We stayed at the Summit Lofts, which is attached to this coffee shop for a brief weekend. The delicious scent of coffee wafted into the hallway on our way to our room. I read on Yelp that some people experienced rude baristas, so I anticipated exhausted, jaded servers when we grabbed coffee that late afternoon. The service was quite lovely, actually. Every time we visited the establishment, there was a line. Long lines do not deter me, as it only reinforces that there is a greater chance the product has been vetted as highly desirable. We ordered the strawberry cheesecake bun and the matcha strawberry beverage. Since it was later in the day, the bread in the bun was not as soft. I saw that they have an open kitchen and make everything in-house. The strawberry cheesecake bun had thick cheesecake frosting on top and a sliced strawberry. I dipped the sliced hard bun bread into the frosting and found this a worthy solution to distract from the stiffness. The matcha strawberry drink was refreshing and effective in waking me up. The next day, we arrived early and saw fresh cinnamon buns taken out of the oven. We ordered this, and I tried the Island Boi drink. The cinnamon bun was perfectly hot, soft, and delicious. I'm sure if we arrived earlier the previous day, the strawberry cheesecake bun would've been too. I found the Island Boi drink adequate. All the baristas were lovely, friendly, and thoughtful. There are outlets about and cute tables. This would be an excellent place to work remotely. read more

Went here the other day, some guy opened the in-swinging front door and paused like he was holding the door open, and we walked in. Then he says, "it's customary here to wait for people exiting to go out the door." Uh ok. "just wanted to let you know for future reference." Never had someone policing an exit door like it's a subway car before, never mind the fact that I'm hobbling around on a broken foot. Wife ordered sesame bagel, received an everything bagel. "Well it has sesame seeds on it," the lady said. OK. Stood up when they called our order and some guy snagged our table. The bagel was good. Espresso was good, not amazing. I don't usually opt for mediocre reviews. But I changed my mind for this one. On our way to a vacation in Yosemite, we stayed at a boutique hotel that is in the same building at Theory. So we thought we'd have breakfast there before we headed out. The atmosphere is very hip, but that's about it. The mocha was decent, but not awesome. The Americano, the same. My wife got the Monkey Bread because it looked the moistest of the pastries (they all looked very dry). Even heated, it was dry. I ordered the breakfast sandwich, which is one of the more popular menu items. It was very average. And mine got mixed up with another order, so I had to go ask for it. My wife was waiting to eat her pastry until my order came so we could actually eat breakfast together, so her already-dry monkey bread was no longer warm. All in all a very average experience. Not sure what blend I got but it didn't disappoint. It was strong with hints of fruit and chocolate. I also tried a bottle of mood peach ginger drink with magnesium. Made in Los Angeles. I thought I was grabbing a local kombucha but again this drink did not disappoint. They also have a Good selection of loose leaf teas grabbed a mint tea for the girl. We had such a great experience. Almond milk vanilla theory. Crushed the decoration. Fantastic first sip to last. I had the light roast drip. And it was fantastic. Not an afterthought or old tired. This place has the best scones we have eaten! The savory cheese and chive scones were so perfectly prepared. The edges were slightly crisp and balanced the soft and "moist" inside. Yes, they are not dry!! The maple pumpkin bars were also an amazing treat. They were super moist, sweet and when warmed up were phenomenal. The coffee was good too! Theory coffee has the standard modern interior, plants, comfy seats, and plenty of places to work. They seemed dog friendly and had lots of space to sit and enjoy the deliciousness. Stopping by for some coffee. Street parking was easy. I like the spacious and minimalist decorations. We ordered a matcha latte and lavender latte. When I ordered, I asked the cashier if the matcha is strong as I am going request an extra scoop of matcha if needed. The cashier said it was strong, so I just ordered as it is. The lavender latte was delicious, and the scent of lavender is strong, which I like a lot. The matcha latte is sad. The drink was very watery. I went back to ask if they can give me an extra scoop of matcha powder in my drink, and they were very kind to re-make my drink. It came out better than what it was, but still a bit weak. The place is beautiful. Trendy modern and large space too. They had multiple staff members working and even though there was a line it was smooth. Now to the pastries, they look great but they are so oily that it was dripping on and all over us. I'm not sure how they are making their croissants or cruffins but it was soggy on the inside and we had spoonfuls of oil drip out ! We understand a lot of butter is used in making these but this was another level. Watching oil drip out and then the leftover liquid (pictures). On our last morning of a long weekend road trip, before hitting the road home, my husband and I came to Theory Coffee. Located on the main street in the small downtown area, we managed to find parking on the street right in front. The space itself was very open and modern with a very clean aesthetic. All of the staff were extremely friendly and engaging. They did apologize in advance that a portion of their espresso machine was not working so drinks were taking a particularly long time that morning. Neither my husband nor I minded since we were in no rush. We decided to sample quite a few items from their pastry display case, including the monkey bread, a bear claw, a sausage fold over, and a brioche breakfast sandwich. My husband ordered a maple latte while I ordered an iced s'more latte with oat milk. The food was absolutely delicious and we enjoyed nibbling it throughout the day as we made our way home. The bear claw was probably my favorite, but the monkey bread, when warmed, was out of this world. The s'more latte was decadent and rich, and definitely more of a treat than an every day go-to coffee order. There was ample indoor seating and tons of natural lighting. This is the type of coffee shop that you could spend hours in reading a book or getting work done. read more

Love Theory Coffee shop here in Mount Shasta! Such a beautiful space, and great coffee every time I come. The shop itself is spacious, with a mixture of sleek white accents and wooden pieces throughout the space and live plants. I've hung out here for hours and also popped in for a quick latte and each time has been lovely. So far my favorite latte is the Island Boi, an iced americano with coconut cream and coconut condensed milk topping, so refreshing and hits the spot every time! The strawberry matcha is also really good. During the week they close early at 2pm and on the weekends their hours are extended to 5pm. So we come to mount shasta every year really and so it is really refreshing to see spots that are trying to bring more people to visit as the town is small and knitted together. I really think that this place will keep the people coming. The pastries in my opinion really outshined the coffee but my partner and his sister said that the coffee complimented the pastries. I loved the ham croissant and the bear claw. My coffee did taste very milky and the coffee taste just was not present. The vibe was really cute and very trendy so I am hoping it gets more people interested in the city :) read more
