Ok fine, I see his logic. What I will also say is that mentality as a manager to make a guest pay for something they were unhappy with due to a lack of managing inventory and limited selections, he lost a repeat customer and prompted a negative review. I was a server too for a long time. I know how wine pricing works. It would have cost nothing to help find a drink a guest actually wants. Putting profit over people always results in losing money. It's no wonder there were plenty of tables available there while San Pedro was on a 90 minute wait. I'd say there's a LOT of room for improvement in how it's run.
