While the dishes didn't appear to be a huge amount of food, they ended up being plenty. Everything had really nice flavor. As it was my wife's birthday, she got the free baklava for dessert. My daughter and I both thought it was fantastic...maybe one of the better baklavas we've had in a long time. My wife thought it was fine but has had other versions she'd liked better. Service was quick and strong from the start. All food came out surprisingly fast. We'd come here again if on/near Tennyson Street and in the mood for a good Mediterranean experience.

The flavors were excellent. We both loved the veggies, baked chicken, and sausage and peppers. I thought it was really cool to see a father and son open a restaurant and it be something they're passionated about. The upstairs seating area is really a gem. Our server Yvonne guided our menu choices thoughtfully and enhanced our experience with excellent service. We started with watermelon feta salad with baby cilantro, walnuts, and harissa oil. The watermelon was cool, sweet, and crisp and the flavors balanced perfectly. If you are a pickle lover you must get the pickles. I think I will be dreaming of them. The pickled cabbage, okra, califlower and snap peas were just the best! The pitas were puffy, but not hollow, and warm. There was also an olive oil dipping sauce that complemented everything. Star of the show for me was the forgaged mushrooms and hummus. These were the most delicious mushrooms and snoothest hummus I have ever experienced, and I think there might be magicians in the kitchen. Our other dishes were cabbage and eggplant. It's in a sweet little spot with patio seating on the corner of 4th and Corona, but the draw is really the food. I can't vouch for the meat dishes as a vegan, but WOW is their pita soft, fresh and flavorful, and they replenish it readily. Their hummus is excellent, their baba ghanoush is the best I've had since leaving the greater Boston area (with its abundance of outstanding ethnic restaurants) and the eggplant moussaka is fantastic. Plus they put this fully vegan cream dressing on the garden salad that is out of this world. Byblos has completely ruined me for a lot of other restaurants. As I'm writing this I think I've talked myself into going there for lunch!

Growing up in Queens, NY dining at Gyros Town Restaurant instantly took me back to childhood where our neighbor invited our family over for hummus pita skewers and of course baklava. Eating here was so nostalgic and refreshing! Colorado needs more representation in these countries foods-- I am tired of the burgers and fried chicken spots!!!!!! The hummus at Gyros Town Restaurant was silky smooth, had great spiced and served with the warmest fluffiest pita I've had in Colorado. The gyro meat hit the spot on so many levels it's hard to really describe. The pistachio baklava was so delightful. Sweet but not too sweet-- flaky and of course baked fresh that day. Míriam greeted us when we walked in and helped to place our order. She was so kind and quick with her service. I am so glad I found a local spot with big immigrant flavors!
