We loved it so much that we spent a significant amount of time in here sampling all of their balsamic vinegars. You'll feel like a kid in a candy store with all of the classy stainless steel dispensers available for you to sample at your leisure. It was so difficult to decide but I walked out of there a happy woman with a bottle of their 18 yr aged tradition balsamic vinegar (top seller) and a bottle of their, wait for it... Georgia Peach Balsamic Vinegar.. my god. As you would imagine, that vinegar is light colored, rich and sweet (just how I like my men). This place is a DEFINITE stop if you are a balsamic vinegar, olive oil and/or salt connoisseur. Prices are reasonable ($20/per bottle), considering the amount and the quality. Furthermore, what was so refreshing was their ice cream! The ice cresms were Henry's homemade ice cream (from El Paso i think) and there were so many interesting toppings ti choose from. My gluttony eyes and stomach ..after trying some samples, opted for a double scoops (because..just a single scoop wouldn't do justice to yummy treats!) of pistachio and coconut ice cream, with toppings of pomegranate dark balsamic and red chile honey. Prepare to wait awhile if you come during peak times. The shop is small, and the set up doesn't allow for much maneuvering inside. Maybe in the future they can relocate to a shop with a better set up? Our cheese monger in Houston had several lanes to split up the "I'm here to taste cheeses" folk from the "I'm here to order a meal". That sort of method could greatly increase the speed of the waiting in line. Just something to think about if they do end up moving to a larger space in the future!

They have a small menu that they execute flawlessly. Their fresh pasta is made to order, cooked al dente, and I love that the tulip shape helps retain the right amount of sauce. My personal favorite is the pomodoro. The creaminess of the burrata complements the tomato sauce well along with the herby pesto, and the pistachios on top add a nice, crunchy texture. My only minor critique is that I wish they'd bring back the spicy version. The green chile chicken is also worth trying if you want a creamy sauce with a New Mexican flair. They've recently opened up a location at Park Square Market (another food hall by the makers of Sawmill) in Uptown too. You can buy a bag of their fresh made pasta in a variety of flavors/shapes to cook at home.
