Okay!!! Best rolled tacos! I have been searching and finally found the place. The fried corn tortilla is thin, crispy, flaky, not too crunchy, and definitely not soggy. This is something difficult to achieve but Tacos Don Paco has done it. Served with a generous helping of lettuce, guacamole, and white cheese on top, one order is very filling. We also ordered a quesadilla. The cheese inside was white. Not sure if it was white cheddar or Monterey. I forgot to ask, but I think it is Monterey. The quesadilla had just a thin layer of cheese. I wish it would have been a little bit thicker. Our order also included a Carnitas burrito. The Carnitas were flavorful and moist. The burrito included rice, which I found surprising. But two thumbs up for the Carnitas burrito. It was excellent and huge, by the way. So yeah, I would say this was a great value for all the food we received, the quality, and the price. I had to come back and edit the post because I forgot to mention the amazing salsa bar! I think they have something to please everyone's palate. I loved several of the different flavors. I wish they had a drive-through, but definitely worth walking in. You order at the counter and they will bring food to your table. They have indoor and outdoor seating, which is really nice. Finally tried these guys. We have our typical go-to Mexican tacos shops, but some of them are a bit farther than we'd like. This one is much closer. Came in a on Thurs night around 7:30pm (they close at 8pm) and it was not too busy. Ordered: * Carne Asada Burrito ($13.99) * Surf N' Turf Burrito ($14.75) * Bean & Cheese Burrito ($7.75) Carne asada burrito was good, though my wife noted it was a bit "flat" and had beans & rice inside (i.e. "filler") so minus one star for that. It was still very good. My Surf N' Turf was amazing. Wow, so good. And a grabbed a bunch of salsas from the best salsa bar I've seen in a while. So many options. And each bite used a different salsa. It's like I had 10 different burritos. Each shrimp was cooked perfectly and super juicy. This may be my new favorite spot for a steak & shrimp burrito. Service was great. She even brought me the bag of burritos over to where I was sitting. Will be back to try other things on the menu but super pleased so far. UPDATE: Ordered again, but this time from Uber Eats. We've been to this place 3x. First and second time was fabulous. We returned because they put a lot of meat in their burritos. I've been having shrimp burrito and they also put a lot of shrimp. We thought, finally, a Mexican place that puts a lot of meat in their burritos! On our 3rd visit, we were a little disappointed. Don't get me wrong, their burritos taste great, but the amount of meat and shrimp was less. If the owners do read this review, please don't skimp on the amount of meat and shrimp you put in your burritos. You already have great tasting food and what will make you stand out from the rest of other Mexican restaurants is the amount of meat and shrimp you serve in your dishes. First time at Tacos Don Paco. It's nestled in the new Arroyo Verde shopping center. Ample parking with a new nice clean storefront. First thing I noticed was their advertised "Home Of The Salsas" on their signage as I entered. Menu is a normal taco shop menu but a couple items stuck out which were the quesabirria taco ( with lamb ) , sopes, gorditas and menudo (looks like daily). I ordered a few items. A cheese enchilada plate, carne asada quesadilla, carne asada burrito, adobada torta and a quesabirria taco. Everything came out hot and fresh. The burrito included rice and beans which I'm not usually a fan of but also included guacamole and sour cream so it had a nice flavor. The quesabirria taco was stellar with the lamb meat, a real quesabirria taco. I also tried all 9 of their salsas and liked just about all of them. They do run on the hot side as even the mediums seemed hot. Portion size was good and overall a great dine in experience. To me it seems like Taco Don Pacos recipes were passed down from family and you could tell. Not the average taco shop taste/recipe's. They also have agua frescas,beer, and Mexican cokes. I lovingly call it Salsa Don Paco. Newish to Oside in the Arroyo Verde Shopping Center off RDO and Oside Blvd they have their original location in Vista. This seems sterile in comparison. Similar menu, but decor is cold. Service is friendly, prices are good, even for todays economy. Portions are mid, but appropriate for pricing. There is a lightness about their food. it's not heavy, not greasy, even their sauces and salsa's (more detail later). Their asada is chopped on the bigger side and while tasty it's not pronounced. A tad dry. They go with a thin fry on their fries and California burrito. Heavy rice ratio on burritos. My favorites are cabeza, lengua, al pastor, carnitas, carne asada, suadero, fish tacos. Buche. shrimp, tripa, chicken are in 2nd tier. Their salsa selection is unmatched, but their description of heat is to me a little off. They should group the salsa's by heat level as there is no rhyme or reason for their organization (perhaps it's prep, but from our perspective it's confusing) Hottest to weakest 9. 2. 3. 1. 4. 6. 8, 7, 5. That's not to say any of them make sense, but the hot one's are 9, 2, 3. Everything else is medium except 5 which is for coloring only. My favorite is 6, I can put that on any food. I prefer a little grit to my Taco shop. I like a good old 24 hour, heavy handed cook that skimps/axes filler carbs, but most of those places have 2 pretty weak and forgettable salsas, but the trade off is Salsa Don Paco. read more

I got the carne asada tostada My husband got the carne asada sope and the chicharron Gordita. Let's start on my tostada. All the flavors were there. But, my number one pet peeve in a tostada is the tortilla. If you don't fry it right, the tortilla is chewy. And that's exactly how my tostada came out. With a chewy texture. If you're able to bend your tostadas then you're basically eating a soft taco. The sope was good. The chicharron Gordita was really good. The chicharron had a very good flavor. They have a nice salsa bar, it's nice and clean. I like how they all have lids on all the salsas. I can see this restaurant getting super packed once Frontwave stadium opens up pretty soon. They have a pretty solid selection on their menu, which ranges from : soft-shell tacos, hard-shell tacos, rolled-tacos, burritos, gorditas, sopes, quesadillas, nachos, tortas, mulitas, tostadas, fries & even menudo. They also carry a wide variety of meats: adobada, carne asada, Al pastor, lengua , cabeza, carnitas, tripas, birria, chorizo, chicken, shrimp, machaca & even fish. Because they are known for their salsas, there's a lot to choose from, with varying degrees of heat, intensity, & flavor. I shared a video of them in this review. Their interior is extremely basic, with not much decor or ambiance, but it is spacious and great for family seating. Their bathroom was clean & simple too. The one downfall that I can see to this place is their parking situation. Although they have a few spaces directly in front, and there are parking spaces in the main center lot; If it ever gets really busy here, I can tell it will be difficult to find a spot, and it will be a tight fit. But since the interior ambience doesn't lend towards dining-in to eat; I'm thinking this may not be an issue if many customers simply get their orders TO-GO. The customer service was friendly, and only had one lady behind the cashier. All in all, I think that Tacos Don Paco is a very solid contribution to Oceanside's inland dining scene. The meat was flavorful and had slight bits of charring that adds texture and smokiness. The pineapple bits add a level of sweetness to balance it all out. Battered Fish Taco: What a surprise hit! Mightve actually enjoyed their fish taco a little more! The batter was super crunchy and the fish very tender. They also added crema on top which gives delicious creaminess. Highly recommended!
