BEYOND AMAZING. In a city where I'm frequently let down by food, Safta did not disappoint! Easily one of my top 3 restaurants, if not the top, in Denver. Service could have been better... but I was too happy with the food to complain. LAMB RAGU HUMMUS: I wish they had hummus sampler platters so I could try the others, but I'm glad I got this one. The lamb was amazing and so tasty. The crispy chickpeas was a good texture to the hummus. I've never had crispy chickpeas so it was mind blowing. Hummus was full of flavor. Pita bread was fantastic and made fresh! Don't worry about eating through the pita too fast because they will bring out more. HALLOUMI CHEESE: If you've never had this before do yourself a favor and try. The fry the cheese and put it on apple butter. So delicious. You don't need more than 1 serving, but you'll be glad you got it. DUCK MATZO BALL SOUP: So perfect, especially if it's cold outside. Matzo ball was the perfect consistency. Soup was flavorful. Duck was juicy. They even split the soup in 2 for us, and it was 2 large portions! SHAKSHOUKA: honestly we were so full from the first 3 that we didn't get to enjoy this one much. FINALLY! The bf and I FINALLY made our way over into Safta to celebrate a new gig. And let me tell you - this was the perfect celebratory meal. Believe every single word of the hype. Inside the second (newer) building of The Source, Safta is a fairly large space with some outdoor seating and a ton of natural light pouring in. Safta means Grandmother in Hebrew and Grandma's portrait on the wall at the bar is not the only indication of this. The delicate, flowered plates and vintage glasses completely takes you back to your adorable Granny's dining table where you KNOW every thing she's about to feed you will be amazing. And at Safta, it definitely was. Food is served family style exactly like your Grams would. All of the hummus options sounded amazing, but we went with the Lamb Ragu Hummus with crispy chickpeas and scallions which was phenomenal. Their hummus was velvety smooth and creamy and YOU GUYS their pita. The thickest, softest, chewiest pita bread I have ever had. Wood fired right in their kitchen, we 100% asked for seconds...and then thirds to take home. We also got 3 of their cold salad type dishes (Salatim) to pair with the pita: Brussels Sprouts (amazing flavor with caraway, tahini, red onion), Baba Ganoush (delicious little mashed eggplant with charred scallions), and Tabouleh (with toasted almond and preserved lemon, this was pretty good sprinkled on top of the other spreads). For our appetizer, we ordered the Charred Cabbage and Halloumi Cheese. The cabbage almost didn't make it to the table because, ya know, cabbage.... but so glad we took our fabulous server's recommendation because this was unlike any I had ever tasted. Charred on the outside, but completely melt in your mouth on the inside and served with a big ol' blob of mahummara and a nice, light arugula salad, this was just so good. The Halloumi Cheese was pretty good too - though not a must in my book. Big chunks of fried cheese served with apple butter and fennel. A slightly sweet surprise after the oh so savory tastes we had devoured. For the main dish, we went with the Pomegranate Braised Lamb Shank. A huge leg of lamb so tender and juicy and so dang flavorful. I never would have thought lamb and pomegranate would go so well together, but it turns out, they do. A nice dollop of labneh, some citrus slices, and pomegranate seeds decorating the shank, this plate looked like Christmas in April. If we didn't have plans for dessert afterwards, I would have definitely gotten in on the Chocolate and Hazelnut Babka which is rich and delicious. Pro tip: you can actually purchase a whole loaf at their front bakery to eat in its entirety at home on your couch if you so wish. Such a delightful experience at Safta. I ordered takeout so cannot comment on the ambiance or service but the food was somewhat disappointing. I guess if you eat in there is free pita. I had to pay for an extra piece. It was good, maybe better when it comes out fresh at the restaurant. What was disappointing was the lamb kebab. I was expecting actual pieces of lamb instead it was ground lamb. It had some good flavor but they should call it a kofta kebab so at least you know what you are getting. It was 3 pieces and although generous and filling it was pretty pricey for ground meat. read more

One of the best Mediterranean meals I've ever had!! We stopped in on a Thursday night and sat outside on the deck area, which was lovely. We ordered the muhammara dip, the cauliflower hummus, the falafel, crispy eggplant, and lamb kebabs for mains. Portion sizes were small but 4-5 dishes was more than enough for 2 people. The muhammara dip was incredible. Such a unique combination of flavors and we could definitely taste the hazelnuts. This dish definitely had a bit of a kick to it. The cauliflower hummus was also amazing - the base was super creamy, and the pickled onions and cauliflower really added a different dimension that I'm not used to tasting with hummus. The best part of both of these dishes was the pita bread that comes with them - it was the thickest and softest pita bread I've ever had. We asked our waitress about it and the flour is shipped in from Turkey and then the pita is wood-fired in their ovens. Absolute must have! As far as the other dishes go, the lamb kebabs were amazing, but mainly because of the sauce in the dish, not necessarily because of anything special with the lamb itself. The crispy eggplant was solid as well, crispy on the outside and a tasty pureed eggplant filling on the inside. The eggplant flavor was very subtle, which I appreciated as I'm not the biggest fan of eggplant in general. The falafel was probably the only component of our meal that felt somewhat standard. It was definitely well made, but the flavor was somewhat bland and it didn't come with enough sauce to compensate. For dessert, we ordered the chocolate hazelnut babka, which was essentially ice cream with a nutella filled baked pastry. Absolutely delicious and a great way to end our meal! The service was incredible throughout - our waitress was very attentive and helpful with the menu items. She described each dish in great detail and was very knowledgeable about the ingredients and flavor profile for each. I was hesitant to try an Israeli restaurant since the menu seemed intimidating, and I wasn't sure I would actually like any of the food. We came here with a group of 6 people, and we did family style. We ordered the lamb ragu hummus, baba ganoush, muhammara, cheese borekas, duck matzo ball soup, lamb kabobs, and half harissa chicken, and that was quite filling for all of us. It was great that our waitress explained the menu and provided some recommendations, so that was helpful! My favorite items were the baba ganoush, lamb ragu hummus, and the cheese borekas, but everything else was also pretty solid! The star of the show was definitely the pita bread! It was so hot, fresh, and perfectly fluffy! Everyone in our party loved the bread. I was happy that I actually enjoyed the food here, and it's fun to try new things! It's been awhile since we've gone out out for a fine dining experience and SAFTA never ever disappoints. We got a rezy and they were running a bit late. I love their hummus it's definitely one of my favorites. We got the one with soft boiled egg. TBH I could go with any of them and the classic is the bee knees! I love Mediterranean food. When I googled a place to eat in Denver, Safta's came up. The location is hidden; it's inside of a hotel. I had no idea how to get there and asked the front desk, but it was pretty easy to take the stairs, and it would be on the left side. The restaurant was packed. We couldn't get a table, but the bar was excellent. The Bartender took a long time to come up and take our orders. I had already picked my cocktail, starter, and entree by this time. I ordered SazArak for cocktail and Wood Roasted Mushroom (favorite), Tershi(ok), and Lutenitsa(Good) for starters. For the entree, I ordered Kota Bi Tahini. It was salty, like the chef wanted me to have a lot of sodium on my diet. I did complain, but Bartender just noted nothing else. By far one of the best places I've eaten in Denver. The hummus is unbelievably amazing. If only they had a place like this in DC- I would frequent this place constantly. They give you an endless amount of pita and it comes out fresh and hot. This was my first time here and the server was extremely nice. She patiently explained the menu and really attentive. Our water glass never went past half full! My bf and I sat close to the kitchen/cooking area and really enjoyed seeing all the chefs cook and plate the dishes. Go here with a group, because there is a lot on the menu and you will want to try everything. I did not follow the above advice and came here for a birthday date night with my husband. In an effort not to completely stuff ourselves, we only ordered a couple of things: a hummus, three plates, and dessert. We ordered the famed lamb ragu hummus and it was everything I wanted it to be. Great flavor profile and mix of textures with the crunchy chickpeas. This could be a meal in itself, it's good and filling with the pita. We also ordered the cheese borekas because I am a huge fan of borekas and have not seen them in Denver often. So good, but probably not a must-have for most people. Next up, persian rice and the kofta bi tahini. I don't even know what to say except that everything was so good! Lots of contrasting flavors and textures, but in the best way. Loved the cherries in the rice. We finished it off with baklava, which was pretty good. My only regret is not having a bigger stomach to try more things on the menu. While we enjoyed this meal, we definitely enjoyed the one we had at Shaya in New Orleans much more when it was still owned by Alon Shaya a couple of years back. We ordered the wood roasted mushroom hummus, muhammara, labneh, babaganoush, falafel, cheese borekas, manti, and bestil. While everything was good, we do remember some of the basics like the hummus, labneh, muhammara, and babaganoush having a deeper more developed flavor at Shaya. The falafel was good, but I can make better falafel at home and I know Alon Shaya can cook circles around me so I was expecting better. The muhammara was also good, but again, mine is very similar with the exception of not using hazelnuts. The babaganoush and labneh were standard. The cheese borekas had a creative everything duqqa seasoning on top and the honey went well with the cheese, but I was expecting more to the filling than just cheese. The manti was ok. I'm not the biggest fan of traditional Turkish manti, but love refined manti like the ones at Yeni Lokanta in Instanbul, so I guess I should've expected to not be a big fan of these, but again, it's Alon Shaya! I know he makes amazing food so I was expecting to love them. I would've never guessed that the filling was wagyu because it was a little tough, which was not aided by the tough and thick dough. They did taste traditional though. The bestil was the BEST part of our meal. It is such an interesting dumpling. The fry on it was light and airy and the mushroom and potato filling was absolutely delicious. This had the most developed flavor out of everything we tried. What would I get if I went back? The hummus because the mushrooms were very tasty, the muhammara because I did like the use of hazelnuts versus walnuts, and of course, the bestil. Easily one of the best places I have eaten at in Denver. Warm and inviting with a friendly atmosphere, Safta means grandmother in Hebrew. So, like at grandmas house - expect to be a little spoiled. You pick out a humus and three salatim: sauces and spreads for your pita and then a few main entrees. The waiters make excellent recommendations and make sure you have enough. Nothing like it in Denver~! Who knew there was such a thing as truly gourmet Israeli / Palestinian / Syrian / Middle Eastern food . . . (I know; probably everyone but me:). Went to Safta for the first time last night and was very surprised and impressed. If you just walk through the mini-mall 2nd floor of the Source Hotel you'll run into Safta's fast-casual snack-shop entryway where they sell coffee and pre-made stuff. If you look around to what you think is the sit-down part of the restaurant you'll see a narrow space with maybe 20-30 seats. So you know what happens when you make an assumption, right? Wrong. The place must seat 150 people easy. It snakes around the outside of the building making 2 full left hand turns and has glass walls made of garage doors throughout so in the warm weather the place will open up into something like an outside garden. Coooool!!! But more cool is the fact that (while it's expensive) I had some of the best of the following dishes that I've ever eaten: house-cured olives, mushroom hummus, baba ganoush, pita and the best by-the-glass choice of a central California pinot noir I've drank (I think called 3 Saints ($14/gl)). The 4 of us had 2 rounds of drinks, a hummus, 2 dip-like things ("salitim") a shared salad (they called a small plate) and each couple split a large plate (lamb shank for our friends; fish for us). The bill came to around $240 + $50 tip for about an all-in cost of $75 pp. The service was great and the food spectacular (with a couple of exceptions . . .). All the small plates rocked, but the salad was uninspired and the sea trout (?) we had was sitting in delicious tomato(?)-based spicy sauce that completely overwhelmed the poor little fishie. Aside from picking those nits, I'd recommend that everyone head over to Safta. It's a wonderful new addition to Denver and expands the city's range of really tasty, interesting, and exciting places to try new styles of cooking. I had the chance to finally visit Safta for my BF's birthday dinner. Making a reservation was a breeze and I am already a fan of The Source so I was excited to see how they had expanded. We were greeted by the host inside and taken to our table immediately. I'm normally not one to nitpick on furniture but I'm not o fan of how slippery the chairs were with the dress I was wearing. Note to self: wear textured clothing or you'll be slipping through dinner. But on to the good stuff. The food and drink! Our server took us for a ride since we asked her to choose our adventure for us. We both had a whiskey cocktail to start and shared a glass of wine with dinner. The sauces were delish and my BF really enjoyed the fish. I wasn't as much of a fan but only because i don't enjoy hot spice and the sauce was very spicy. That's the only complaint I would have about our server because that wasn't expressed. There are lots of things to try and the menu is a journey of foods that I have yet to explore. Holy Safta! This is the best meal I've had in Denver in quite a while. Everything is so fresh and the spin on Israeli food is incredible. The restaurant decor itself is simple, which allows the diner to focus on the people they're with and the food they're enjoying (I hope as much as I did!). The small plates are very fun to mix and match -- the hummus is out of this world!!! Sadly I couldn't try the homemade pita, but my friend said it was unearthly. As far as gluten free goes, the waiters are very knowledgeable and Safta is GF-friendly. The menu is seasonal but they said they're always educated. My waitress was very willing to helped and even marked up the menu for me. They do use same fryer for non-GF foods so that's good to be aware of. But I ate the falafel without any issues. read more

From the decor to the staff attire, it felt like a classy Swedish or Danish set-up with Mediterranean cuisine. We had the lamb hummus which was light, fluffy, and delicious. My four stars have nothing to do with the food or service, but with the loud and obnoxious table of "children" next to us. Entitled millennials, who think they are the only people in the room. HOWEVER!!! The food was everything I imagined it would be after watching Safta New Orleans on an episode of "Somebody Feed Phil." When Safta opened in Denver, I knew I had to go there. We ordered the wood mushroom hummus. You've never had real hummus until you taste Safta's. Pair it with their freshly made, warm pita and zatar, and you are on your way to heaven. My wife had the caviar on a potato latke (I don't like caviar, but the latke was amazing). For our small plate, which is dinner enough, she ordered the duck matzoh ball soup, and I had the charred cabbage. I never imagined that cabbage could be so yummy and so creamy! My mouth is watering just thinking about it. The atmosphere is different than I expected. Since "Safta" is Hebrew for "Grandmother" the tableware was a little grandmotherly. But I don't care...the food is all I'm there for. In hindsight, I should have asked to be moved to another table, because we rushed through our meal thanks to the loud, irritating neighbors. We passed on dessert, because they were starting to order tequila. Really?? I wish Safta would keep it classy by not offering those kinds of choices. I know. Old lady. After hearing so much about Safta, I decided to book a dinner reservation. Excited about this restaurant I studied the menu and arrived on time to find parking nearby. Parking was easy, we did a loop around the block and found a spot. The Hotel offers paid parking otherwise. We arrived 5 minutes early and checked in with the hostess. She told us they are running true to reservation timing, and to wait for 5 minutes. Sadly, it was more that they were running late, we saw a handful of reservations and 20 minutes later we sat down. Happy to say that was the only negative encounter we had with the service, everything after that (ordering, drinks, refills...) was on time and very prompt. We start with two cocktails, and sparkling water. I ordered the Pancho Calabaza drink with butternut squash, and thought it was delicious. Smokey, hints of butternut squash, and not too sweet. My partner chose the Prickly Pear and was not too fan of it, it was a little on the sweeter side but passable. For food they recommended 1 hummus, 2-3 dips/spreads, 3 small plates and 1 big protein. We accidently ordered one extra plate and the waitress told us it would be way too much food. Sometimes tapas/small plates types of places I am not sure how big the portions are. Hummus: We ordered the hummus with lamb ragu and crispy chickpeas. It was delicious, creamy and very flavorful. Their fresh fire oven pitas are so tender and perfect. For the dips we ordered the baba ganoush, and the whipped feta with figs. Both very good as well, no complaints and perfect portions. For our small plates we ordered: grilled cabbage with arugula salad, which was very good as well. The lamb kabobs, also a very good and great portion of meat, and lastly the macaroon carrots. The carrots had potential but failed for us, not a lot of flavor, mostly onions and sauce, and very bland. We did not even finish them. For our protein we decided to go for the harissa chicken. Super juicy, tender and so flavorful, it was also a fairly big portion. Next time we would probably do one less dish for sure. We started to hit a wall near the end. Somehow we still fit in some dessert, it was delicious and a small treat at a great price to finish off the meal. Wow!!! Amazing. I don't think there was one think on the menu I did not love. The bread was amazing fresh and warm. This is defiantly a place to share. Put it in the middle of the table and dice on in. We had the soft egg humus and it is a must. The short ribs were amazing tender and full of flavor. Lamb shank! WOW. Fell of the bone. "Lamb Ragu? That sounds chill." First of all, how dare I be so nonchalant about what is truly an amazing dish and divine establishment. I first ordered from Safta understanding they were really good about their "dips." I love a dip; I love some hummus. Throw some pita at me, I'll put it to work. Safta is something special, altogether - even when you order to-go as I did. My order included many things. The lamb ragu was a focal point of my visit. This hummus was so incredibly smooth, the cooked lamb was so savory and rich. And those full chickpeas...they had such a light and crispy texture that they unexpectedly took the spotlight of the dish. I feel like this will be a staple of every order I place with Safta from now on. I also ordered the baba ganoush. This is something I enjoy making myself, I'm always actively looking for, and honestly have some expectations about when ordering. Having ordered and tried this, I can say I am a very happy customer despite my high expectations. Not only do they nail a light and somewhat creamy eggplant flavor profile but it has rich onion notes and a very smokey profile that I wasn't expecting to shine through so much. So. Good. My only gripe about this dish is the size. I might have expected twice the amount than what we got. All the same, I'm still very happy with this purchase. And how could I talk about these dishes without addressing their pita? What I am assuming is house-made, their pita is surprisingly thick and fluffy without coming off as too "bread-y." This is something different and I think it makes these dishes more memorable. A surprising star of this meal were the Arayes. This is Wagyu beef wrapped in pita. And it might sound simple (because maybe it is), but this was the MVP of the meal. Thick, savory, and a great mouthfeel. Just writing about this entree has me considering my next visit. I have been following Alon on social for awhile now and was super excited to give this place a try. Everything we ordered was delicious. You could tell the chef and his staff were well-trained and on top of their game. The tahini hummus was just as good as if I was sitting in a hummusia is Israel. And that pita - so fresh and fluffy, right out of the oven. The falafel was also fresh and perfectly fried. And the shakshouka was so flavorful. Only areas of improvement would be to deliver the food to our table once chef was done with it - I think we stared at it for a good 5 min before it was served. And to keep the water coming more frequently. With such delicious, rich flavors, we ran out of water often. Great restaurant. The tall ceilings and open floor plan was refreshing. We loved the open kitchen concept and enjoyed watching the cooks create. Absolutely delicious food - true Israeli flavors. read more

This place has been on my radar since it opened mostly because of a friend in the Midwest who raves about this James Beard Award-winning chef, Alon Shaya. I haven't yet been to the Source Hotel but I liked the open concept, which extended into this space. I really liked how modern yet casual the setting felt. It's super bright and warm feeling and makes you feel really comfortable from the moment you sit down. We sat near the kitchen, which was another thing we loved. We religiously watch Top Chef so we loved listening and seeing how the kitchen functioned. It also gave us a sneak peek into what dishes looked good. How the menu is arranged is that they would like you to order everything at once and then the kitchen decides what comes out when. Being there for the first time, this was a little bit of a challenge being unsure how much we'd eat but I went a bit heavier figuring we could take it home. From the Salatim portion of the menu we went with Labneh and Muhammara and from the Hummus we opted for the Tahini. To begin, lebneh is absolutely one of my favorite dishes and this place took it to another level. We have never had it with the shallots and I wife just loved this combination. I've had a ton of hummus in my life but I'd go out on a limb to say this was the very best. The flavor, the texture, the seasoning - just so perfect that I don't think I can have hummus again unless it's from here! ;) Finally, the Muhammara - a bit nutty for my liking but completely different that anything I'd had before. We ended up taking this home and I will say the following day I really appreciated the complex flavors so perhaps I just wasn't in the mood while we were dining. Before I move on, let me comment on the pitas. The best pitas I've ever had and I say this with full confidence. We saw them popping out of the wood oven and being served all over the restaurant. We could not wait to get our hands on this and, once we did, well, it was only one. Albeit, hot, fresh, delicious, mind-blowing but one. I had a feeling they might bring another when we were done but my wife wanted me to ask for another when, right on cue, a server popped by and gave us another. And this process repeated for ever pita we finished another fresh one showed up! Seriously, it doesn't get better... except the oil that it came with. I'm not even a huge fan of oils but I probably could have had oil and pitas all night long! Onto the small plates... we had kale salad, lamb kebabs, and falafels. The kale salad was really good but make sure to mix it up so you grab some of the wasabi/horseradish. The falafels were different than ones I've had in a good way. They aren't usually my favorite but, for what they are, they were worth ordering. And the lamb kebabs... didn't I say before that everything was super and many dishes were either the best or among the best I've ever had? The lamb kebabs took the prize for the best dish of the night - it blew us away - perfectly cooked, excellent taste, the chimichurri and other seasonings made the absolute perfect pairing. I can't say enough! We didn't have any large plates although we noticed a lot of cauliflower making its way onto tables. For what we had, as I said earlier, was more than enough and that was partly because of our record setting pace of pita intake. My wife and I have a couple favorite restaurants in Denver. She knew nothing about this place and said she was blown away and that this was her new favorite. I have a hard time arguing. When each dish comes out and repeatedly blows your mind you know that you're at a special place and kudos to the chef and staff for living up to the hype. Do yourself a favor and come here on a special occasion. I bet you'll be back again and wonder why you didn't come here sooner. read more

We moved from New Orleans to Denver recently and I was beyond excited to learn that Alon was opening a restaurant here. I literally dream about the pita bread... oh yum! I ordered the same thing I ordered at Shaya (when Alon was a part of the restaurant), and Saba to see if it compared, and I certainly wasn't disappointed. I ordered the cauliflower hummus, the falafel sandwich.. and the $7 fries.. yes, they are worth $7. The food was presented different, but was just as tasty. I was only with one friend on the day I visited, but I highly recommend ordering several things and sharing, specifically from the Salatim. All right, so I highly recommend visiting Safta. Make a reservation, as it tends to fill up. Enjoy! read more

We love Safta! First off, we call my husbands grandmother Safta so the restaurant hits a soft spot. The pita is the winner of the menu- warm, soft, melt in your mouth right out of the oven... and with the hummus- delicious! Their cocktails are great too. We have enjoyed some of their salatim and mains too- the salmon was great and my husband enjoyed the chicken. Would 100% recommend for anyone visiting Denver or celebrating a special occasion. Let me start by saying, just go, don't read any reviews, it's that good, don't worry. go. now. like really, go.. So, while traveling to Denver, I knew this was the one place I had to try. I came on a Thursday evening and it did not disappoint. Walked right in and grabbed a seat at the bar. The two behind the bar were extremely nice, although one may have only had the skill of a white belt. I sit, take a gander over the menu, and ask what is good for one person (i'm a teacher and travel alone, it's wonderful), and am told 2-3 things on the left side of the menu, or 1 from each side will be the right amount. Decisions decisions... The Jew inside of me regrets not getting the Duck Matzo Ball Soup, but, i'm very happy with the Lamb Ragu hummus (incredibly balanced), and the lamb kebabs (two lamb dishes... i know..). The one thing is, if you advertise it as a kebab, why no skewer?.. I mean, it made it much easier to eat and not have to worry about taking it off the skewer, but 99.9% of the time i've ordered anything with the word "kebab", the skewer was there. The food was incredible, the bourbon cocktail I had was very good, everyone was attentive, and the ambiance was cool as well. I'd travel back to Denver just to eat here, possible in my top 10 places i've ever ate at. Delicious. read more
