The cake was so moist and not overly sweet at all, and the drink was sweet but still had a real coffee flavor instead of just tasting like sugar. The decor and overall vibe were also really cute, and everyone working there was so nice. You can tell a lot of thought goes into the whole experience, and the quality of the drinks and desserts actually backs it up. I'd definitely come back and try a different theme next time. And, to top it off, the shop owner (?) came up and handed me a peach pastry that is vegan saying "It's not often that dairy-free people get to enjoy a sweet." The baked goods I've tried are, unfortunately, underwhelming. I typically go for their gluten free options and have found them to have textures that are too grainy with flavors on the bland side. The cookies are fine, the gluten free scones are quite bad--flavorless, super dense and hard, not crumbly, kinda sticky. This was the only baked good I've ever tossed. I have yet to try their pies or cakes. Their regular cookies are pretty good but are a bit pricey for the size. Staff: The staff seem a little awkward and shy. I prefer a friendly customer experience. I've only had one visit here where the staff made an attempt at small talk. Usually they stay out of sight. Someone else might like this, it's just not for me. I had the kolache for the first time and I loved them for the bread softness. I asked to warm the sausage kolache in the oven and it tasted better. Then we shared the Marion berry kolache! Yummy!! I have had Water Tank Bakery in Burlington bookmarked for awhile and admit being late to the party, so to speak. But this time coming back south from Edison, Bow, Bellingham and Sedro Wooley, I made it a point to visit on 3/28/26. It is located by the Port of Skagit County, with the regional airport, other commercial businesses, and serendipitously next door to Cairnspring Mills. Look for the Fresh Bread signage starting at Higgins Airport Way that shortly leads you to the retail window. The daily offerings are listed on the business website, as well as, the magnet board located below the retail window. After a brief wait, it was my turn and enjoyed my brief conversation with the founder, owner, and head artisan baker, Rachael Grace Sobczak. She mentioned that majority of the baked goods are from a sourdough bread starter and uses local flours from Cairnspring Mills (next door) and Chimacum Valley Grainery (Olympic Peninsula). From the website, it was great to learn that she baked for a decade at Breadfarm in Edison. She was also involved in her graduate studies as a dietician and concurrently with other community projects. A pandemic pivot started the journey to create the successful Water Tank Bakery. I purchased a four pack of roasted garlic parmesan rolls, a four pack of coffee toffee chocolate sandwich cookies, and two lemon raspberry cream cheese polish buns. All of these were outstanding! Water Tank Bakery baked goods are also available via other retailers (listed on website) and at the year round University District Farmers Market in Seattle on Saturdays 9am to 2pm. I was told, however, there's better availability and variety visiting the retail window in Burlington. Worthy detour!

It would be better to close if there is not sufficient staffing on a weekend, and Labor Day weekend at that. The ill will is harder to recover from than a day of sales. It took 30 minutes to get two burritos and one drip coffee to go. On the burrito note, they were about 25%-30% larger at the onset and are more tortilla than stuffing now. You have to continue to offer a valuable product or people will just stop coming. I really want you to succeed from a local. But staffing and product needs to be set to a standard. Some people walked out today while we were waiting because the wait was just too long.
