Under the chicken skin was a layer of gelatin which happens when the chicken is poached and then cool in a meticulous method. Together with the ginger scallion oil sauce, it was umami! When our waitress brought our meals, she informed us that her manager said we had to pay the dinner price because the lunch special was available Monday through Friday, excluding holidays. We hadn't realized it was a holiday. We should have been told about the higher price when we ordered, not when our food was being served. Had we known, we would have ordered something different or gone somewhere else. Customers should be informed of any pricing changes before placing their orders so they can decide for themselves.
