My trip to Paris last month was not going great (food wise) even though I had researched my chosen Michelin-starred restaurants--none were as fabulous as I had expected. Fortunately on my last night in Paris my luck changed for the better with my dinner at Table - Bruno Verjus! Table is a Michelin 2-star restaurant. The cuisine, hospitality and service were marvelous! This is the restaurant to which I will return on my next visit to Paris. We chose the Tasting Menu, and it was the perfect amount of food, and every course was delicious!

Fully booked at precisely 10h00 three-weeks in advance, just as it has been for more than a decade, arrival at 80 Rue de Charonne finds the green-fronted bistro largely indistinguishable from those surrounding while an interior of concrete and wood is neither exciting nor particularly comfortable. At one point part of the "Bistronomy" movement, but now perhaps best considered a Micro-seasonal experience right down to its beverages, guests are invited to begin with Aperitifs well-suited to deeply flavored Onion Broth and signature Gougeres served piping hot with bold spicing. Served at a leisurely pace by educated servers, though not the sort prone to over-explaining, proper courses begin with puffy Bread alongside housemade Labneh and Milk-fed Lamb Tartare before progressing to a green Salad with Egg Yolk dressed in White Wine, Olive Oil, and Garlic. Next taking advantage of local winter Truffles, smartly sandwiched between caramelized Endive with Pears and hints of Wine, Bread is offered to sop up all the Sauce and replenished to do the same with Monkfish in complex Buillabaisse. Reservation is hard to come by but if you are willing to wake up at Paris time 10am with a 21 days in advance booking, you should be able to score a resy. Although for us in the US, 10am Paris time is middle of the night so could be challenging. Ambience is French countryside rustic - Didn't have to dress up, didn't have to wait for choreographed service or any of the nonsense that the low reviews seem to crave. Just a very good restaurant. Some of the pairings were super interesting and really transformed the dish. However, on the day of our service, some dishes (such as the grilled endive) was a bit of a let down. There was a wine that is intentionally oxidated, very daring pairing but I was not a fan. Would like to come back and give it one more try!

Some highlights: The amuse bouche course was incredible end-to-end, but what really stood out for me was a blue masa shell holding mussel, sauce, and microgreens/herbs/flowers. The poached sea trout with pumpkin and horseradish ice cream was very satisfying. The mix of poached trout and horseradish cream was very familiar, yet the twist of making the horseradish a wholly different temperature and texture was really surprising and innovative. The monkfish in adobo was another extraordinary dish. I have only had monkfish liver before, but the way they were able to perfectly cook the monkfish gave it a texture and flavor reminiscent of lobster. With the spice of the adobo, it was a really well balanced dish. Additionally, all of the wines that we tried were also notable and delicious. Frenchie has definitely earned its Michelin star, and I wouldn't be surprised if it has another by the next time I come back.

Each dish provided a twist on classic appetizers - the gnocchi was served with an inventive "white cheddar foam," and the maple bacon biscuits struck the perfect balance of sweet and salty. Hidden in an angle street of rue de la roquette, this place has a dozen wooden tables and benches. It is fully decorated by its wine bottles so you know what you step into. The owners are extremely friendly and passionate about the wines they serve, which they know perfectly. They go mostly for organic wines and have a preference for Languedoc reds which they find have a better quality/price ratio. There are a few wines from the other regions as well. In total, you'll find probably 50-80 wines on the menu, all deliberately chosen by the owner who will be happy to talk about them. This place is a mix between a wine shop and a restaurant: you can buy the bottles to go or drink it in the restaurant for an additional premium (6 or 8 euros, can't remember). The food is simple but good: charcuterie or cheese plates to share, some grilled meat or fish. Try the calamari and the burrata as appetizers, they're pretty good. All in all, you spend a great time in this place: you discover new wines and you eat some good food. This is a great place to bring a group of friends!

We were part of the second seating and we decided on the smaller menu and ordered a bottle of wine. Each dish that we had was very balanced with lovely, seasonal flavors. My biggest complaint of the evening was the timing. Dinner took over three hours. There was often 45 minutes in between each course. I am all for a long dinner, but I think it is important that the restaurant acknowledges the pace the diners want. The entire restaurant seems to be on the same schedule with every dish, even people who arrived over 45 minutes after us we're getting the first course when we were. I really didn't joy the food but I would think twice about rushing back due to the timing.

The richness of the flavor and the texture which is not reminiscent of the traditional roasted duck or foie gras, but rather a much more like a luxurious and indulgent version. We enjoyed our dinner on the outside of the restaurant after about a 20-30 minute wait. The bone marrow had the best flavor I've experienced for the dish. However, it is definitely overshadowed by the rich flavor of the foie gras. This experience was unforgettable, with our view of Parisian streets on a brisk, April night. We even came back on our last night, but didn't realize the hours on Google maps was for the deli. The restaurant closes earlier, before 9:00 PM. This meal got us thinking about Paris in a positive light, and we hope to be able to come back to eat the amazing dishes again!

As for my steak with foie gras, well the steak was once again tough and the foie gras was weirdly stringy. It was soft for the most part but there were parts that were tough and stringy. Maybe that's a section that's generally separated in the preparation process and it was missed? In any case it was disappointing. What wasn't disappointing was dessert though; perfectly sweet and balanced.
