Wallie's is located in Greenwich (NY - pronounced GREEN-wich) which is just over the Hudson from Schuylerville and about 20 minutes from Saratoga Springs. Well worth the drive. I was told that the restaurant has been around a long time (one of our friends used to go there with his parents as a youngster), but was closed for many years. The current owners did a fabulous renovation job! It's well beyond tavern quality. If they upgraded the seating to plush chairs, you would think you walked into a five-star dining establishment. Our food and beverages did not disappoint. My hubs and I ordered Whiskey Sours which were truly authentic. I'm a martini gal and hadn't had one in years - it was delicious. We shared the Calamari appetizer which was perfectly fried, crispy and not greasy, and the perfect size portion for two. It was accompanied with a thick marinara. We thoroughly enjoyed their house special, Prime Rib (offered in 10 or 14 ounce portions), which was cooked to perfection (rare). The beef was offered with horseradish or horseradish cream (or both!). The mixed vegetables that accompanied the meat were fresh and not overcooked. There was also a baked potato. We were too full to sample dessert. Next time! Our server was accommodating and the timing of delivery of our food was a bit slow (there were only two other tables with patrons) but we were not in a hurry so we didn't mind. Wallie's was a superb find. You won't find better prime rib anywhere. Their menu is limited but they cover all the bases. Items are reasonably priced. I do hope they expand their offerings - or add specials (which they didn't have last night) - to get locals and other regulars to dine there more often. Having said that, it's the prime rib that draws our friends to this place (a 15-20 minute drive from Stillwater). Wallie's bar area is charming. Warm and cozy with bar and table seating. They also have off-street parking. This place is a winner!

They have a long menu but it doesn't have a lot of food options on it, with most of the pages devoted to alcohol. They had only one dessert option when we were there. My wife and I both ordered the Hanger Steak with fries, mushroom sauce, and green salad (about $40 each). Hanger steak is my favorite cut and hard to find so I jumped on it. Food came out in about 25 minutes, which is amazing considering how small their kitchen is. The steak was cooked perfectly (they didn't ask how we wanted it), smothered in a lovely mushroom sauce, and covered an ample portion of crispy homemade fries which were so good I would have thought them bagged frozen items. Even the basic salad which was just various types of lettuce was great. They aren't cheap, but they are focusing on "farm to table" and that means quality food at commensurate (fair?) prices. Burgers and chicken sandwiches are $15, so if you want something lighter but still tasty you can go that route. Speaking of light, if you go into the bathroom on the right you will find a cold, dark, tiny room lit solely by a PINK bulb. It feels like being on a spaceship (as if I know what that is like), and after when you leave seeing the main light in the restaurant is very jarring. It was a fun experience but not inexpensive and not one that checks the boxes that I look for in a restaurant. Dark, loud, and cramped might be hip for the young or "save the earth" crowd, but I am too old to give up creature comforts for such things. The food, though expensive, was absolutely outstanding in every way though and I won't forget that steak for a long time.

It was served with a tomato sauce that didn't go well with the toppings. It was an odd dish. If it wasn't so late, I might have actually sent it back (which I do probably once every 10 years). Fresher, crispy and less bitter calamari might have been enough to fix the balance. My dinner companion had a sandwich with a bun, lettuce, apple slice, fried chicken, cheese, and bacon. I think it might have been a special. It was ok. It came with Saratoga chips, which is why we picked the restaurant. We wanted to get Saratoga chips in Saratoga. While the draft beers available are not likely to attract those interested mostly in craft beers, the variety offered should be sufficient to accommodate those looking for a good brew to pair with the food they order. And we're talking about homemade pub food. While my companions chose sodas to go with their burgers, I decided on a Fiddlehead IPA ($5.50). My wife ordered the Cheddar & Bacon Burger (19 klams) and two of us ordered the Smokehouse Burger (19 klams). All burgers are half-pound, hand-crafted, freshly ground beef served with lettuce, tomato, and onion on a grilled brioche roll. They are also accompanied by fresh-cut fries and pineapple slaw. We all ordered our burgers medium-rare, and the kitchen complied. While the Cheddar & Bacon Burger is self-explanatory, the Smokehouse Burger includes a brown sugar BBQ sauce, cheddar cheese, applewood smoked bacon and a homemade onion ring. The bacon on all our burgers was thick, crispy, and very tasty. The side of pineapple slaw was fresh and flavorful, the fries were better than average, and the rolls were soft and tasty.
