A most pleasant experience. Following the recommendation of another Yelper, I tried the beef brisket hash. The portions are generous, I didn't finish. The beef is tender and tasty, and the eggs! They must source these locally. Just look at the colour of the yolks! Perfectly cooked. The hollandaise was nicely acidic, and not overly rich. The hash had a great mix of crunchy and soft. The restaurant itself was clean and comfortable, nothing much to note. The service was excellent! Friendly, attentive and efficient.

We were visiting Victoria on a Wednesday so there was no line up for brunch! They were still fairly busy though. I had the Smoked Beef Brisket Eggs Benny and it was served on a flaky croissant! The beef brisket was very tender and came with a nice BBQ sauce. I had the eggs soft poached and they were perfect. My friend had the Breakfast Tacos that I didn't try but they were pretty stuffed and she said they were good. Both dishes came with home fries that were very crispy. They have so many options on the menu! Wish I could've tried their waffles as well.

Food- This is a pretty good lunch stop for some beef brisket or rotisserie chicken dishes! I would say it's pretty good, but nothing too special foodwise. We ordered the rotisserie chicken soup, chicken salad, and beef brisket tacos. Note: they do prepare their rotisserie chicken in a special way and it comes from a farm a few hours from Victoria! This is what they are known for!! Looks/cleanliness- Everything is very clean and spacious! There is a ton of indoor seating and they are doing amazing with Covid-19 safety set up. Each table is separated by a plastic divider. Service- Amazing service!! Our waitress was so sweet and gave us recommendations for tourist spots to stop by!

Determine to avoid the frigid cold. I came downstairs to order breakfast to go and eat in my hotel room. Sooo good! Scrambled eggs cooked easy. Thick cut bacon. And fried potatoes with rye/pumpernickel bread. Service was super friendly as I walked into this restaurant pajama clad just as they opened. Ordered my breakfast to go and it was packed so nicely in a to go container. I was offered a tray for my oj and coffee. The eggs were cooked perfectly "easy", not runny. The potatoes so good and fried. The bacon was super thick and crispy! The green salsa was so spicy. But delicious. Black coffee hot and fresh. I'd like to come back and try their mimosas next time. Happy yelping.

The food is SPECTACULAR!!! The service is magnificent and the convenience of it being downstairs of the Best Western Plus Carlton Plaza Hotel. This is where you want to stay ~

A solid brunch spot in Victoria. The vibe of the restaurant is great, with classic songs playing directly from vinyls. Service was good, the waiters and waitresses were all very sweet and personable. Food wise I thought it was okay, it was pretty heavy but not super flavorful. It was overall good though, and I would be down to come here again!

Three words for you. Beef brisket hash!! It's a hearty breakfast, but do yourself a favor and get this. This place doesn't have a lot of reviews on Yelp, so I thought it wouldn't be too crowded when my friend and I walked up around 9:30 on a Sunday morning. Of course, it was hopping and there were a couple of groups in front of us. We waited about 20 minutes which isn't too bad. There's plenty of seating inside, and each table is divided by plastic screens. They offer both brunch and lunch items, but I went straight for the brunch side. I've seen corned beef hash on many brunch menus but never a beef brisket hash ($18.95). I love brisket and I love hashes, so this sounded like it was made for me! I ordered it with poached eggs and chicken gravy instead of hollandaise sauce. It took us ~30 minutes to get our food. I assume the kitchen was backlogged on orders. I freaking loved my dish! The brisket was super tender and fatty and melted in my mouth, and the hash and eggs complemented it super well. I was so happy the entire meal, I couldn't stop smiling. Why isn't this a thing at other brunch place?? This meal made up for the subpar brunch I had the previous day. Also something to keep in mind: the portions are no joke; even though I was starving when I walked in, I couldn't finish the last of the hash. My friend ordered the breakfast sandwich ($14) and initially didn't like it because it was too cheesy. I don't blame him, there was a whole thing of crispy cheddar cheese sticking out of it. Once he removed that, he enjoyed it a lot more. That's completely personal preference though. I'll be back for another brunch next time I'm in Victoria!

Such extravagant meal choices! The server was so friendly and efficient. Had a bit of a waitlist and every great place will but not sure if it's "wait for an hour great"

If you're close to Ruby's then it's a must go! I went there with a group for breakfast and the food was sooo delicious! I would highly recommend any of their beef brisket dishes! I wish I stayed in Victoria longer so I got to try more dishes.

Over spring break I spend less than 10 hours in Victoria and The Ruby set the tone for a magical day. I had a mimosa with my omelette, potatoes, and toast. My breakfast was just to my liking and fueled me for a day of walking and sightseeing. The staff was lovely and the restrooms are shared with the lobby of the posh hotel next door. Hoping to go back to Canada soon!

The line up was quick and we got into the brunch spot in victoria within 15 mins. the food was a large portion and extremely delicious. We got the beef brisket eggs benedict and the chicken and waffles. The potatoes are the perfect brunch addition to satisfy the home fries craving. I also got an iced coffee with lavendar syrup which was floral and the perfect amount of aromatic and sweet. there was also live music playing and the artist who was singing was amazing! Nice spot with beautiful sunlight on a nice spring day

The bun was incredibly fresh, light, and pillowy, while the pork belly was melt-in-your-mouth tender with the perfect balance of richness and tang from the kimchi. The pickled vegetables added a bright crunch that tasted incredibly fresh. We started with the salmon tartare, and it was phenomenal! Rich, buttery, bursting with flavor, and so good we were literally fighting over the last bite. And the scallop? Order one for each person. Seriously. It's far too delicious to share. It had just the right amount of heat, leaving the perfect lingering warmth that immediately made us want another. Do yourself a favor and give yourself enough time to work your way through the menu, because every dish we tried was outstanding. Each plate was thoughtfully curated, beautifully executed, and cooked to perfection. I like to call it the C³ trifecta: curated, created, and cooked. Without question, this is some of the best food we've had in a very long time. We can't wait to come back (when visiting) and continue eating our way through the rest of the menu.

There was an interesting smell at the entrance when we first walked in, but luckily we were seated in the back room. As recommended, we ordered family style to try a variety of dishes. Endive salad - can't really go wrong with the classic combination of apple walnut and goat cheese, however many larger pieces of endive were quite bitter. tater tots - nice presentation with the cubes. The tots were perfectly crispy on the outside and fluffy on the inside. Paired well with the jalapeño ranch, and the lumpfish caviar was a fun addition. Beef tartare- the beef was fresh and flavor was good overall. However the toast was only cut in half, made it hard to eat or cut into. Middle of the toast also got a little too soft from the juice. Fried chicken - solid fried chicken, the meat is tender and well seasoned, crispy on the outside. The semolina cube didn't add much for me, but the 3 hot sauce added a nice balance of heat and acidity. Ling cod - The fish was tender and cooked well. Surprisingly, the cabbage really stood out. Service was a bit slow, we had to flag down our server for refills. Overall we enjoyed our meal, every dish was well prepared, but nothing truly stood out as memorable. We did appreciate it being farm-to-table, and the commitment to source ingredients locally.

We made a reservation ahead of time and they were still quite busy until about 9:45pm. We ordered a variety of dishes family style, which is the right move. Service for our table was honestly a bit slow; we had to flag down someone for a refill multiple times. The interior smelled a bit funny near the entrance but luckily we got sat down into the back room. The interior was a very dark, date night vibe. Endive 3/5. Not the biggest fan of the salad; they also picked some larger leaves of endive which made it bitter. It was a very light dish with the goat cheese, walnut, and apple. Tater tots 4/5. Fried potato hash brown cubes paired with a ranch sauce with lumpfish caviar. Decent dish, we enjoyed it but it could've used some acidity. Beef tartare 3.5/5. Solid tartare but the bread needed to be cut into more bite sized pieces and this style of bread also ended up soaking up a lot of the raw meat juices. Ling cod 4.5/5. The fish was tender and cooked well. The best item on this dish was the cabbage, which was very well seasoned. Fried chicken 4/5. Solid fried chicken paired with semolina cubes. Overall we enjoyed the meal. Not every dish was a hit but the farm to table concept is much appreciated for being in Victoria BC and sourcing meats and produce from nearby or in Abbotsford.

The main of the flat iron with arugala on the top with fries. They plated it and served it with a slug in it. The slug fell from inside the salad onto the plate . A baby slug. But it was living and moving. What followed was poor response and gaslighting of which this restaurant should be ashamed. In order not to disgust the others I stopped a woman that was working the floor to remove the plate. When I pointed to the slug why gave a small chuckle and half smile and stated, "well, it is farm to table." That is gaslighting. Right there that was a poor response. I see signs saying Michelin on this restaurant, but really...if you had served a slug to a someone rating you for a Michelin, you think you would get that rating? Highly doubtful. That should never have been served. Yes the restaurant cooked another meal which took longer. They cooked it just fine too....however their lackluster and empty words of well we do say it's farm to table doesn't replace an apology or an assurance of we will do better.

It felt very rushed despite there not being many other customers in the area. We were only in the restaurant for about 45 minutes today. The food was mediocre. I had the fried chicken and waffles, which looked good but tasted generic. The fried chicken was a bit dry and just tasted like it was seasoned with salt and pepper and that's about it. The waffle tasted like something anyone could make at home. My friend had the Caesar salad, which was drenched in sauce but otherwise looked alright. Overall, the food is on the pricier side, relative to the portion size being served. Expect to spend at least $30 to be full, not including drinks and dessert.
