I got a small latte and though it had two shots I was really expecting a stronger flavor. I wish I had come hungry, as their dessert options looked divine! Plenty of vegan options if that is a need, including tiramisu and pies. Awesome selection of chocolates, granolas, and other treats too. Worth a visit. We ordered 2 Chais. Mine was the house Chai with fluffy macadamia milk. Seriously awesome. His was more like a tea. It was fine. But the vegan (?) chocolate dessert was amazing. Let's just say- I've eaten chocolate daily for 35+ years (don't judge!) It has antioxidants! Anyway- this pie was so smooth, creamy, chocolate, decadent and worth the steep price. If you're from a city where you have your pick of the best coffee shops, you'll probably like their bean. Their espresso is wonderful! One of the best flavors on the island. Be ready to pay though. Around $6-7 for a latte if you like any sweetener or plant based milk. And if you want any of their delectable treats, a few bites of something delicious will cost you also! Great flavor, quality product. Would be five stars if their employees had better customer service. They're not jerks, just dismissive and usually take on a fake customer service tone. Makes it feel like they just want you out of their shop so they can get to the next customer. One occasion in particular, my husband tried to ask for a rough estimate on when our food would come out so we could walk around and come back. Without looking at him, the girl said "we're taking care of it sir, thank youuuu." There are lots of whole, healthy options for everyone- coffee drinks, teas, steamers, desserts, etc. I got an oat milk latte the other day and it was super tasty, the espresso they use is awesome! Like i said the pricing is ridiculous with drinks claiming to be "boosted"... if you are looking for health elixirs, just go to the grocery store or market and stock up on local fruits and veggies! also everything in the "dessert" case is super expensive, if you can bring yourself to enjoy a piece of pie that costs $9.50, well... enjoy. I tend to spend most of my time while I'm on Kauai on South shore side, but my eye was set on going to Trilogy for a cup of coffee. I was expecting pour over options, but was pleasantly surprised when I saw that they do mostly espresso and tea drinks. I couldn't pass up an opportunity to try the Coconut Turmeric Chai Latte. I went twice during my stay in Hawaii based on a locals recommendation. Very cute coffee shop with a great sitting space outside. I loved the boutique next door, Hunter & Gatherer, too. I ordered an iced americano with macnut milk both times and enjoyed every sip. My boyfriends mother got a cappuccino and loved it! I went home with 3 chocolate bars. The smoked chai chocolate bar is the only one I have tried and it is very tasty. I highly recommend stopping here for some coffee or chocolate. read more

We were referred by our photographer to Trilogy and were so glad we took her advice. We have a few favorite coffee shops on the island and hadn't heard of Trilogy. We had apparently driven by it quite a few times but hadn't realized it was next to one of our favorite shops and on our way to a great beach. My fiancé enjoyed his americano and I adored their Coconut Turmeric Chai with macadamia nut milk. It is beyond smoothe and has the perfect ratio of savory to sweet.
