    I was impressed based off the current reviews of this places being horrible. The service was excellent and the sandwich came out just like it was intended to. The staff were friendly and they followed Covid CDC guidelines

    A classic that you can always rely on. Way better than the usual grab n go sandwich place. Except that every time I come in there's never someone at the counter to take my order. And don't bother to call ahead. They don't answer the phone.

    I normally love this chain but the Buda location needs new management, staff, (really both) or to be shut down altogether. I'm sad giving one star because I would give no stars at this point. The consistency is a long wait at the drive through ( where I can see the staff texting, joking around, and otherwise not paying enough attention to complete the tasks at hand), and food that is just embarrassing. Usually they get my order wrong (even something as simple as asking them to leave off the mustard from a deluxe original ) and/or it looks thrown together and inadequate..so.. I've learned to stay away and go the Sunset Valley store - which is great!-but today I just wanted to stay close to home and decided to give the Buda location a last chance: Today I ordered the spicy brisket flatbread and kale chicken salad "pick 2"... Photos show the teeny cold flatbread with toothpick-hard threads of "brisket" and black moldy kale in the salad..This has to be a health risk and I will not be going back. I hope the owners get wind of this review.

    Good is good, did drive thru. A single small sandwich is a little high I feel! Over $7, for a small original. It was good and fresh!

But this was a small issue and the wrap was satisfying. The husband got a sandwich and said it was good though the bread was cut a little unevenly. All in all I'd come back for the great service alone.

I do want to give the benefit of a doubt as I was part of a fairly large group meet up, so some of the delays in service and getting food was probably due to the large number of people for a very small kitchen. I also 100% have to blame the meet up organizers for not letting us know it was outdoors! The place is BYOB although they do have a selection of bottles nonalcoholic drinks. Even though it was outdoor seating at picnic tables, there was one girl taking orders, and another guy delivering food, we did have to wait a bit for our food, but the point of the meet up was chatting and socializing so it wasn't a huge deal. The food arrived hot and was pretty good. My main complaint is that the portion seemed a little small for the price point, I got the Tom Kha soup and $13 for a pint of soup and a scoop of rice seemed high. The flavor of the broth was good but there were definitely more onions than chicken! That being said I liked that the spice level didn't seem to be lowered- I got a 3/5 and it definitely made my nose run a bit XD All in all I think to really get an accurate read I'd have to try again under more normal circumstances.

Overview: Louie's BBQ is a small trailer operation tucked into a strip of shops in Buda, just south of Austin, where pitmaster Luis Vasquez has finally found the audience that eluded him in the city. The setup fits the small-town feel: a food truck that is a bit hidden, a casual lot, and a relaxed vibe that contrasts with the big-name Austin lines. Parking can be difficult. On my visit around 11:30, I had no trouble grabbing a spot in front of nearby shops, but you can see how it could get tight as the day goes on. There was just one person working during my visit, but the operation still felt efficient; my food was ready in about ten minutes. Food: The brisket was the best item on the tray. The slices were nicely moist with a good hit of beefiness, a noticeable but not overbearing smoke, and solid seasoning. The pork ribs leaned sweet, with a glaze that pushes in that direction without going candy-like. They were tender and well-cooked, easy to bite through. The sausage was also good: moist and seasoned well. Taken together, the meat lineup is consistent and enjoyable, but not destination-level. The sides show more personality. The pimento-style mac and cheese is very rich and extremely creamy, with a sweetness up front and a small kick underneath. The sauce is so thick that a single serving is plenty. The coleslaw hits a nice middle ground: creamy dressing, good crunch, and enough freshness to cut through the heavier bites. The tres leches corn is the most adventurous item I tried, a sweet creamed corn with cinnamon notes that leans dessert-ish. I am not convinced the concept fully clicks, but it is not bad, just more of a curiosity than a must-order. Dessert comes in the form of a banana-forward banana pudding with soft Nilla wafers. It delivers exactly what you expect and nothing more, which matches the theme of the meal: good, but not quite exceptional. On value, Louie's is top tier. With brisket at $34/lb, ribs at $22/lb, and sausage at $5-$6/link, it is well under many of the better-known spots in the greater Austin area, especially when you factor in that you are not paying with an hour in line. Portions are fair, and given the quality, it feels like an easy place to over-order without blowing up your budget. Final Thoughts: Louie's BBQ is not trying to be the next Franklin or a Texas Monthly pilgrimage stop, and that actually works in its favor. What you get is steady, well-executed barbecue, some fun, sweeter-leaning sides, and a bill that does not sting.     I had one of the worst customer service experiences I've ever had at this location…read more My sub was served with a completely broken top roll that was falling apart before I even touched it (see photo). Instead of asking for a new sandwich, I simply went back to the counter and asked if I could have another piece of bread so I could fix it myself. The employee refused. Her exact explanation was that she "only had 4 more rolls." She would not remake the sandwich, would not replace the bread, and would not even let me PAY for an extra piece of bread. When I showed her the sandwich and asked how I was supposed to eat it, she sarcastically told me to "put the bread back on the sub and eat it." The most unbelievable part was the refund. After refusing to replace a piece of bread or remake a clearly defective sandwich, I was offered a refund. When I went to the register, I was refunded exactly $1.00 on a $36.00 order and handed a receipt showing the refund amount. At that point it felt less like customer service and more like I was being mocked. The issue wasn't the damaged bread. Mistakes happen. The issue was the complete refusal to fix a very obvious problem, the dismissive attitude, the sarcastic response, and then the insulting $1 refund afterward. I've always thought Firehouse Subs was known for good customer service, but this experience was the exact opposite. Management should review how customer concerns are being handled at this location because this was unacceptable.
