Tried this for the first time last night. Shared blackened shrimp tacos and a side of sweet plantains. All was very good! Tacos were served on blue corn soft taco rounds. The jalapeño cream gave it a nice little kick. Shrimp was cooked perfectly, Plantains were delish. Sautéed so they had a little sweet catnelization on the edges. Will definitely go back to try some of the other interesting things in the menu. read more

This place is excellent! The food was fantastic and the owner was so lovely. favorite dishes: -ceviche mixto -sweet plantains -pork belly bao buns -fried flounder -spicy tuna crispy rice All really really yummy. We had two kids with us who are pretty picky, but the fried flounder was well-received. If I went again I might make other arrangements for the kids, but that's on my kids, not the restaurant. Stopped into this new spot located in Belmar and absolutely loved it. The food was delicious!! Ordered a seaweed salad, tuna chevice, shrimp tostados, and fish tacos. AMAZING food! This place has some of the best ceviche, jalea, fried rice etc I've ever had, even better than some fancier sit-down ceviche places. The stuffed mussels are a must-order. The purple corn drink was delicious. That said, I think this place is way more suited to take out--there were several orders while we were there, as it took awhile to get the food to-order. The interior is very funky, but not so comfy for sitting down at an extended meal in metal chairs. But the food is what counts, and for that I highly recommend it for pickup orders. read more

Stopped into this place for a bite when we saw the menu outside. Had 10/10 pork buns and blackened shrimp tacos. The customer service was so wonderful she informed us the bao buns will take a little while and gave us this delicious desert because we waited (we didn't even wait that long in my opinion) highly recommend . read more

Stopped at Santo Ceviche on our way home from Sandy Hook. We called in our order and by the time we got there, it was ready to be picked up. It seems like a semi-permanent food truck spot with some nice outdoor tables with umbrellas. We decided to go all out and get a bunch of things, but made the dumb mistake of not trying at least one ceviche. Fish tacos were really good and extremely filling. The ceviche tostadas were good, very tiny little shrimps, but really messy to eat - they were probably my least favorite. But the ABSOLUTE BEST was the tuna tartare sandwich. Holy hell, it was so good. Fresh tuna with some Asian-style flavors wedged between two crispy green plantains... whoever invented this is a genius. It honestly didn't look very appealing when we opened the container, but this is why we don't judge based on appearances. Will definitely be back for some fresh ceviche after the beach! read more

We were looking for a new spot to try in highlands on a beach trip because we come down the shore a lot. So glad we stumbled upon this food truck. The fish tacos had great flavor with delicious sauces (just the right amount of spice). The empanadas and tres leche cake were also really good. We are always happy to discover new fresh seafood in the area. This ceviche is light and flavorful. An uncommon flavor profile for these parts of jersey. However the service was quite slow...45 minute wait for an order of fish tacos and a bowl of ceviche when there was only one party ahead of us (although they may have been filling pick up orders). Just tried this wonderful restaurant! Food is fresh, and absolutely delicious. My husband tried the Santo Ceviche which was loaded with seafood. I had the grilled shrimp and it was also delicious. This is one of the new additions to the Highlands restaurant scene. Santa Ceviche is a permanent food truck parked in a pebble lot on Bay Avenue in Highlands. The food is incredible. I have gone twice in the last week. The ceviche (raw fish with a citrus juice based sauce) is the best I have had in the Jersey Shore area. It definitely beats Cubacan in Asbury. Their fish is sourced locally and fresh from the Lusty Lobster. Their artviche is served over rice and has sweet corn and yellow plantains. The rice is flavorful and has a nice sauce. The seafood mix was a great selection of different flavors. The catch of the day was mahi-mahi one day and flounder the next. I also tried the Columbian hotdog which many people would probably like. It was a hotdog with pineapple sauce, bacon, and potato chips. Next time I will definitely stick to the fish, but the taste of the hotdog was great, just a bit heavy for me. The hotdog was good, but the fish is truly excellent. The ambiance is outdoor, the pebble lot the truck is located in has tables and umbrellas. It is nice and quiet. I enjoyed eating there both times I have gone, but you can also get takeout. read more

Honestly I was expecting something pretty good knowing hpw tasteful ceviche is but the proportions were so small what is there to enjoy, not to mention they cut there shrimp in half to give u an illusion of getting more shrimp..unreal. Also where is the flavor. The saving grace is there tacos, pricey but very delicious.
