We also appreciated the generous portions of wasabi and house-style white ginger (which is far better quality than the dyed pink variety). Areas for Improvement Sodium Sensitivity: The zucchini appetizer was good but noticeably salty. My husband limits sodium for medical reasons, and while staff confirmed the soy sauce was low sodium, it tasted quite high in sodium to us. It is almost as good as Japan's so I was fairly impressed. The tonkotsu ramen was good although I didn't think the bowl had enough broth. No random American fillers so love that. The chicken karaage was fine. I don't think I would get that again. The matcha tiramisu was divineeee though. Highly recommend getting that. I do wish it was slightly cheaper and closer to south tulsa. The tables could be cleaner too. Anyway, Jinya is a good spot and the vibe was on point.
