I loved that they didn't skimp on the prosciutto in the prosciutto parma, and the sharp tanginess from the slaw was a nice contrast to the fatty prosciutto and ricotta -- though some bites were just a bit too acidic, making the BLTT our preference. All the ingredients tasted high quality and well thought out. The BLTT was $12 and the prosciutto parma was $13, which might be on the higher end for sandwiches but not unreasonable for a meal, especially considering how good the ingredients are, in my opinion. While we were there we picked up some of their pre-made beef sticks of different flavors from the counter, excellent seasoning, very good and tasty. We also had a whole pig processed by them, and the flavor of the smoked bacon was so darn good we raved to all our friends about it, fantastic! The experience and quality were so good we've decided to do it again with them this year, both half a beef and another pig. Could NOT be happier with these folks. We come down from St Paul and it's well worth the trip.

They also sell frozen meats they've butchered. I love their Bratwurst, which is MUCH better than Johnsonville's. I like to come in for the fresh cuts that I can pick out from the display case and know it is FRESH! There's also cheese and wine, but I come for their meat. They do the processing on site, including organic processing. You can also purchase large bundles of meat if you have a big freezer. Try this place; meat is much nice that the grocery stores and much fresher.
