TLDR: if you like amazing pizza and chicken parm, this place is a must try. Had been a few times to the prior place in this spot and it was decent, but this new incarnation is next level. There is a lot of good pizza in a 20 min radius but Third Proof really stands out. I did not know until I went to write this review that they recently got a monster score from Portnoy, it was fully earned. Friendly pizza joint vibe with great pizza (and chicken parm) made with care and great service. We tried the New Haven style and a Vodka Parm. Being from the New Haven area I had a high bar they need to hit and they did. Perfect thin crispy crust with a touch of char and the right ratio of mozzarella to a delicious sauce with some salty parm to cut the sweet brightness of the tomato sauce. Bonus, it was even cut New Haven style with imperfect small to medium slice size. I don't know if they adjusted after Portnoy made his comment about the slicing style, but well done! Now for the chicky chicky parm parm.... Exceptional - What a huge surprise, delicious crispy thin chicken cutlets topped with delicious creamy vodka sauce and melted mozzarella. And they offer them in 4 different styles. Will go back very soon to try the others. If I had notes - slightly less mozz to checked ration and get a little more brown in the cheese. We ordered the garlic knots and love that they offer options of marinara or vodka sauce- vodka sauce please! Also had the New Haven since it's not super easy to find around these parts. The garlic knots were disappointing. Not fully cooked on the bottom and some piles of u distinguishable dough but the tops were lightly browned. Perhaps the oven was too hot? Not sure, vodka sauce was great and we loved the fresh generously grated cheese on top but we stopped after we both noted the mushiness of the knots. Consolation was that the flavor was there, just lacking on the cook. On to the pizza- a pie that shows well both on top and bottom. Sauce forward with a good bit of tang and the right amount of cheese. We felt it was a solid pie and while maybe not in the 8's for us, certainly the mid to high 7's. Aside from the knots maybe having an off day- service was very friendly, kind and accommodating and we will one day trek back to try the standard cheese pie! My kid in San Diego saw this in Dave Portnoy's... and said, hey Mom, you better check out this new pizza place while you're in Jersey visiting family! There used to be very mediocre pizza places in this strip mall. But this place, which seems to getting hype not just in New Jersey but on social media nationally, is super tasty. We didn't want to have it be too crowded when we went, given the new reviews. So we put in an order a day ahead in person, and then picked it up today right on time. We got a cheese pie and everyone agreed it was very solid. The dough was excellent and the pizza was very flavorful. We are going to try to try the New Haven before we leave town. I wouldn't say this was mind blowing but it was very good. One drawback is that they're so busy they don't have time to do slices. But right now they're not really serving a local drop in crowd, but more foodies in the know who are ordering whole pies. But the pizza is definitely fresher than Gencarelli's. I came in with high expectations after reading about this place on NewJersey.com, and I left very impressed. At just 25 years old, the owner clearly has a bright future ahead. I'm not sure where he learned to make pizza, but he absolutely knocked it out of the park with our lunch. We tried three different pies: the Cheese, the Hot Honey Roni, and the New Haven. The Hot Honey Roni was the clear favorite of our group, followed by the Cheese, with the New Haven coming in third. The Cheese pie alone deserves high praise as I'd give it an 8.9. I ordered online and initially I was shown a 40 minute wait. After I placed the order I noticed it was a two hour wait. If your order is scheduled for a time, don't expect to get it any earlier. My order was scheduled for 6:15. I arrived at 6 and was told to wait until the scheduled time. It was actually three minutes late. Oh well. While I waited I had a chance to check out the small dining area with seven tables - three higher tables with two chairs apiece and four tables with four seats each. You might be better off with a take out order. We opted for the New Haven pizza and Vodka Chicken Cutlet Parm. The pizza was very good. I really like these sourdough bread that they use and the sauce was tasty. No complaints on the Vodka Chicken Parm. It was a huge piece that I wasn't able to finish. While there it was a constant flow of people picking up. As for the food...WOW, JUST WOW. We've been going to the same pizza place for almost 25 years, love their pizza. Placed a pickup order for 7:45 without realizing they close at 8. The place was absolutely packed with about 10 people waiting for pickups and full seating. Despite that, the staff was hustling, super polite, and very apologetic about the delay. They were churning pizzas out as fast as they could. If you love L'Industrie, you'll love Third Proof. The cheese pie is physically and texturally almost identical, which is pretty amazing considering that Third Proof is sourdough only and L'Industrie uses yeast. Sooo crispy (the kind that gives you ASMR vibes), but not dry -- with an excellent chew. Truly great pizza. The owner was behind the counter slinging pies, which is always nice to see in a sector of the food world where this started as the norm but seems to be a more rare occurrence. He was super nice, down to earth, and was genuinely interested in what we thought of the pizza and other famous spots we'd all tried. The place is brand new, so very nicely updated and super clean. At $21 a pie, this is pricey but worth it, and competitively priced for the growing northern NJ pizza scene. I stopped in around lunch time on a weekend. Small place with a few tables. I came in for a few slices and was told they only had three options, plain, pepperoni and hot honey pepperoni. No pizza is on display, which seems strange for a pizza place. There's literally no space at there counter. I took a chance and ordered the hot honey pepperoni. Definitely the best hot honey pepperoni I've had. They worked extra on presentation and it's not only dizzying hot honey on. Photos speak for themselves. I tried calling in to order while I was on the road to save some time, but no luck. When I arrived, I could see why, the place was packed. One guy who was waiting for his order said "I feel like I'm waiting to win a lottery" while he was patiently waiting for his pizza order to be called. The interior was pretty standard of what you'd expect from a local pizzeria, though the accent wall and the nameplate looked modern and aesthetically pleasing. Ultimately, it took about 20 minutes from my order until it was ready, despite it being so packed, I thought it was well worth the wait. I got the New Haven pizza with the pepperoni hot honey ingredients on one half and regular cheese on the other and this combo was amazing. The crust was thin and crispy and the cheese had a great texture. What surprised me the most was how much tomato sauce there was in every bite - the sauce felt sweet, tangy, and flavorful. Usually the crust is my least favorite part of a pizza. Most pizzas I just treat it like a handle to eat the pizza and discard when I'm done because they are usually too dry and bland. Want an honest review you got one Just so yall know you can order slices. To my knowledge they range around $4-$5. There are no displays of any of the pizzas you can really only see pictures online or in person on peoples tables. I want to point out that these slices are premade and they warm them up. This can cause burning of the pizza which I revived on EVERY SINGLE SLICE. This was very disappointing, while waiting for the pizza a whole pie came out with no burnt marks on them at all. Maybe cause it was made fresh but not sure. I don't think it's worth the hype that instagram makes it to be. The slices seem to be all the same.. the Roni I thought was pasta is just pepperoni. Maybe that's just on me for not knowing but having a display of images of the pies would be helpful. Workers are nice and welcoming just think the pizza was disappointing. Tonight, didn't want your standard pizzeria fare - so we ordered from Third Proof. And better is what we got. Cheese pie. Honey hot pepperoni. A few orders of chicken parm. And, my wife says the best garlic knots she has ever had. Look. The pies are a few dollars more than at other places. But, you spend more at Ruth's Chris for a steak than at Outback - and you don't mind. Same applies here. The pizza crust is something to savor. The flavors are spot on. I was urged by friends to try to cutlets - and I know why. Crispy. Tender. Great flavor. It is clear Third Proof is better than your mass produced pizza joint. But today my son, a fan of Columbia Inn, Star, Bucky's (etc, pizza lovers know these places) discovered Third Proof and brought a pie over. To be fair to 3 star rating, I'm not a fan of any of the above. I prefer Ray's, lots of cheese. I know, you need a thicker crust to hold up that cheese! I liked the sourdough crust, the sauce was very flavorful but no "stretchy" cheese...in fact, seemed to be skimpy cheese. And I am not a fan of fresh basil, so picked that off. And I do love Seaside Boardwalk pie, cheesy and greasy, so this was just not my cup of tea. I ate it because I was hungry, it was okay but will not be ordering again. However... Have already been twice since they opened and can say both times were really incredible, next level pizza.
