SERVICE: Nice and friendly. I didn't see anyone there when I arrived so I had to wait a few minutes. While waiting I just decided to take some pictures for my YELP REVIEW. It was my first time there so I asked the nice lady what the choices for TACO TUESDAY were... POLLO ASADO: 10/10 Not many places offer pollo asado and the flavor was excellent! I ate this taco with a big smile on my face... CARNE ASADA: 9/10 I really like this one. It tastes really good with one of the red sauces. I added some grilled onions and chile and it really kicked my taste buds! CARNITAS: 8/10 The carnitas were pretty big compared to what I usually have. It was almost like brisket. It was a bit in the bland side... ESQUITE: 9/10 Street corn off the cob! It was really buttery and salty so I squeezed 2 pieces of lime and that really helped make it enjoyable... 3 ROLLED TACOS: 9/10 It was really good. I'm not sure if I got the chicken but, I think I prefer beef rolled tacos... AMBIANCE: Nice industrial style ambiance with a big screen TV. Everyone there was just minding their own business so drama here... HASTA LA VISTA EL TACO BAR!!!!!!

Tortillas are handmade and tacos come with guacamole, cilantro and onions. Very generous with the meat. I was full after 2 tacos and some chips. Had to order chips on the side with the burrito, doesn't come with any sides. Open salsa bar with 4 kinds to choose from plus unlimited limes and grilled onions, and jalapeños available. Salsas definitely have some heat!

Whenever I'm craving fresh, homemade menudo like my grandma used to make, this is the spot. Their carne asada is delicious--whether you get tacos, burritos, tortas, or pretty much anything else with carne asada, you can't go wrong. The chicken is also on point--always tender, juicy, and full of flavor. I've tried plenty of dishes here, and I've never had one I didn't like. If you're looking for authentic Mexican food that keeps you coming back, give Aztec Tacos a try. Once you do, you'll understand why this is my go-to spot in Temecula

I always order their shrimp and steak burrito which has skirt steak, shrimp, cheese, mushrooms, guacamole and their house sauce. All the flavors mesh well in this burrito though from time to time I've noticed they don't cut the steak and its one huge piece of steak in the burrito, which can sometimes make it a little difficult to eat. Other than that, its flavorful and the tortillas they use are fresh and delicious! Service is usually pretty quick and friendly. They'r e always great with recommendations. There is good amount of seating and its always pretty clean when we go. If you wanna do a quick pick up, you can even order ahead online! Always a pleasure visiting for some good mexican food.

I asked what breakfast burrito is the best or her favorite and took her up on the recommendation of the Machaca Breakfast Burrito. Choosing to dine in I was offered chips and salsa and asked for salsa preference. No salsa bar here which was fine, I chose spicy and got a roasted red salsa and creamy green salsa. Red had more kick but the green had such a nice bright flavor. I'm sure there are more options but it was nice to trust the service to pick. Now for the burrito, the star of the show, Machaca is only 50 cents more than the bacon, coming in at around $14 which is about average around here. The size was great and a nice weight. Cutting it open there was a great mix of all the ingredients. Potatoes were a small dice and seasoned with the same spice they sprinkle on their chips I think. Fajita style onions and peppers with a generous amount of juicy Machaca, laced with perfectly melted cheese. I think there may have been some refried beans in there too since I asked for everything they recommend. If there was they were so nicely blended they didn't dominate a single bite and may have performed more as a binder. 5 stars for Location and staff were both great as it's not hard to get to off Ynez by the dealerships. It's the kind of place locals know of and tell people they got their perfect spot. Blown away by how friendly the staff is, in the morning, while taking deliveries. The Machaca Breakfast Burrito is a solid 4.9/5, would definitely order again after I try some of the others because this place is definitely going on the short list of go-to spots. They have quesaberria tacos that look awesome.

Is it the absolute best Mexican food I've ever had? Probably not. But the food is solid, reliable, and always enjoyable, which is exactly why I keep coming back. Now, if you're a fan of drinks, music, and a festive atmosphere, this place definitely brings the party. It has that lively, colorful Mexican restaurant vibe, and I personally love that they have live music on certain days. My little one and I especially enjoy sitting outside in their enclosed patio area. It's such a nice little setup! Depending on the day and time, it can get pretty packed, but I've honestly never had a bad experience here. The staff is always friendly, the atmosphere is fun, and the food is something you can count on. So no, I'm not going to crown Guadalajara the king of all Mexican food--but sometimes you don't need culinary fireworks. Sometimes you just want good food, a fun atmosphere, some music, and a place that consistently delivers. And Guadalajara does exactly that.

The rice was dry and gritty but paired decent with the very mushy beans. The tamale was a bit bland as well. I did enjoy the chips and freshly made salsa though that comes free with the entree. There are no single menu items like you can't order just one taco or one tamale by itself without getting a whole platter of other things. The server was friendly and didn't rush us even past 10pm.
