So this place has been open since 1966. Some of the details of the place definitely indicate 60 years old, but service and excellent food are timeless. So the building looks dated and so are the turn into the business/parking lot, but don't let that stop you from great food and service. Despite my observations, the place is very Tucson, quaint with history. They have a number of accolades on the wall that I missed until my party was leaving, but the bar tender won best Male Bartender for the Arizona Daily Star a few times and it shows. We didn't have any fancy plans for Memorial Day yet still felt the celebratory elation of a 3-day wknd and decided to treat ourselves to some Friday steaks. The first thing I need to own is that it's a shame I hadn't visited here before. We arrived at 5:30p and both the bar and patio areas were packed - standing room only, and no wonder. They have one of the better happy hours (daily! 3:00 - 6:30p) - able to accommodate both the slacker and the over-timer Lol. Basic drinks are all discounted such as house wines, well drinks, and beers. Their bottled wines and craft cocktails are all exempt though. Many of their appetizers are also discounted and some quite substantially. We grabbed a glass of the house cabernet ($6, normally $8) and the grilled shrimp wrapped in jalapeno bacon ($13, normally $20). NOTE: happy hour pricing is Only available if you order/consume at the bar or on the patio and that's clear in advance, and understandable. The dining areas were only half full at this early point (but filled up by 6:30) and the host kindly encouraged us to enjoy our starters at the bar as she would hold our table. We were then sat near the "back" of this long venue and frankly, aside from the lone windowed table at the very front, this would be my preferred seating - cozy, intimate, with only five other tables around us. For dinner drinks she got an Italian Nebbiolo Bricco Magno Red Blend ($13/glass, reliably terrific/mellow) and I got the Chupacabra ($15) Mezcal/prickly pear cocktail, strong and excellent as well. We got an additional appetizer: the roasted bone marrow ($19). I had never had marrow before but she raved about how good this can be if done properly (bonus, it is super healthy). Folks, a picture/worth a 1000... suffice to say this was simply outstanding! We both had long work weeks and were craving meat - just a damn good steak. Our waiter, without blinking recommended the 8oz bison filet mignon ($65) as his absolute menu fav, and then the day's special: 14oz ribeye ($50). We ordered each. All dinners come with two sides and we each got the day's special: roasted half artichoke and she got the loaded baked potato while I got the mashed potatoes. Food arrived about 15 minutes later at good temperature (warm/rested with a strong char) with each being accurately grilled (medium and medium-rare). Taste was outstanding. Neither one of us had bison filet before and marveled how it (subtly) added a "wild" edge to an always outstanding, lean-but-tender, cut of beef. The loaded baked was terrific, however, the mashed was the only disappointment... a plainer mash one could not make themselves - pure white and borderline dry, no milk, butter, egg, gravy(?), nothing to make it creamy or add any flavor dimension - a surprise frankly. The only other "critique" is that the dessert menu could add some kind of dark/chocolate concoction. All in all, though, we loved our experience and have decided to add this to our periodic special dinners rotation! Staff was outstanding - just the proper balance of attentive and quiet - and waters never went below half empty. Parking is free and plentiful, especially behind the restaurant (and yes, if you continue on around the back there is another long entrance/exit driveway that comes out the other side of Jimmy John's and Noodleholics. read more

Sadly, this restaurant has gone down since the last time we ate here a year ago. Every dish had too many sauces added. I understand the head chef has a French influence, but frankly it overwhelms the food and takes away from the freshness. I had the snapper since they didn't have the halibut. It seemed over cooked and then drenched in sauce with greens on top, also drenched in sauce. The saddest part was they sat us in the back room. Where they seemed to sit everyone coming into the restaurant. If the restaurant was packed I would understand but every other room was empty. Who wants to sit along the pathway to the bathroom? Service was so/so. Had to ask for drinks multiple times. But frankly the quality of the food was not worth the cost. Definitely will not be returning, until they revamp the menu to include less French style and more uniquely inspired fresh food. This was our first time back to The Cork since the new owners took over. Unfortunately our experience did not match our previous visits with the original owners. The dark ambiance and the sixties vibe was the same as we remembered. This time, we both ordered the veal marsala which we typically order at another Tucson favorite. We both agreed that the veal was overcooked and under sauced. The garlic mashed potatoes we chose as a side were way too salty as well. The oven roasted asparagus was good. I had iced tea which the waiter kept well-refilled. Our water glasses were also kept refilled. My wife had one of the specialty tequila cocktails which she rated as just OK. I noticed that bread is now an extra cost which I find poor practice in an upscale restaurant. We had the crab cake and bread basket for appetizers. The crab cake was delicious and very flavorful. And the bread basket came with a variety of breads with butter. I've eaten here several times and will be coming back. I asked to be seated further from the bar and it was very nice. Happy hour at the bar is great but gets noisy. I've had fish in the past but opted for the petite filet as did my two companions. It was excellent. it was cooked the way I requested and was tender with a very tasty sauce. Interesting space... cozy and tucked away from the main road you don't notice how big and yet intimate this restaurant is. It has indoor and outdoor seating. One unique feature here is the addition of wild game meats to their menu ( elk, bison, venison etc) as well as seafood options. They have a pretty good happy hour at the bar and a daily bar special... on Thursday it was a delicious burger. In addition we tried the ribs (Carolina bbq sauce... so think mustard), the prime rib strips and bacon wrapped shrimp. Everything was delicious! Fair warning, this may be a good bit longer than my usual - but I've got a lot of deliciousness to unpack here :) I was excited to attend The Cork's first of an upcoming series of wine dinners, and they set the bar high with a deliciously executed time machine theme - "Michelin Through the Years". This masterfully curated culinary selection transported us through some truly iconic dishes by legendary Michelin-starred chefs (and props for the hand-drawn Back to the Future-inspired Delorean on the menu that was an appropriate nod to the sheer breadth of culinary history we enjoyed). The entire staff was top notch from front of house to the kitchen - incredibly attentive, kind, professional, and everything moved smoothly even with it being held in one of The Cork's signature cozy spaces. From start to finish, it was a night to remember and I highly recommend checking out one of their wine dinners if you have the opportunity - the investment is money well spent! I've posted the menu photo for full details on each course, but here's my spark-notes: Course 1: Salmon Tartare Cornet A delicious and delicate first bite - the cornet of marinated Atlantic salmon with sweet onion crème fraîche was paired with a crisp Bertrand Crémant Rosé 2021. Started the evening on a light and crispy note. Course 2: Lobster Thermidor A rich and indulgent follow up was the Lobster Thermidor. The Gruyère topping came out of the broiler perfectly golden and was paired with The Stag's Leap Chardonnay 2023. Course 3: Mushroom Pistachio Salad This was my hands down favorite part of the whole meal! This quirky-sounding salad was laid down on a base of an amazing, hand-crafted pistachio butter, and the different textures and flavors came together in all the best ways - it was earthy, delightful, and totally unexpected. Paired with The Erath Reserve Pinot Noir 2021. Course 4: Tournedos Rossini This was a showstopper and my second favorite (and ya'll I was so full at this point, but ate every last bite of this course because it was that good)! The combo of perfectly seared tournedo over toasted brioche as the crouton, topped with foie gras caramel and shaved black truffle -- pure luxury. The purée and pickled baby carrots added a vinegary balance, and the potato pavé was perfectly crispy and flavorful. Paired with Borgogno Barolo 2020. Course 5: "Oops! I Dropped the Lemon Tart" This adventure through time ended with an unexpected object lesson for life - Chef Massimo Bottura maintained that mistakes are not failures, but rather opportunities for creativity and innovation and that's the inspo on this dish. This famous lemon tart known for originating from a kitchen error, turned life lesson, was amazing - the lemongrass ice cream was the perfect creamy balance of flavors and all the components on the plate worked together to top off a night of fine dining with a sweet and whimsical golden finale. Paired very well with The Château Carmes Rieussec Sauternes 2020. If you are still reading - I hope this gives a peek into what to expect at these exceptionally special events. What a wonderful addition to the Sonoran Restaurant week! I went with two other people. Two steaks were properly prepared. Two were to be well done, one medium, and the waitress said the well-done steaks would need to be fly-cut, which sounded good. Two (one medium,one well-done) were fly-cut and tasted great. One was not fly-cut, and although requested well-done, was rare. The waitress took it back, uneaten but cut. We expected a different steak would be prepared as discussed, but it was the same steak, cut apart, with lots of dark brown sauce trying to hide the pink meat and apparently not cooked any further. Part was eaten to try to have a chance to eat together because sending it back again would have allowed two to finish eating with one just starting to eat. Dessert was offered for free, but we did not want dessert... I wanted a discount, because the bill was $160, and tis experience didn't come close to equalling that cost. I have been here once before (Easter 2026), and it was a great experience, but this visit was not. The receipt had a tip section for the kitchen staff. Here's my "kitchen love": the person who was cooking steaks at 7pm on July 3rd 2026 likes to hide or ignore their errors instead of correcting them, and this needs to stop. Hopefully this restaurant will hire cooks and wait staff who correct mistakes instead of trying to hide them. Mistakes are understandable because everyone makes them, and how they are resolved makes a profound impression. In this case, the impression was terrible. Separately, two of the steaks were supposed to be petite filets @ $45, one filet mignon at $50. Two were billed @$50, one @$45. I didn't complain. At that point, we wanted to end the experience. Came to The Cork for a Valentine's Day dinner on Feb 13 thinking it'd be easy to get a table. Wrong, LOL The Cork is busy no matter what day it is and that's a good thing because we need to keep local establishments busy and prospering. Lucky enough to find a table in the corner of the bar. Drinks were ordered but were just classics....Captain & Coke and a dirty Martini. My dirty Martini was perfect with blue cheese stuffed olives. We tried the wild game trio (bison, venison and kangaroo) because neither of us have ever had kangaroo. Once the waiter brought it out, set it down and left - we cracked up! For $22, you get one 3" strip/bite of each - so 3 bites of meat. They were all delicious but 3 bites, c'mon now! Dinner consisted of my teriyaki NY strip with a loaded baked potato and charred broccolini. EXCELLENT dinner and to be honest, I could have eaten a whole plate of that charred broccolini. My guy had double lobster tails, asparagus and garlic mashed potatoes. All extremely delicious. We topped off the night with creme brulee and a slice of cheesecake. A total gut buster, LOL. My only complete is that the garlic mashed potatoes were instant! I am thinking maybe they were so busy they were running out of potatoes. My hubby had a baked potato so they could've done a mashed version with that but then again maybe they ran out of potatoes? We have always loved The Cork way back when it was Johnathan's Cork. A Tucson gem that under new ownership continues to create fantastic food! It was date night, and we made a last minute reservation in the morning. No issues since we are in mid August. But this is when the locals should visit our favorite home grown restaurants. Let me mention now that the place was very busy when we arrived. They have a beautiful bar located in the center of the building. We were seated in back with 4 other tables with view of the kitchen. Honestly the area we sat in was really loud. Sometimes I couldn't hear my husband sitting next to me. So that is why one less star. The food has always been been fantastic. My husband's prime rib was cooked a perfect medium. He had asparagus and a baked potato. I had the special salmon along with charred broccolini and a baked potato. All was amazing! We shared a cream brûlée after and it was delightful. We will always return but may ask for a different spot to sit. read more

Decided to come here again for dinner and this time I'm leaving my review the same night and not months later as I go through my photos. As pleased with the food as last time. We were a bit disappointed to see the kangaroo was gone, but the rack of elk was a nice and tasty substitute. This time around we didn't bother with the trio since we knew we wanted the bisson and the elk addition. The food did not disappoint. This time we came with a reservation and were seated within 5 minutes. Oddly, we were seated in Daly's section and she immediately recognized us as if we were regulars, even though we were last here a year ago and remembered bits and pieces of who we were and what we did for a living, truly an impressive waitress. We made the effort this time to note her name down so we can ask for her section again next year! She definitely made sure to check in on us to make sure we were happy with our food and if we needed drink refills. She did convince us to try the seasonal blood orange tarts, which were quite tasty. They weren't overly sweet and the orange and decorative strawberries were fairly sweet and didn't come off as tart given the sweetness of the tarts. These were a nice and light dessert. My husband ended up in the ER with severe food poisoning the day after eating here. He hadn't had anything else all day or after. Don't get me wrong the food and service were great. The problem lies with dropping 400 on a dinner for four then hundreds more after 6 hours at the ER. Responses to Business Owner: I called the restaurant when we returned home from the hospital to inform them of possible contamination and was told by a female staff member the information would be relayed to management but in these situations "there's no way to know for sure you got sick from us." My intention of the review was to ensure visibility, and I can provide full documentation and dates, but as the owner pointed out there's still nothing that can be done and we are not looking for anything to be done aside from informing your staff of how to handle these issues. As customers who have visited multiple times, brought friends and family, and considering a bill for 4 runs around 3-400 bucks, we easily spent thousands of dollars here over the last several years. The point is, the likelihood that the meal made my husband severely ill is extremely high, and could mean that someone either knowingly or not, cross contaminated some seafood, shellfish, game meat or otherwise at this establishment. Our concern should have been taken seriously and not brushed off. We will take the advice of notifying the health department in the future. read more

That bought us two prime rib entrees, perhaps 8 oz in size, and very ordinary in flavor and presentation ($45 each); 1/2 a toasted duck which was quite good, and their smoked brisket special that, in addition to being smoked for 14 hours as they say, both 1/4" slices were apparently finished, each side, over an extremely hot fire rendering both pieces to near charcoal. Had it not been a special occasion, I would have sent it back. The service was slow but friendly. The bottom line: relatively decent food (brisket excepted), small portions, adequate service and grossly overpriced. There are much better choices in Tucson. read more

Went to The Cork to celebrate our anniversary last night. Everything was perfect! I ordered the Margarita Verde and it had the best flavors. Then for a starter we ordered the blackened Calamari steak, LOVE. My husband ordered the prime rib which was cooked perfectly and not too fatty. I ordered the salmon special. I think it was the best salmon I've ever had! We took home the cheesecake and bread pudding for the next couple nights and can't wait to enjoy those. Service was great, ambiance was classy, and the menu was unique. When you see kangaroo on the menu, you gotta take the leap. Full disclosure, I had never had kangaroo before I visited this establishment. I actually scrolled through 100 restaurants on this day with a sort of indifferent malaise. I was tired of the usuals: Italian, Mexican, Thai, Chinese, American. I landed on The Cork, fully expecting that I would get the salmon. But I am quite hoppy with the kangaroo choice. This place is very homey. The charm is eclectic southwest. Now the food. It was great! The prime rib was delicious the horseradish was perfect not too sharp but not just creamy either. The asparagus and potato cooked to absolute perfection. I ordered the seafood pasta. I was a little disappointed with the amount of lobster I got and shrimp I got 4 shrimps and like 2 morsels of lobster for 38 dollars and wasn't impressed with the sauce it was VERY oily. But the martini and espresso martini were well crafted. I ordered the creme brûlée it was alright I have had better. They don't use real vanilla bean and that to me makes for a good creme brûlée. My husband got a peanut butter cake and while you can't deny peanut butter and chocolate the cake was dry so that is disappointing to me that means premade frozen dessert and that's just yuck to me. We paid 150 bucks. I will compare that to longhorn prices. Service was alright. We weren't Informed of any specials but the table next to us was..? So that was weird. Anyway I'll be back to try the bison and kangaroo?! I thought that was unique and need to try. They also didn't have oysters available and said they wouldn't be available until October. Living in AZ there's an overwhelming amount of Mexican food, so sometimes you just want a solid steakhouse! The cork does not disappoint! The decor is clean but original to the spirit of the old school steakhouse. The staff were very professional and helpful when making food choices. I had the oysters which were blue point and freshly prepared. I had the game trio appetizer which has kangaroo, bison and venison all with perfectly paired sauces and a portion that won't ruin your dinner. For dinner I got the lamb chops which were cooked a beautiful medium rare. The dirty martini was crisp and salty. The bartender was great with a red suggestion for the game trio and lamb. We had two good reasons to have dinner at the Cork, a gift certificate and a birthday to celebrate. Bottom Line: Super Yum! The Cork is mid century retro steakhouse where you expect to see Don Draper sitting at the bar. We made an early dinner reservation to take advantage of the Happy Hour. We did outdoor seating. Glad we did, indoors was looked almost full. And while we had the outdoor area to ourselves for a while, it was full by the time we left. The wait staff was great; friendly, helpful and knowledgeable. Drinks were great. My Better Half got a Happy Hour Chocolate Martini. Very chocolatey. I got a local Oktoberfest. Tasty. My Better Half and I shared a bread basket and a shrimp cocktail. Shrimps were large and tender with traditional cocktail sauce and a hot mustard sauce. Never tried a hot mustard on a shrimp cocktail. Tasty. The BH ordered the macadamia crusted halibut. A very generous portion of halibut. I got the 9oz prime rib, medium rare. A great piece of meat done to a turn. Entrees come with 2 sides included. Then time for the desert tray! We shared a slice of pumpkin expresso cake and a birthday brownie with vanilla ice cream. Met some friends here for dinner recently for a very nice dinner. I do not think I had been here in over ten years. The inside has a sort of rustic, homey, nice but casual vibe. The menu is super unique with some of your normal steak/seafood classics in addition to bison, venison and kangaroo. I ended up doing the halibut which was very good, coupled with the Mexican street corn and calabacitas. Other orders at the table were the shrimp pasta, chicken and steak. Everyone enjoyed their meal. We all shared a piece of the Italian Lemon Cake for dessert. Service was fantastic and attentive, our servers name was Ryan. I never saw my water glass less than 2/3rds full and I love that. read more
