In short: A small-town butcher with a mix of processing services for game meat or bulk buys, and also a steadily-humming retail operation. In long: There's a small stretch of businesses a couple blocks from the freeway here, just south of Stanwood. SM has a storefront on the busy road, and you'll always be able to get parking. It gets busy--the front doors split duty on entrance and exit, to keep crowds moving. Inside there are maybe half a dozen stand-up refrigerator cases with fresh meat arranged for sale. You might not see a lot of steaks and chops and stuff like that. Check the "menu" for those. You tell them what cut you want, how thick, and how many, and they cut them fresh for you before you know it. They definitely have all the basics you'd expect from a good butcher, all the links and roasts and grinds and snacks. All solid quality at good prices. They also offer processing as far as I know, but that's the kind of thing you always call way ahead for anyway. Thankfully, butcher shops seem to be making a comeback and have for a while now. Even if you live in town you can probably find an alternative to supermarket selections. But it's fun coming out to smaller towns and supporting independent businesses. read more

This might be my second review of Silvana Meats slaughter, custom cuts. I have contacted Silvana twice over the past few years to come out and humanely slaughter then custom cut my home raised livestock. First year was pigs and lamb with possible steer. I contacted them over the phone to schedule onsite slaughter. Within 24 hrs I had a call back from the slaughter guys with a scheduled date (that was not 2 yrs out like some other shops). The first time they came out for pigs, lamb, I had also mentioned possibility of a steer but wasn't sure if he would be of size. The slaughter guys came out, and we discussed the steer-his age, size, and based on their experience they recommended I wait another 8-9 months (and they were correct). When I called months later to schedule the steer they had a date 3-4 weeks out. They called the day before to reconfirm, showed up on time and were respectful of my animals and my own "anxiety". They saved all of the organ meats that I requested. The process was quick and clean. They were in and out in probably 25 mins and before leaving thanked me for my business and said "see you next time". When the shop called later for my cut instructions they went through the cut sheet explaining cuts and answered my questions regarding how cuts related to recipes! LOL. They also adjusted their cuts to my preferences ie I like my steaks 2 inches thick at a min. When I got my meat back it was totally cut and packaged to my specs and requests. read more

I'm a second generational customer. My parents bought from this shop, and now myself and my family purchase our meat through this shop. The quality *far* surpasses any grocery store out there. The prices are definitely fair in comparison to Haggen/QFC, IGA, Winco. The shop is welcoming and smells SO good! (I like the little renovation you guys did) Their country bulk sausage is hands down the BEST breakfast sausage you'll ever get. Untouchable. Ribeye steaks are damn good too. Their chicken thighs(we purchase these often) are juicy, flavorful and seemingly better quality all around. Not slimy or smelly like the grocery store. Chicken breasts are massive and also very tasty. Great for meal prepping. Myself and my family will be forever customers. We like the staff despite what people may have said. They're real, hardworking knowledgeable humans. We also liked very much, that they weren't brainwashed by the covid BS. No masks no problems. You do you! Silvana Meats isn't your namby pamby artisan butcher shop with 300 different types of sauce. It's your old school, was there when your grandparents were toddler, take your game meat to, smells like meat through and through butcher shop. Their prices at first glance may seem crazy but if you do the math you will see that they are cheaper or the same as Costco with twice the quality. It's just that you don't want to go to them to buy single steaks, they excell in bulk. They will give you THE thanksgiving roast. They don't go through the certifications to get meat to prime grade or anything like that so in effect it keeps prices down. But if you doubt the quality just look at the photo i attached. That's short ribs. No, that's short ribs cheaper than Costco... no no no... That's well marbled, same as prime grade, melt in yo mouth, yet cheaper than Costco's choice grade short ribs. Call ahead for custom orders and be that grill master your neighbors wish they were. read more

I'm your typical guy and have really thick skin so unfriendly employees are not that big of a deal to me. But as others have stated the chicks that work there are some of the meanest nastiest unfriendly women you'll ever encounter. The prices are higher than most other places, and the product is not really any better than most other local meat markets or Costco. Came in for the first time and their freezers were half full. The place is small so it gets crowded fairly quickly on weekends. If you can't find what you are looking for in the freezers, chances are they are in the back, but you'll need ask. If you ask for a certain type of meat or cut, the staff will point you to the binder with the list of meats they offer. Can get overwhelming (I'm a visual person and want to see the meats displayed) if you are not coming in for specific meats. They also do not carry chicken liver which I like to purchase from Macomber Farms for my dogs. We did pickup cooked corned beef, bacon and sausages. read more

I wanted to get some meats for the holiday. The gentleman could not have been more helpful and pleasant to deal with. I didn't feel rushed and he went to great lengths to make sure I understood the options. One of the things I got, by his recommendation, was the smoked turkey breast. I had some for dinner tonight and it was excellent. The smoke flavor was amazing and not overwhelming. It was moist and tender. I will definitely be going back for more. First time getting prime rib here for Christmas and it was a huge hit! Bone in prime rib came in off the bone but tied together with twine. I rubbed mine in oil, garlic, salt, pepper and horseradish. Unsanitary. My wife went to pick up our order, and had later informed me on the lack of cleanliness regarding food handling. Not a single employee was wearing gloves, or proper hygienic attire. Considering we are still enduring this heck of a virus; there was little-to-no-effort of cleanly practices. The entirety of the kitchen staff had zero gloves, and/or masks. Silvana meats is the kind of place that you go out of your way to support. When we were processing my elk, they were too busy to cut for me. Did they turn me away? Not exactly. Instead, they helped me figure out how to make the sausage myself thanks to help from them on the spices. They also hooked me up with some beef fat for the burger. I've heard of Silvana Meats but hadn't been there until a spontaneous exploration of backroads landed me in their parking lot. And I'm very glad I stopped. I didn't have enough dinero for everything I wanted to bring home. Ham hocks, steak cuts, pork chops, smoked salmon, ribs, bacon, Landsjagger, pepperoni sticks, etc. They have tamales, burritos enchiladas and eggs, too. They have a bunch of other stuff. They have a great order sheet. Seems more like a Wish List or a Christmas List. I don't eat a lot of meat and I'm pretty picky about the meat I do eat. I wasn't disappointed about anything I purchased at Silvana. I don't eat a lot of jerky or pepperoni so I was super surprised at how much I enjoyed their variety of pepperoni sticks. read more

The steaks are pretty amazing. I like the new York strip the best. The pork is average at best though. The last trip we bought a whole fryer. It made the best tasting fried chicken I can remember eating! Definitely worth a trip up to Silvana. My husband and I have both patronized this butcher shop for years, but after a visit in October, will never shop here again. We entered the store wearing masks, as mandated by state law, and found, to our dismay, that the employees were unmasked in the tight quarters of this little shop. However, what convinced us to stop doing business with Silvana Meats was a notice posted on their counter for their customers. I'm paraphrasing here, but the gist of the message was: if you don't like the fact that our employees are unmasked, you can go home. It further stated that the person writing it, presumably the owner, didn't want anyone giving their employees "trouble" over their policy, and that the author was "tired of talking about it." Well, we're tired of supporting businesses that don't care if we live or die. I lost a sister to Covid last year, before vaccines were available. I don't care to be the second in my family to die of Covid because of someone else's selfishness. read more
