I really appreciate how kind they were and once we were seated, our server was attentive, making sure our drinks were always filled and that we were enjoying our meal. Ambiance 5/5: stunning environment. I highly recommend you take a peek and look at the bar because it's a bunch of little pennies and it is the coolest sight to see (I believe I heard them call it the penny bar too). I really enjoy that you could see into the kitchen while the chefs worked and how fluid they all seemed to be in their craft. Food 3/5: I was really disappointed by the food. I ordered the roasted lamb as a big fan of lamb and it was overcooked and very salty. Also, the mint gelée coupled with the root beer glacé de viande was overwhelmingly sweet. The dish was lacking a balance of acid and spice. My fiancé ordered the tater tot hot dish and I am thankful that he ordered that because we ended up sharing that the rest of the meal. Even he could not eat the Lamb and he is must less picky about flavor profiles. The hotdish was a cheesy parmesan dream with sweet corn, peas, mushrooms and I liked the textural mixture of pork and veal. Overall, I'm not sure if I would come back for a meal here. I have seen that their pizzas are really popular because they are woodfired and I wish we would've checked that first, but I wanted a cozy elevated dinner and I'm still really bummed that we did not get that.

It happened to be a very busy weekend, and the Informalist was one of the few places that did not have a long line to get seated. Got in right away and seated for some brunch. The restaurant is spacious and well designed. It's a bit upscale, but perfectly capable of making people feel relaxed and welcome. We got greeted right away by the server and settled in with menus and waters. Our order wasn't complicated: some of the Custard Battered French Toast, a short stack of pancakes, and two eggs. I also ordered a London Fog Tea Latte (a little lavender, a little vanilla, and extra foam). It didn't take long for the food to come, but the London Fog took a while longer. The French Toast was amazingly good, and the pancakes and eggs were also very good. I was half done with my meal by the time my London Fog arrived, and the server was very apologetic (saying that the coffee shop was very busy). I might have been satisfied with that, but the London Fog was just okay. While there was some extra foam, the drink itself was flat, as if they just heated up the milk and mixed it with the tea. (They need to do a better job with polishing the steamed milk so that it creates a creamy texture, especially if they ar charging $8) Overall, a good experience, and a few tweaks would have made it excellent. Would stop again if I was in the mood for the French Toast.

For food, we split the charcuterie board which was filled with grapes, almonds, two types of cheese, crackers and salami. We also split the pizza and were happy that we could pick our own toppings for each side. One pizza was the perfect size for two! There was one canned beer and a sangria ordered as well. While truly a 5 star experience, I did think it was odd that the plates and water cups were paper as everything else was elegant and upscale. This observation is not enough to damage any lower score, yet I am still calling it out so others are aware / genuinely curious on why this would be ? In the main dining area, there is a stage for bands. We walked up to the bar which was full but found a spot to squeeze in. The wine tasting area had several wine servers behind the bar. We waited for quite some time before a wine server greeted us and asked us what we were interested in tasting. We asked what was offered as far as wine tastings as it appeared there were a couple of different wine tasting events taking place. She looked at us with confusion and asked what we were interested in tasting. We read about the cheese and wine pairing so we said we would do that. We asked about each of the wines and she put the wine & cheese sign with descriptions in front of us and asked what we wanted to do. She couldn't really explain the wine herself. Again, confused why she is asking that since it's 5 wines with a 5 cheese pairing, We said we will just go down the list. She brought us complimentary wine glasses and poured the first wine. She also handed us cheese on toothpicks we all had to figure out how to grab from her fingers. Perhaps a plate or napkin? We waited for about 15 minutes before she came back and she looked at us and said no one is helping you? We thought she would but I guess not. We proceeded down the list, jumbling the cheese on toothpicks, and waited for the next tasting but we were forgotten once again. It took a while but we made it through the tasting. I'm a red wine person but the red wines were sour in my opinion. I realize this is WI and not CA or France so obviously the wine is different. We did buy a couple of bottles of their Pony which is a Rose as well as the ale Crescent. We wanted to purchase a couple of the different cheese that we tasted but they didn't have any to purchase. The venue is beautiful and a great place for events. The wine servers definitely need training in how to service guests and learn about the wine. Also, no one wants to eat out of someone's hands. At least provide napkins they can hand the food to the wine taster with a napkin. .

There's really no redeeming value to be associated with this place other than it being a cool place to have a beer during the hot summer months. And downright freezing during the winter! Me finding myself tethered to John (a local gadabout) who drags me to a seemingly endless line of beverage intakes of an alcohol nature, and I not being use to the effects of cold and ice. The ice in the parking lot can be treacherous, and the inside is like aging beef in cold storage! Ahhh but that only adds to its charm. Tie that in with the warm hearts sharing the bar and it makes for a memorable experience. But not one that I would frequent on a daily basis. I heard stories about there being caves associated with Nova. Who knows, maybe someday John will get me an invite to explore and I'll come across Injun' Joe just like Tom Sawyer. My luck though it'll be a rabid bat I find. A memory ever associated with the bowels of the dive which is Nova. Honestly speaking, I had fun at Nova, cold and all. We would have stayed longer but alas, a dinner engagement loomed which would provide us the opportunity to indulge once more, and more importantly, thaw out! Quick Tip: After you've had your fill at Nova you can walk down to the corner for ice cream at the Dairy Queen. You'll find that novelty warmer than what you had to endure at Hudsons finest dive.
