The people are incredible, friendly, personable, and genuine. Not bothered with you because you have questions ... Very happy to help. Anybody can sense the, "You're bothering me" vibes fairly easily. Or the, "Just tell me what you want because I don't have time for you right now" attitude. Dropped by this market with a friend based on her bosses recommendation. She picked out some seasoned items & I figured I'd grab a few steaks at a decent price. All was good and friendly until I asked to see the steaks they had pulled. When flipped over the meat was gray, and looked slimy. Once it was close enough to smell ... no WAY am I buying that!! I have been buying my steaks and ribeye patties here for at least the past 6 months. I bought some Denver steaks and ribeye patties so I could cook during this freeze and the Denver steaks were spoiled. I couldn't tell at first because they wrap them right away but when I went home to cook them, they were spoiled and smelled funny. I was trying to be optimistic and just cook them up even though they turned in less than 12 hours. Big mistake. Now I had to discard this meat I just bought 12 hrs before I cooked them. I really wanted to love this place, but no way, no how, ever. I received their text, bone in ribeyes for $11.99 while supplies last. I rushed there that day. These steaks were so bad, the stench remained in my refrigerator for the next day. I went there to exchange and buy more. To my SHOCKING DISBELIEF, the store manager said, "they're fine" I can't replace them. I have 30 years in the coffee industry and have developed extraordinary taste and smell senses. Let me say, the stench was so bad, I had to open my car windows on the ride. This woman stood in front of me, looked me in the eye and said, they are fine and I will not exchange them. Even though I throughly trust my senses, I took the steaks to HEB and asked the senior butcher if I was crazy. Nope, he validated exactly what I knew, skunky, bad meat. I will usually purchase and vacuum pack a few and cook later or give them to my kids . The bacon wrapped chicken bites are the boom . Usually pick them up every week . Simple , fast , seasoned perfectly . . Serve with little rice and grilled veggies you won't be disappointed . Staff is always great and helpful. Last week I finally picked up the BBQ brisket sliced sandwich . Going to have to say it was one of the better brisket sandwiches I have had in the area . Being a brisket guy that doesn't like BBQ sauce ,going to have to give it another shot to confirm I wasn't just starving when I ate it . Brisket was moist and very flavorful. Bread was fresh . I've gotten into a bad habit of only coming here for meats for special occasions, but really they have an enormous selection I should be taking advantage of. My mom came to stay with us and I needed to show off my smoking skills, so I bought a wagyu brisket (14 pounds) to give me a leg up. It is probably the fourth brisket I've cooked from here, every time there isn't much (additional) fat to trim off, and the meat is just fantastic! This was a 13 hour smoke I believe, and it came out tender and was definitely an impressive cut from a quality, size and taste perspective. STaff is friendly, they give great advice, I would highly recommend trying them out for any of your butchery needs. They also have lots of rub options, charcoal, wood pellets, sauces, really anything you'd need to bring people together over meat! read more

We had a very bad experience with ordering a turkey for Thanksgiving. We had ordered the turkey to be spatchcocked, but when we went to pick it up it was not spatchcocked. The employee said he was not aware of it due to being new, and then proceeded to raise his voice and become very argumentative to us. Only then did he tell us to speak to his manager. The manager then stated our order did not show it being spatchcocked, and that they would not do it without an additional charge even though we had already ordered it. Finally, upon checking out, the cashier did not check out our order properly. We had already paid $50 towards reserving the turkey, but he refused to verify it was taken off of our price. If you prefer to season things yourself, you can buy the unseasoned/unprepared options. They carry steaks, marinated chicken wings, quail, briskets all kinds of things. I've personally tried the Bellville sausages, different flavors of the seasoned chicken breasts, chicken wings (flavors vary), bacon wrapped veggies. Really good butcher shop willing to entertain special requests - I was impressed! We tried the Chopping Block at an unusual time - during the Carona virus scare. Thanks to hoard shopping, our local markets had NO MEAT, so we decided to give these guys a try. There was hardly any place to park in the small parking lot and very crowded inside - but they had plenty of meat - understandably, not everything we came for. No hamburger, but plenty of steak, chicken, and pork, so we ordered a couple of steaks and moved on so there would be meat for others. Service was outstanding - butchers were patient and friendly offering numerous suggestions to all who asked. Looking forward to retuning after life gets back to normal. read more

Everytime I have purchased anything from this place for the BBQ pit it has been off the hook. Friendly staff with nay questions that you would have about what they have for sale. I purchased the Dirt Burgers and they were delicious. I also purchased the bacon wrapped asparagus and they were off the hook. I have purchased their bacon before but have never though about wrapping them on Asparagus, and Sweet Potatoes. I will be making another trip this weekend to purchase some more burger patties and will try the other ones that they have. I give this place an 11 out of 10. read more

I got duck came home started prepping it and the skin poked me and I found a quill so when I ran my hand over the skin there was about 20 quills in each breast. I've never had that in duck I spent 30 mins pulling them out. I added salt and pepper and cooked them. When you walk inside this place, you can hear angels singing. They regularly stock higher quality meats, but also have proteins that are reasonably priced. Authentic Kobe with certificates are sold here daily. We do the wagyu often and love it. Stock here is good and they have house made seasoning that is flavorful. I did see they have bread, cheese, and a selection of deli meats too that I have not tried yet. They offer great poultry and swine items. They often have grilling items that look attractive. The staff are great. I have really reduced my protein shopping from grocery stores since I came here. Remember, butcher shops often are knowledgeable about their product. Decided to check this place out today after work. Bought a ribeye for myself and a filet for the mrs. Also bought some jalapeño poppers. Everything was delicious! The beef is very good quality, probably the best I've had from a store. They have a very good selection of different cuts of meats, including some wild game. They also have dry aged meat, but the guy at the counter said they wouldn't have any available until 27 days. Will definitely be back and also on the lookout for the dry aged meat. read more

I've tried this place a few times now. The firs time I ordered 2 2" ribeyes over the phone to be picked up later. I got 1" ribeyes. The second and third time I tried them, the steaks were good. The fourth time I tried I ordered over the phone. They couldn't cut one steak in an hour and a half. Their meat is good, but very expensive. Their service for a high end specialty meat market is not good. I don't mind paying for high end products, but I expect service to go along with it. If you're a high end customer that expects high end service and product, this place probably isn't for you. read more

This place is simply amazing! We used to go to a competitor in league city, which was good but the chopping block goes above and beyond not only with their quality foods but their customer service. If you get a chance to speak with any of them I highly recommend asking them any questions due to their knowledge of all the quality meats, every time I come in Jason greets me with a hello and a suggestion on what we should cook next. My buddies and I were in there for my 40th birthday to pick up something to throw on the grill and the very next day Jason and the staff recognized us instantly and gave us a free sample of the breakfast sausage they just whipped up. We were excited to try this place. The steaks, especially the aged ones, looked amazing! They have your typical meat market offerings, mostly Wagyu-based, which is great. My girlfriend asked about their Keto Boudin that they advertise on Facebook but they were out. When we asked when they'd get it back in stock, the light-brown-haired white guy with a beard and hat behind the counter says, "We make it when we're in the mood." Ok cool. When my girlfriend asked about the discoloration in some of the Wagyu burger patties with the dark seasoning around the edges he said it was the charcoal that takes the oxygen out of the meat so it becomes darker. He also said, "Yeah we're not in the business of killing people." Okaaaaaayyyyyyy.....thanks for that and we're glad you're not. And then lastly, we kept asking about Wagyu this and Wagyu that because we're interested in their products and he says, "Hey you don't have to keep saying 'Wagyu'. Everything you see here that's ground is Wagyu." Talk about amazing customer service right? We'll definitely be spreading word-of-mouth. We purchased a sealed pack of sausage along with 2 of their in-house WAGYU sausage and a couple of the darker WAGYU burger patties. We get home, I open it all to cook and the WAGYU sausage was the only thing that smelled like sandwich meat that just went sour. I gave it the benefit of the doubt because the cheese in it can sometimes make things smell funky but I cooked it and ate a few pieces. I, personally, had quite the upset stomach over the next two days, almost both ends. My girlfriend only had one piece of the sausage but the rest I threw out the next day. The packaged sausage and WAGYU burgers were fine. So...we're definitely going to avoid this place not only because of the the sour food we received, but mostly because of the jerk behind the counter. read more
