The pretense is non-existent and locals (including myself!) seem to love it here. So like many noodle spots in HK, this place is fairly small. No big tables for 5+ but quite a few small'ish round tables that are good for solo eats or the invaluable food companion. The aroma coming from the semi-open kitchen should be enough inspiration for folks to know what they want upon arrival, but just in case they have the menus outlined along the wall. An easy way to start? Try a wonton and beef brisket with your choice of noodles. The wontons are somewhat pillowy in texture and full of flavor while the beef brisket is braised well while maintaining a perfectly chewy bite. The noodle variety is good, with egg / rice noodles winning over the crowd though I feel the e-fu noodles take the cake. Lastly, do not sleep on the beef tendon. It's practically butter when done right. Chui Hing does fancy itself as a HK style cafe, so other dishes like congee, fried fish skin, fried rice, may appear on the menu, focus on what to stack in your bowl instead. I didn't ask to have the noodles separate, but they still retained a good amount of chew by the time I got back up top the hotel. You can pay a little extra anywhere to ask them pack separate. The wontons are ok, beef balls are good, noodles are good, soup okay. The milk tea wasn't very strong but has a nice authentic back flavor. Everything was ready in under 5 minutes. Very good for takeout!

Located in the business center of Sheung Wan, this joint, good soup targets the office workers whom are deprived from proper soups. Busy OLs munching on shop bought salads; men in suit slaving over stock market digging on lunch boxes, from a Chinese medicine perspective, these types of eating habit is very unhealthy and is actually disrupting the internal balance of the body. You know how the chinese use to combine foods and medicine; it is believed that the ingredients in the soup have therapeutic properties and could actually restore the balance of the Ying and Yang. Frankly, i don't really care too much about the internal balance thing, as long as the soup tastes good, it works for me. Indeed, the soups served by this joint is freshly made and have been simmering for long hours; you can actually feel the collagen sticking your lips together after taking a sip off the cup. That's the very definition of a good bowl of soup. I got to say the flavor might be too mild for me, that is, not enough salt; yet all the hard work put into the soup costs only $8 for a cup and $22 for a pot, what more could you ask for? $22 for a taste from the heart of the home, it is worth the while, and more.

Service was below average; the woman at the counter was quite rude. I'm accustomed to efficient, no nonsense service, but she was actively rude to me and my mother for no apparent reason. She was rude both before and after we ordered anything, as if we were bothering her by asking her whether we should order at the counter or what, and later whether the order she put on the counter was ours (speaking in Chinese both times). I really don't get it.

The soup cost around $50-60HKD, so around $9-10CDN. For just a bowl it sounds a little pricey, but it is loaded!. You obviously have the snake meat - usually there should be 2 types of snakes as the main ingredient. Then it's topped with with chrysanthemum leaves, spices, lemon leaves and fried dough on the side. The soup itself is very thick as it's stewed for hours. The snake meat tastes similarly to chicken, but a little tougher to chew on. It gives a very hearty feeling to it and a warm feeling inside and out. Because there's so much content inside, one bowl fills you up pretty well (so worth the money!). If you are in the neighborhood, I would highly recommend to be a little adventurous and try it once (or share a bowl). A lot of locals enjoy it. The broth comes bubbly hot (up to 300C = 572F, its poster claims) in a stone pot, and is luscious, rich and flavorful with prominent notes of pork and fish. It's too heavy and salty for sipping, but excellent as a dipping sauce for the bouncy, thick noodles. I like thick noodles so this is perfect. The pork is a large, thick cut that is mostly lean with a bit of fat attached. You can select how much noodles you want: 200g, 300g, 400g, or 800 for additional charge. I asked for 200, but the waitress insisted that I should order more, and warned that should I want extra noodles after the bowl arrives, it would additional charge. Turned out that I should have stayed with my intuition as I ended up with leftover. This place also offers children portion, and has interesting drink options imported from Japan.

Because the portions were so huge, we actually packed a big takeaway box before we even started chowing down. We each got a cream soda too, which honestly feels mandatory when you're in Hong Kong. Overall, it was a good experience. Just note: they only take cash, and they also charge for takeaway containers. Bring an umbrella too as there is no cover while waiting outside.
