Like I'm actually so serious when I say this place is SUCH a hidden gem. You know when you randomly try a place and you're like "okay this is probably gonna be fine" and then five minutes later you're sitting there like "wait... why is this actually AMAZING???" THAT was my experience here. First of all, the vibes?? SO cute. It has that cozy little neighborhood spot energy where you immediately feel like you've discovered something that you need to gatekeep from everyone else, but at the same time you're like NO because everyone deserves to know about this place. The whole aesthetic is so fun and modern without trying too hard, and it genuinely feels like a place you could come with your friends, get food, yap for an hour, take cute pictures, and leave completely obsessed. And THE FOOD. Oh my god. I don't know what they are putting in these sandwiches but I need them to continue doing exactly that because WOW. The bread is soft and delicious, the fillings are flavorful, everything is saucy in the best possible way, and you can tell this isn't one of those places where they just throw ingredients together and call it a sandwich. Everything tastes intentional. And the mozzarella sticks??? The CHEESE PULL. I genuinely don't think I've ever seen mozzarella stretch that far in my life. You pull one apart and suddenly you're participating in an Olympic sport trying to keep the cheese from snapping. It's hot, crispy, perfectly golden on the outside, and then you bite into it and it's just an absolutely unreasonable amount of gooey, melty cheese. The cheese pull was so dramatic that I genuinely had to stop and appreciate it before eating it. Like this is not just a mozzarella stick, this is an EXPERIENCE. If you're ordering anything from SubKO, I'm sorry but getting the mozzarella sticks is basically mandatory. The Philly cheesesteak??? HELLO????? It is genuinely SO good. The steak is tender, the cheese situation is immaculate, the onions are perfect, and the whole thing just comes together in a way that makes you immediately understand why people are obsessed. It's messy in the "I'm having the best day of my life" way, not the "I regret ordering this" way. The sauces deserve their own paragraph too. I am THE SAUCE GUY and SubKO understands me on a spiritual level. The garlic aioli?? So good. The fact that you can get different sauces and customize things is such a little detail but it makes the whole experience so much better. I need restaurants to understand that sauces are not an accessory. SAUCE IS A FOOD GROUP. Also, the lemonade??? So refreshing. Like I took a sip and immediately felt like I had my life together. Which is impressive because I absolutely did not. I also really appreciate that everything feels fresh and made-to-order. There's something about getting a sandwich that actually tastes like somebody cared about making it instead of something that has been sitting under a heat lamp since 11:47 AM. You can tell there's effort behind the food, and that honestly makes such a difference. And the staff were SO nice. Like genuinely friendly and welcoming, which I feel like deserves to be mentioned because good service can completely change an experience. Nobody was giving that "I hate my job and unfortunately you are here" energy. Everyone was helpful, the food came out quickly, and the whole experience was just easy and pleasant. I also LOVE that this is the kind of place where you can tell the people behind it actually care about what they're doing. It doesn't feel like some soulless chain where everything tastes exactly the same as every other location. It has personality. It has character. It has that little "OMG I found this place" feeling. And honestly??? If you're in the Lisle/Naperville area and you haven't tried SubKO yet, what are you DOING??? Go. Immediately. Put it on the weekend plans. Make it a lunch date. Bring your friends. Bring your family. Bring the coworker you barely know and somehow become best friends over a Philly cheesesteak. I don't care. JUST GO. I feel like this is one of those places that people are going to keep discovering through TikTok/Instagram and then suddenly everyone is going to be talking about it, so I'm writing this review now so I can say I was here before it became everyone's new obsession. Overall: 10/10, 5 stars, would absolutely come back, would absolutely recommend, would absolutely demolish another order of those truffle parmesan fries. Background: It was our son's birthday, MOST of the time, birthday dinners are home-cooked family affairs...his choice this year: Apolis run! We live forty minutes away, and it's worth the ride every time. Our party of seven lined up, placed our orders, and the kitchen got to work. Entrees and sides prepared perfectly, right down to sauce on the side for the seventh entree. It was a pleasure to meet the owner, Mike G. I had the opportunity to thank him for years of great eating. Furthermore, I noticed the sign of a great leader: When it got busy, he jumped in and helped his amazing staff. He leads by example, and it shows. We all had various forms of rice bowls and pitas. Of special note this visit: The sides! The pork and chicken souvlaki are simply divine. The oven roasted Greek potatoes seems like they're right out of your favorite rah-ra's oven. Full of flavor, and mind-blowing. The rice pudding and baklava, as my SIL said, ..."took a 98 point visit and made it a 100 point visit...". My thanks to Mike G. and the amazing staff for a wonderful meal.
