A terrific lunch with a terrific friend at a terrific pizzeria. Yum!
    James F.

Tucked into a modest strip mall in Montville, New Jersey, Third Proof Pizzeria is a small place that delivers big flavor. With only six tables and room for about twenty diners, it feels more like a neighborhood secret than a typical pizzeria. What it lacks in size, however, it more than makes up for in quality. I first heard about Third Proof through the steady buzz on Instagram. Photo after photo of beautifully crisp pizzas kept appearing in my feed. Normally I wouldn't drive thirty minutes just for pizza--especially in New Jersey, where good pizza is never far away. But when enough people start talking about a place, curiosity takes over. In my case, that curiosity led to two visits in one week. On the first trip, a friend and I ordered the New Haven-style pizza, garlic knots with vodka sauce, and the Lemon Zest Chicken Cutlet. New Haven Style Pizza -- $21Thin crust, light mozzarella, heavy tomato sauce, and extra parmesan, baked until perfectly crisp. The crust has that satisfying snap when folded, and the balance of sauce and cheese makes every bite stand out. Lemon Zest Chicken Cutlet -- $17A large chicken cutlet topped with lemon zest, lemon juice, parsley, extra virgin olive oil, and grated parmesan. Fried in avocado oil, it's bright, flavorful, and surprisingly light. Garlic Knots -- $5Five soft knots tossed in garlic butter and Parmigiano Reggiano, served with a side of vodka sauce for dipping. As we were eating the pizza, I immediately thought of my spouse, who is not exactly a pizza enthusiast. I had a feeling this might be the rare pie that could win him over. A few days later we returned for round two and ordered the same New Haven-style pizza. The verdict was simple. He loved it. I was also pleasantly surprised to see bottled birch beer on the menu, which is always an automatic order for me. The staff were friendly, the food arrived quickly, and everything tasted fresh. One thing to know before visiting: they don't sell slices. You'll need to order a full pie. Fortunately, that's hardly a problem here. Third Proof has built a reputation for its naturally leavened sourdough pizza, made with a 48-hour cold fermentation process and high-quality ingredients. The result is a crisp, flavorful crust and thoughtfully balanced pies. Prices are fair, parking is easy, and the menu includes creative options like French onion pizza and hearty chicken parmesan sandwiches. After two visits in one week, it's safe to say this is a place worth the drive.

Heard great things about this place for months so Wifey and I stopped in for a to-go order. Wifey and I took home a plain pie, a burrata pie, and garlic knots with vodka sauce. Service was super friendly and we got our order pretty fast for as busy as the were. Really loved the vibe of this place - they don't have a ton of seating, but enough. While there it was a constant flow of people picking up. As for the food...WOW, JUST WOW. We've been going to the same pizza place for almost 25 years, love their pizza. I don't know what to do moving forward because the pizza at Third Proof was RIDICULOUSLY good. Plain pie was delicious, with a GREAT crust and a really nice sauce - savory and not sweet. The buratta pie was even better...crispy crust, salty buratta, garlic and the amazing sauce. Finally, this was the first time I had knots with vodka sauce...there's no reason to go back to plain marinara because I'm hooked. Lots of garlic, nicely cooked and a fantastic sauce. Best pizza I've had in a long time.

Placed a pickup order for 7:45 without realizing they close at 8. The place was absolutely packed with about 10 people waiting for pickups and full seating. Despite that, the staff was hustling, super polite, and very apologetic about the delay. They were churning pizzas out as fast as they could. We tried the new Haven pizza which was thin, saucy, and delicious. The vodka sauce pizza was super cheesy and oddly enough tasted even better the next day. The garlic knots were to die for. Cheesy, garlicky, buttery, crisp on the outside, and soft on the inside. We will definitely be back to try the chicken parms and get more garlic knots.

Garlic knots - A cardboard takeout box contains multiple garlic knots placed on red and white checkered paper. The knots are baked with a golden-brown crust, some with visible herbs and garlic. The box is partially open, revealing the baked bread items inside, likely served as a side dish at a pizzeria.

Friendly service- Pizza was enjoyable with a crisp crust Indoor seating Online ordering Plenty of Parking We liked the pizza but were not totally in love -we might try a different kind next time. We also tried the garlic knots. We both thought around 3 1/2 stars

Wanna give this place 0 stars so they don't get too busy and I can always get this quickly. Honestly a top 3 pizza place I've had. I ordered the New Haven style with no parm (they actually read and followed that request which is a huge bonus now a day) and it was fantastic. Crispy with burned crust ends but the undercarriage is crispy but no burned. It's a sourdough used which has a unique and crispy profile. It's a relatively new place and the ovens look "legit". Will definitely be back for more. Top tier pizza!

Shake Hands with Sourdough Slice, Fresh Basil and Parmesan Cheese!! Crispy Pizza Perfection!!

The Proof is in the Pizza!! throughout my busy schedule I always try to find time to indulge in new Pizza experiences. Anytime, anyplace, anywhere I go I'm always on the lookout. So I'm super stoked to report that upon first inspection of Third Proof I found some of the most expertly prepared Sourdough Pizza I've ever enjoyed. IYKYK, Sourdough is made with naturally fermented dough using what's known as sourdough starter instead of commercial or instant yeast to leaven and flavor the dough. The wild yeasts that are in a typical mixture are what's responsible for making the sourdough rise as well as creating great flavor and excellent texture. Made completely from scratch you can tell that each and every phase of this baking process has been carefully thought out and the obvious use of the highest quality ingredients here are clearly evident in each and every tremendously tasty bite. Baked to perfection, this thin style crispy crunchy Pizza only needs a first proofing to make it's case to the FULLEST!! !! Yes People The Proof is Most Definitely in the Pizza !! Come And Get Your Munch On!!

If you love L'Industrie, you'll love Third Proof. The cheese pie is physically and texturally almost identical, which is pretty amazing considering that Third Proof is sourdough only and L'Industrie uses yeast. Sooo crispy (the kind that gives you ASMR vibes), but not dry -- with an excellent chew. Truly great pizza. The owner was behind the counter slinging pies, which is always nice to see in a sector of the food world where this started as the norm but seems to be a more rare occurrence. He was super nice, down to earth, and was genuinely interested in what we thought of the pizza and other famous spots we'd all tried. The place is brand new, so very nicely updated and super clean. At $21 a pie, this is pricey but worth it, and competitively priced for the growing northern NJ pizza scene. My husband (who already promised we'd be back within a week to try a square pie) and I will be regulars for sure!

Pretty solid. I ordered the New Haven pizza and I am definitely a fan of New Haven pizza. I've been up there many many times. I do not feel like this taste exactly like any of those places but it's really good. I'm glad I came here to try this pizza. My mom really loved it.

I stopped in around lunch time on a weekend. Small place with a few tables. I came in for a few slices and was told they only had three options, plain, pepperoni and hot honey pepperoni. No pizza is on display, which seems strange for a pizza place. There's literally no space at there counter. I took a chance and ordered the hot honey pepperoni. Definitely the best hot honey pepperoni I've had. They worked extra on presentation and it's not only dizzying hot honey on. Photos speak for themselves. So the down side is pizza not on display and I heard them say they only have slices until 4pm. Also a little pricey but well worth it!

Vodka Pie - A cheese pizza topped with basil leaves, served on a round metal tray. The pizza has a slightly charred crust and melted cheese. Another pizza is partially visible in the background on a similar tray, placed on a white marble surface.

Brand new pizza spot and already one of my favorite in North Jersey. The pizza is insanely fresh -- you can taste the quality of the ingredients right away. True Neapolitan style with a crispy, light crust. The space itself is spotless and has such a great vibe -- clean, modern, and really well put together. Prices are super fair for the quality you're getting. You can tell they care about what they're doing here! If you're anywhere near the area, this place is 100% worth stopping by. Easily a must-try for any pizza lover!

Want an honest review you got one Just so yall know you can order slices. To my knowledge they range around $4-$5. There are no displays of any of the pizzas you can really only see pictures online or in person on peoples tables. I want to point out that these slices are premade and they warm them up. This can cause burning of the pizza which I revived on EVERY SINGLE SLICE. This was very disappointing, while waiting for the pizza a whole pie came out with no burnt marks on them at all. Maybe cause it was made fresh but not sure. I don't think it's worth the hype that instagram makes it to be. The slices seem to be all the same.. the Roni I thought was pasta is just pepperoni. Maybe that's just on me for not knowing but having a display of images of the pies would be helpful. Workers are nice and welcoming just think the pizza was disappointing. I think there are better places.

Third Proof Pizzeria is an example of what a pizzeria could be when driven towards a pursuit of excellence in flavor and ingredients. I tried calling in to order while I was on the road to save some time, but no luck. When I arrived, I could see why, the place was packed. One guy who was waiting for his order said "I feel like I'm waiting to win a lottery" while he was patiently waiting for his pizza order to be called. The interior was pretty standard of what you'd expect from a local pizzeria, though the accent wall and the nameplate looked modern and aesthetically pleasing. Ultimately, it took about 20 minutes from my order until it was ready, despite it being so packed, I thought it was well worth the wait. I got the New Haven pizza with the pepperoni hot honey ingredients on one half and regular cheese on the other and this combo was amazing. The crust was thin and crispy and the cheese had a great texture. What surprised me the most was how much tomato sauce there was in every bite - the sauce felt sweet, tangy, and flavorful. Usually the crust is my least favorite part of a pizza. Most pizzas I just treat it like a handle to eat the pizza and discard when I'm done because they are usually too dry and bland. Maybe it's a feature of the New Haven specifically but the sauce went all the way up to the crust which made eating the crust a delight. With this one pizza, I'm hooked. I'm going to have to go back and try the rest of the menu, can't wait to go back!

Two pizzas are displayed on metal trays on a white marble countertop. The larger pizza in the foreground has a cheese topping with basil leaves, while the smaller pizza in the background appears to have a different topping. The setting includes a refrigerator visible in the background and some items on the counter, indicating a casual dining or food preparation area.

The ambiance is what one would expect from a casual BYOB -- slightly better than average decor; attentive but not overwhelming service; and freshly-made and tasty classic Italian favorites at reasonable prices. I recently attended a surprise birthday party for a friend at Tuscany Villa and I can't say enough good things about our experience. The kitchen executes well on flavorful and beautifully presented dishes and every member of the staff was incredibly professional and attentive, making sure that our group was well-taken care of all evening. The dinner menu features typical pizzeria cuisine including a variety of slices and hot and cold subs as well as a variety of more Italian favorites including pastas, chicken, and shrimp dishes, which offers enough variety to appeal to everyone (including those with dietary restrictions like gluten or dairy intolerance). It's obvious that the chef takes pride making meals that present well and taste great. It's rare to find a spot that hits the mark on both high-quality cuisine and seamless hospitality.
