We came in for breakfast/brunch on a Sunday, however when we arrived at 9:39 they were only serving continental breakfast from their buffet bar, which was a bummer for the price. Service was great! I really cannot complain on that front. The seafood was not good. The scallops had sand and the cheeks on the scallops which are tough had not been removed. The flat bread is amazing and so were the lamb lollipops. The salad was also good. It's definitely quiet and a nice place fore a date night, but I'd stick to appetizers for sure. None of the entrees really did it for me. Not sure if I'd come back but the lamb was something I still think about! read more

Went for Christmas dinner and the pictures and details are not accurate . When my family and I walked in SALT its like an open bar/restaurant. We had two adults and three kids . $65 per adult, $20 for my 5 year old and my three year old was free. We were immediately sat and I was confused where this amazing buffet was . Like I had to look around to where the food was . I immediately saw the carving station which had prime rib, turkey , snapper, and ham but was looking for a cold bar which there wasn't . The side bar had two bowls of salad, different greens iceburg vs darker greens and add ons such as croutons , tomato's, cucumbers, cheese, Peel your own shrimp that were lukewarm since they had no ice to sit on. The shrimp was warm and tough to eat. Not the peeling but the texture of the shrimp was hard and chewy. Then they had four hot pans which had the oddest Mac and cheese I've seen it was a solid brick when I cut into it , hard Brussels , there was stuffing , potatoes that also were very thick and weren't smooth and green bean casserole Charcuterie station .... side shelf . With a wood board on it was cubed cheese that were just sitting out no rotation . Meat that was in the shape of roses but when you put that food in the main walk way it heats up so the meat is just sweating and shiny. Just like the butter was in balls but it was getting warm . There was a heating lamp on the very small rolls and cut up pieces of Italian bread ? But that was it . Carving station : I had the prime rib which they gave me the smallest thinnest sliver ever so I asked for two since I didn't get any other proteins that prime rib was pretty good . The snapper was very dry my son loves fish and my husband and I were surprised at how chewy and dry it was. . Ham: my daughter loved the ham and it did look pretty good. Turkey : we didn't try it Desserts : Just go to the coffee shop / bakery in the lobby . They HAD WAY MORE desserts than this buffet did. The desserts that they had of course a lovely empty plate that I'm guessing was maybe cheese cake bites ? Of course remained empty just sitting on the desserts table as I watched bartenders and servers walk by . Gf chocolate cake , bread pudding that was dried in there since the heater was obviously too hot or didn't have anymore water in it so it's just burning up the already cooked food . Apple cobbler which tasted like it was from sysyco itself . Just tasted like a pie that was bought from a store . Peanut butter cookies that were massive but had no flavor , chocolate chip raisin , chocolate chip cookie and mini sweating pieces of mini chocolate cake that my three year old wouldn't even finish . It just tasted all like I picked it up from Walmart and put it on a plate . For the money we paid this expensive experience was just not worth it . We are Hilton rewards members have been for years since we travel often and I read many reviews about the food and brunches being amazing . This was not it especially when they charge 20% for the service charge . I'm confused for what ? Food was burning in the heaters, food is left out and warming such as cheeses, dressings, shrimp, and supposed to be cold meats ... Also there was no seasonal drinks offered to us nor any discounted wines since per the menu you had to buy a full bottle of white and not have a glass . read more

We ate here twice during our stay, and greatly enjoyed each of our meals!! The kids selection were good quality, and they thoroughly enjoyed their meals. The wait staff is the best in the business, friendly courteous, and go above and beyond to ensure you are absolutely thrilled with your meal. I only took a picture of the Salt Salad, and it was sensational! The freshness of the veg, the tanginess of the dressing, and a good portion size. The only downside was it wasn't even bigger, and believe me it was plenty big!! It's built into the Hilton hotel, so yes, it's expensive, but they do provide a daily discount, which isn't enough for a family of four, but... I was recently a guest at the Hilton Pensacola Beach. I have left a separate review regarding my stay. This review focuses on the restaurant. I am an early riser. After a nice walk down the beach, I stopped in for breakfast. Salt has a relaxing minimalist look. The tables are spaced so I didn't feel like I was dining with the tables around me. They offer a full ala carte menu and a generous breakfast buffet. The cold bar offers lox and cream cheese, and smoked salmon along with fresh fruit and yogurt. There is a made to order omelettes with a variety of options. The pastry bar also offers plenty of bread, bagels, and pastries. A second morning, I ordered from the menu. A beautiful bowl of oatmeal with berries and brown sugar. The servers both morning were professional with just the right amount of checking in to make sure I was comfortable. We did spend one evening at the bar. I recommend getting a seat early, seats fill up fast. There is a generous selection of wine, beer, and cocktails. The bartenders made delicious cocktails and worked quickly taking care of guests. read more

Very convenient having such a great restaurant in the hotel we are staying in! I had the crab cake entree with the mashed potatoes and wild mushrooms, and my wife had the filet mignon with mashed potatoes and the side salad too! We both enjoyed our meals very much! 1st time at Salt for the Mothers Day Brunch Buffet offering a great selection of foods and desserts for $75 per person. The complimentary Flower and Mimosa for the Moms did not happen. My only issue was the desserts (Chocolate Cake and Key Lime cheesecake) were excessively sweet, making it impossible to enjoy. Our server was very attractive and kept our 2 top table clean and fresh. We will have to come back for dinner in the Salt Restaurant sometime in the future. read more

I booked an anniversary reservation on OT, and despite its current Yelp rating, we actually loved our experience here! It's an upscale "Mediterranean inspired" coastal dining inside the spotless Hilton on Pcola beach. Comfortable seating, Kids menu, areas for larger groups with vegetarian dishes. I had to move our reservation back 30 minutes, and when I called I talked to the nicest hostess on the other end; it was like talking to a friend. Entranced by above average service and a beautiful atmosphere we ordered a bottle of champagne and tried the Mediterranean sampler and the Seasonal Charcuterie- both were admirable and the speed of service was fantastic. As it got darker the lighting really made it a romantic atmosphere- but you could also turn to the bar and watch a game on the TVs above. Another highlight was the Piri Piri frango, definitely made in house. Topped it off with a complimentary dessert for our celebration. Wonderful restaurant if you're staying on the beach and want something that feels fancier but not too overpriced. read more

Some goods, some not-so-goods, but the potential is there. Salt is still a fledgling restaurant at the beach having only been open for eight months at the time of this review. Located just off the main lobby inside the Hilton Hotel, the restaurant and adjoining bar are visually appealing and very spacious. We arrived for our 6 pm reservations and the restaurant was nearly empty. The first thing we all noticed was the very small print on the menus. We all got a kick out of trying to hold the menu far enough away so we could read it. The food was just ok. I ordered the Mediterranean sampler with humus to start. The pita bread was ok and the humus could've used some lemon. My main course was the burger which was cooked properly, but lacked any real memorable attributes. The French fries were the best part. I loved those fries. My wife ordered the crab cake and was pleased with her choice. Be careful if you order the sautéed mushrooms. They were covered in black pepper. The rest of the party seemed relatively pleased with their choices. That said, once we left there was no further discussion of the food. It's a great venue and the bar serves up plenty of libations. Our party of seven had fun and talked and laughed, but the food was overpriced and underwhelming. The server said there was a military discount, but when the checks came, it wasn't applied. Let's hope the food quality will improve over time if this restaurant survives. read more

Let me start by saying, I cannot find enough words or compliments for the Chef Johnny and our server Bailey. We check in on Sat and had lunch at Crabs next door, but when we had dinner that night, it was all over for the rest of the restaurants on the beach, because we were soooooo happy with everything on the menu and wanted to try it all that we spent the rest of the wknd eating at Salt for breakfast and dinner. Sat Night: I had the seasonal salad and it was delicious. My husband has the Seafood Linguini and I couldn't stop eating off of his plate. Definitely recommend! Not sure why this saffron rice concoction is not called Piella, cause that's what it is. It was fine. Again, slightly over salted. Prior to even going, we were told there was no reservations for a table for 2 at FOUR THIRTY. This prompted me to believe they were slammed SINCE it was New Year's Eve. When we checked into the hotel (which was amazing and the staff is WONDERFUL) , we got ready and just went down to the restaurant to just scope it out to see if we could even snag a seat at the bar. The restaurant was empty. EMPTY. We saw a few of our friends eating there and sat with them. Interesting how we were told the night before that they had NO room for 2. - when I say the restaurant was empty- it was empty. We ordered appetizers and our meals. Out of the 6 of us, no one had quality food. My bisque looked like garbage water and tasted like old bay and hot water. There was hardly any crab, the tiny string like strands were very few. The steak was chewy like it had been frozen and almost recooked. Everyone's food had a huge taste of previously frozen. We are all a very easy to please group- but the food there was just really awful quality for the high prices. I wouldn't spend money to eat there ever again- the manager had to have known, and he didn't seem to care at all. Don't waste your money. There are PLENTY of other places in Pensacola that are worth that price. Side note- for not being able to "fit us in" the restaurant stayed empty the entire night. Our new favorite local spot! We came in on a Saturday and sat at the bar to watch some football and have some drinks & apps. Brian was our bartender and made some tasty and Instagram worthy cocktails while we enjoyed the game. We ordered multiple apps and the chef came out and spoke to us about our selections. One of the guest who is always hesitant about trying new foods went back for seconds. With 6 in our party as mentioned before, we were able to really explore the menu. Each entree was, " You gotta taste this" delicious! Chef Johnny came to our table to make sure everything was to our liking. Our waitress Avery was very attentive and prompt with any request we had. Because the portions were so ample, there was no room for dessert. We will definitely be back!
