Scratch is back after some remodeling small hiatus! Best pizza in Tennessee, best pizza in the south! Nothing like it anywhere else either! Great beer and wonderful record collection for customers to play! Scratch does their very own charcuterie for their meats and grass fed all beef pepperone to top it off with! A true Northeast Tennessee Gem!!! Scratch boasts a 100 plus ton wood fired bread oven and not a miniature dome wimpy "pizza" oven like all the other gas assisted wood fired pizza joints. You have to go up New England to find any oven like this and this puppy takes two weeks to fully heat up and the coals in the back reach well over 1100 degrees F or up to 590 C!!!! This place isn't a cover band when it comes to wood fired techniques and has a completely original process. Pure passion and no pretentiousness whatsoever. Gluten free options, vegan or whatever you wish. Real cane sugar glass bottle sodas! The trust pizza is the local favorite option that the pizza chefs pick their own toppings and it truly is a worthy risk. Been around almost 20 years and still kicking with an updated coat of paint and vibe! People are known to have driven from Atlanta from Memphis from Birmingham even from New Jersey and Chicago just to try or enjoy the pizza again. Scratch is more than a restaurant it's an experience that will never be forgotten!!

My favorite local pizza spot in Johnson City. BYOB and perfect for a casual dinner. We always opt for the "Trust" pizza and it never lets us down. Everything is always made from scratch and you can tell their ingredients are fresh. Highly recommend if you're in the Tri-Cities.

Don't judge a place by its exterior! This place is a perfect example. We ventured to find some great pizza in Johnson City based on reviews and were so glad we did! This place doesn't look like much but they are putting out some amazing pies. Upon walking in we were greeted by 2 pizza makers who are in plain view. That's always nice. Ordering consists of marking off dough type, ingredients, sauce etc on a series of small clipboards. We went with a classic pepperoni pizza with fresh basil. They use a hand built bread oven. Brick built, wood burning over 1200 degrees!! The way this chars the pizza dough is phenomenal! Hand made pepperoni and great ingredients! Amazing pizza! Give it a try if you are ever in the area.

We stopped in on our way home to SC..we wanted to get some good pizza & BOY we were thoroughly pleased!! It was about $65 for two large & one personal pizza but well worth it. They didn't have sides of ranch so that was a bummer but overall awesome experience. Friendly staff!!

Johnson city has some very great hidden gems for food. This is one of them. Ordered two "trust" pizzas. That's where you trust the cooks and they make it how they want. I was pleasantly surprised with apples and smoked ham and peppers. Crazy good combinations. 4/5 because the pizza was absolutely delicious 5/5 for the "trust"pizza 3/5 for the lack of condiments and strange setup of the parlor. Overall a solid 4/5!

What can I say about this place? It's a quaint little tiny building the employees were extremely nice, and helpful. The pizza was absolutely delicious, I will definitely be back If your local you know about it, if not you need to try it

The best pizza I've ever had in my life. Got it to go and it was waiting for me when they said it would be. Large size for the price AND I can't believe the Rice Krispie treat with marshmallows and Oreos!! WUT! I'd move here just for this pizza joint and I don't even eat pizza that often. Love the vibe of the outdoor eating area. The homemade pepperoni is so freaking good! It's personally the best I've ever had.

Located along a busy main business road, entrances to the parking lot are easy to find. This is a…read moresmall shopping center with plenty of parking although it is a bit tight to maneuver. There is one other restaurant as well as several businesses using this parking area so there is always traffic. Handicapped parking is limited with a couple spaces near their entrance and a couple more spaces further away from the door. You'll need to look for a ramp if needed as there is not one by their entrance, but that is not their fault. Walking in for lunch, there was a sign to seat yourself. The restaurant was slightly less than half full. Seating is a mix of tables and booths. There is a low wall on the left with tables on the other side which may be a bit more private or less busy. Most of the booth seats we passed need recovering and the general decor is older and could use a freshening. There is also a small bar in rear with about six stools. There is some background music noticeable but at a low volume which did not interfere with conversation. The temperature inside was rather cool and we left our coats on during our meal. Our waitress came by within a few seconds of us sitting down. She took our drink order and brought the drinks back within a minute. We asked for a few minutes to review the menu. After about ten minutes she returned, apologizing for getting distracted with bussing tables and taking other orders. It appears the restaurant was understaffed and our waitress was performing many tasks. We ordered two appetizers and two entrees. One appetizer dip came out piping hot in about ten minutes. The Buffalo Chicken dip was very good. There is distinct Buffalo flavor without significant spiciness. The majority of the included chicken was shredded as expected but there was one very large chicken piece in the middle. This needed a fork and knife to break apart to eat. The accompanying pita-type chips were warm, crispy on the outside and little puffy inside. The remaining appetizer was delivered about five minutes later, with the two entrees about five minutes after that. The Fall special Four Cheese Bruschetta dip was good. Three of the cheeses were well mixed and the mozzarella was layered on top in the middle of the bowl. Once this cooled a bit it was difficult to use the pita chips to dip any of the mozzarella so a fork was used. The fresh basil and roasted cherry tomatoes were nice garnishes. The Johnny's Special sub was fine but not really special. There was enough meat, lettuce, and tomato to feel it was a decent value but the flavor was overall bland. The onion, mayo, and Italian dressing were minimal to non-existent, at least as far as flavor was concerned. The bread was nicely toasted with a crispness without bordering on hard. The bottom of the sandwich did get soggy by the time the first half of the sandwich was eaten but it did not fall apart. The accompanying French fries were very good, crispy outside and tender inside. The Syracuse Stuffer Calzone was another decent value with adequate ingredients to make a complete meal. The steak was decently flavorful but there was also gristle (possibly grill scrapings) included which took away from the experience. The accompanying marinara dipping sauce was underwhelming. While the recipe ideas and flavors are interesting, the execution was lacking. The kitchen had an issue with the timing of sending out the different parts of the order although the entrees did arrive at the same time. Our server was obviously good at her job but was saddled with additional tasks beyond any reasonable expectation of being able to handle while still serving the customers. The overall potential of the menu does merit another visit.

This place has real Italians working behind the counter and they know what they're doing. The bathrooms and restaurant are clean. The service was friendly. Would I call it New York style ?...ehhhh...meh...probably not. I grew up in Central PA where all the pizza places were owned by NY/NJ transplants. The differences here are typical to what I've found in the South during my 37 years here. The dough doesn't quite have the gluten chew of NY pie and tends to be heavier. You don't get the airy bubbles on the crust end, etc The cheese is different as well and lacks the stretch of NY pie. The other differences are prep/convenience choices ...the Italian sausage here is ground and the onions and green peppers are diced. True NY pie uses sliced Italian sausage (looks just like the pepperoni) and jullienne cut veggies. These may seem like insignificant things but it matters. So...if you like the doughier Mellow Mushroom type pie this will satisfy you. If you're from the northeast and want something to make you feel like you're back home... then not so much. Get the single slice with pepperoni or just plain cheese if your want a foldable slice.

But I guess since there was 11 people in the party, that justifies the place to charge a 18% tip even though it isn't a "high end" place like it states when I looked up TN regulations for mandatory tipping. The young blonde waitress gave the worst service I have had in my life. We got there at 2pm, she came by and disappeared for about a half hour. I don't know if she was new, but she was not attentive, nothing about her service was good. If they didn't force the tip on us on our bill she probably wouldn't have received a tip at all. We had to ask for silverware and napkins more than once. We asked a guy who brought some of our food and he brought them out to us. I ordered bruschetta and the same exact pizza as the person next to me at the same exact time. I said no sauces on top when she asked if I wanted blue cheese or ranch. other person got her pizza 40 minutes after ordering. I got my pizza 30 minutes AFTER she got hers. What the hell, we both ordered the buffalo chicken pizza. Why the hell did mine take 1hour 10 minutes and hers took 40 minutes? That is beyond outrageous. The restaurant wasn't busy and pizzas take about 15 minutes. The bruschetta... terrible. Bruschetta is supposed to have garlic, olive oil, balsamic vinegar with tomatoes. The tomatoes weren't seasoned, no garlic or olive oil, very blah. I had to get up and find someone to ask them for them to get our checks and boxes because the waitress disappeared over 30 minutes ago and has yet to be back. She should be fired or properly trained. To be a good waitress you need to come back, check on the table, see if we needed anything, see how the meal was etc. We also had to ask for boxes 3 times.
