The outside is unassuming, the inside is tiny. But the food is actually pretty tasty! I got the hand pulled noodles with roast duck. The dish(es) are kind of like ramen: long noodles, broth, meat, but simpler. It's simplicity shines though. The duck is tender and sweet (albeit a little bony). I stop by here for the ramen fix occasionally. Last time I went, we were served in literally 2 minutes from ordering. Not sure how that worked but I'm definitely not complaining. I usually resort to the seafood hand pulled (stick to hand-pulled you can eat regular strings elsewhere) and they bless the seafood for you. As far as ramen goes, it's nothing amazing but for ~$10 and a quick lunch, it hits the spot fine. As to why it's four stars, every time I've been here the servers seem to consistently ask if I'm done to take my bowl. Granted it's understandable if I have nothing on my plate or I'm loitering and messing around, but if you've offered to remove my bowl twice within 20 minutes, that's a bother. Along with this, simple mistakes like giving us one bill when we asked to split and minor inconsistencies have made me drop a star. These are also hand pulled right before our eyes! The beef was not perfect but I will inflate my rating thanks to the location. The service and decor seemed nice. Seating for about 20-25 people. The menu is to the point. Can't wait to try the cold jellyfish, beef tendon and cold noodles. Also can't wait to try the knife cut noodles (think big gobs of noodle goodness)! Delicious! Really liked everything we had - especially the hand pulled noodles and knife cut noodles. Broth was sweet flavorful and the meat really infused flavor into the broth, as well. So so so good!!! I went with my sons and we each got something different. My sons got beef flank and the other got the spare ribs. I got the minced pork. The spare ribs turned out to be my favorite (we all shared with eachother) the ribs fell off the bone and the broth was super flavorful. My dish was actually noodles in a thick sauce not soup, which I didn't realize so I asked for a side of broth and added it to my dish and mixed the sauce into the broth and it was SO good. The broth before I mixed it into my dish was very light, reminded me of a pho broth, and they use the same sort of veggies and herbs as pho. The sauce of the dish was almost like a gravy with caramelized onions and it was amazing. The hand pulled noodles are the star of each dish and you can see the chef making them from the dining room, which my boys loved watching. The star of the dish was definitely the crazy good broth. It was aromatic and packed a ton of flavor. Noodles were freshly made and they specialize in two noodles- the thin ones, also commonly known as lo mein noodles- and the sliced noodles, which is a special noodle that came from the Lanzhou province of China. They're equally delicious and I recommend trying both. You get to choose from a unique varieties of meats and my personal go-tos are roasted duck, oxtail, beef and lamb. Coming from Philadelphia which has many hand drawn noodle joints, I was pretty skeptical. This town has not favored well with me and the Chinese selection thus far, but this place proved otherwise. The patrons all were Asian except one when I sat down with my friend, the chef in the back pulling the hand noodles was Chinese, and the waiters were all Chinese. I ordered the standard beef noodles and they were solid, especially for the price that they offered. I added a boiled egg as well and it gave a nice touch, I wouldn't mind going back and having a nice bowl during a more cool time. Fantastic to watch Mr. Chen pull the lamian noodles in the open kitchen, and then dig into the excellent bowl of soup they have been placed in. I had the classic version with beef flank, and the steak pieces were tender and yummy. The soup was rich, fragrant with herbs and beef, warming and restorative. I recommend adding in a few spoonfuls of the hot pepper oil that was thankfully provided in a small pitcher. I will go back for more of this soup. I also ordered a bowl of the diced vinegar cucumbers to start. This was a nice cooling counterpoint to the hot soup but could have been a little more intense in vinegary flavor and spiciness. Lastly, I am aghast at how many Yelpers here referred to this soup as "ramen," even in terms of criticizing it for not containing typical ramen ingredients. Probably the closest thing to Chinese food in the city. The price is really cheap for the amount of food in the bowl!! The portion size is huge and I can never finish the bowl. The soup is really rich and flavorful. The hand pulled noodle is also amazing. I come here often because I miss the taste of NYC's hand pulled noodles. Their spicy beef slices are also really good. I'm working in Stony Brook for two weeks, so taking the time to check out some of the eats. I was pleasantly surprised with this place. After going to China Station, I had sort of lost hope that Stony Brook was actually an area to get authentic Asian food. I ordered the "beef offal" noodle soup with knife-shaved noodles. I far prefer this method of noodle prep to hand-pulled. Knife-shaved noodles are made by holding up a big lump of dough and using a knife to shave chunks of dough directly into boiling water. This method makes each individual noodle unique, with each noodle having a thick and chewy center and softer edges. Since they're thicker noodles, they also stay al dente longer. In comparison, hand-pulled noodles are thinner, more uniform, and get soft quickly after soaking in hot broth. The knife-shaved noodles were excellent at Spendid Noodle. The broth was spectacular and a perfect match for the noodles. The broth was rich and bold, with a depth that comes only from simmering the stock for hours. It was complex and hearty and homey. As I finished the soup, I seriously contemplated ordering a second bowl of noodle soup before I realized I was getting too full. The beef offal version comes with beef flank, tripe, and tendon. The portion of protein was appropriate. I also ordered a side of marinated pig ear, which was delicious. Spendid Noodle provided a decent chili oil, which added another layer of flavor to the noodle soup and was quite pleasant on the pig ear as well. I normally get my noodle fix in Flushing. My standard is Lan Zhou Hand Pulled Noodles and I feel Splendid Noodle is on par to Lan Zhou. I would not be able to choose between the two. The only real difference is price. My noodle soup, side of pig ear, and a canned tea would be maybe $10-11 in Flushing. It was around $17-18 at Spendid Noodle. I have one week left in Stony Book. I will definitely be back. read more

The Broth is good, not a water down version of soup. I had the lamb soup with hand stretch noodles. It had a good consistency of soup to meat. The meat however felt short on flavor to carry on to the broth itself and add more flavor. This is a very popular local noodle restaurant that is unique to Suffolk country. We are able to see the chefs make the noodles and it is such a talent to be able to stretch all of that dough to make so many strands of individual noodles. It was good, but I think I'd get the beef flank only next time (extra meat for $3 is worth it). Noodles and meat were packed separately from the broth as it should be. The broth was nicely seasoned and full bodied. Definitely ask for the chili oil. The beef appetizer met my expectations as well. Not searingly spicy, nicely seasoned. I felt everything was pretty on par with noodles you'd find in Chinatown. Yes, it's priced a little higher and the portions may be a little smaller than what'd you find in the city.
