My husband and I are recent homeowners in Aztec and really enjoyed our lunch at Rubia's. First off, as the hostess was preparing our table, she disinfected it with a single use wipe and then dried it with a clean paper towel so our menus would not stick to it. I appreciate this attention to detail. Complimentary hot chips and delicious salsa were provided. Drink service was fast, our waitress was personable, and the food was excellent. I ordered the Tampico and my husband ordered the Ixtapa. I'm celiac and had no reactions to my gluten free meal. I love that our tacos were served on half a corn taco shell to keep them free of the sauce from the other items on the plate. Nobody likes a soggy taco that falls apart, and Rubia's knows this, so they prevent it from happening. Something so small is so smart and made such a big difference. Their beer and cocktail menu was extensive. The biggest compliment I can give is that nearly every table was taken at 2:00 on a weekday, and still our food was awesome and the service was attentive. Rubia's is clean and well decorated, professionally staffed with terrific service, and it's a place where we generally stop when we're passing through Aztec. The food is - fine, but it isn't a representation of the cuisine that would draw us in if Rubia's were a restaurant near where we live. We were in town visiting the nearby Aztec Ruins National Monument and knew we needed to have some Mexican when in NM. Surprisingly there appeared to be few Mexican restaurants in town but we saw this one on Main Street had decent ratings. They had a pretty good crowd for the early bird lunch crowd. We got a high top table in the bar. The service was attentive, fast and friendly. They had complementary chips and salsa - the salsa had a good heat. I got the combo platter of two cheese enchiladas with a red sauce and a beef taco (no sides). It was very good. I also ate some of my wife's cheese enchiladas with green sauce since they were too spicy for her. I thought they were just right! She liked her black bean and corn fiesta sides. Amazing Mexican dinning. The food is so delicious. It dose get busy and can seem overwhelming but it's definitely worth it. I love the wine barrel tables by the bar that makes it seem like a cool spot to enjoy a beer and enjoy the company of your friends and family.I usually go for the chicken Chimichanga because it's so good. The food was good, always is, though the chips were stale as others have mentioned. What wasn't good was 1. The restroom was a mess, trash overflowing everwhere, and 2. When we arrived, we told our hostess how many of us there were. She vanished into the patio - mind you there was nobody sitting on the patio and the restaurant was barely 1/2 full. Next thing we know everyone who came in behind us was being seated inside! She finally returns and says follow me. We said we never asked to sit outside and she said we don't give you a choice. Well, we want inside. We got a huffy hostess who stomped to our table, left not enough menus for our party and stormed off. She seemed to be doing this a lot that day. Aztec has extremely limited dining options so Rubias is the best option for food that isn't fast/chain and with sit down service and real plates/flatware. We have had some good meals and also some really disappointing meals. The side salad has been consistently good. read more

Came in to eat after a long drive and before going to the room. For was "OK" BUT THE SERVICE I GOT WAS THE BEST IVE SEEN IN A MOM AND POP RESTAURANT. My waitress was amazing, beautiful long dark hair with a purple. Very tastefully done. Very freindly, and professional. She kept drinks full without having to ask, checking if everything was OK or if I needed anything and still helped the other staff when she could. I hope I get this right, I think her name is Lisa. Would highly recommend sitting in her section. The downside is the eating area is loud and echos. read more

I have been a cuatomer of Rubios since I moved here 2 years ago, I have always supported the resturant in many ways, this evening we went for dinner , we sat at bar, bartender was not in a great border rude. We ordered as i ate my enchilada a sharp object hit my tooth I pulled out, short ugly story the owner tokd me that did not come from his restaurant escalated me as if I was lying.. The ugliest ,worst business I have ever been in. I left using my words as owner did with his F...k you get out the F out of here....trust me this owner has a monopoly in Aztec he can treat people awful. My tooth is cracked and I did not stick a metal peice in my mouth.. I will report him to BB and to ant one that will listen shame on him. read more

The staff were very friendly and our waitress was terrific. I had a margarita and it was delicious. The chips were thin and crispy, just how we like them. The salsa was quite mild. Hubby ordered the chili relleno plate. And enjoyed them. I ordered a combo that was very good but could have had more green chili. My combo included a relleno, an enchilada and a taco. The rellenos were the more authentic, egg battered type and were very good. The enchilada was delicious but very small. The taco was a good taco, not too greasy as they sometimes are. All in all, we enjoyed our meal. The place does have a Mexico vibe and they have a courtyard that would be great in warmer weather. We would definitely go back. read more

Rubio's is a great gem in Aztec. We came in early September. It was cloudy and they have an outside patio with a nice fountain. The hostess and servers were really friendly and knowledgable about the food. Whether or not the chips were house-made is debatable (I didn't ask) but the salsa had a good kick. The previous reviewer said the service was slow. While that is accurate, good things take time. The food was excellent and worth the wait. I tend to measure all Mexican restaurants by their Chile Verde and it was amazing. I would suggest it. Rubuos is also a micro brew. I had the R's Amber which was very good but didn't have a chance to try the rest. We ordered two entries, a beer, and a pins colada and it came to less than $40. It was a great deal for the quality and quantity of food. I highly recommend Rubio's. read more

We ate here on a Friday night. We were in town to run the marathon in Farmington and decided to take a trip over to Aztec to explore the area. We are glad we did. I am quite surprised to see the amount of negative reviews on here. We had a very different experience than many of the Yelpers. We were greeted promptly by the Hostess and sat and greeted by our Waitress, Mariel. She was very friendly and efficient. The bottomless chips and salsa were awesome! Our appetizer was a cheese quesadilla which was really not all that good. Bland and dry, as if it was under a heat lamp for a while. Our chili rellenos entrees and cheese enchiladas were very good. I have lived in the Four Corners all of my life. Rubio's (now Rubia's) has been the go to place for good Mexican food. I'm sad to say that this place is now, not living up to that standard. In fact, not even close. As I don't live in the area anymore, I've looked forward coming back and eating here. Last night I ordered the Vera Cruz, (Enchiladas and tacos) with green chili sauce. What came out from the back was a couple of tacos and enchiladas with no sauce cooked on them. I was given a small bowl of what looked and tasted like canned green enchilada sauce. NO FLAVOR! Nice little Mexican food joint in the middle of tiny Aztec, NM. Service was a little slow, but the food was tasty. Four of us ate lunch and ordered enchiladas, crunchy tacos, and chili rellenos. No one was disappointed with their food. Chips were not house-made, but I've had worse. The salsa was not chunky, more a smooth sauce but it had a little kick to it. Don't let the pictures fool you this place is So disappointing, Rubia's lacks flavor in all ways, it's very bland. Rice and beans came separately, which is odd and of course if you smother anything in a big pile of cheese it seems to add flavor, well not here. This is not even a hint of good Mexican food, this is open the can, warming it up to a lukewarm status. I left feeling sick, wishing we had just read all the reviews. Service was okay. 3 star rating for the food & service. However, they recently wouldn't honor a Restaurant.com certificate. At first the server stated it was because they changed from Rubio's to Rubia's (LOL). So I asked to speak to the owner and he stated that Restaurant.com stopped paying them. My understanding is that the restaurants get paid when the certificates are purchased, which was months ago. Even though they serve Mexican, this smells fishy! The owner eventually agreed to validate the certificate for a future purchase, which still leaves me with two unusable certificates. read more

I am not completely sure what the issues were last night. We have been to this establishment many, many times. We had family in town and thought this was the perfect place to eat. Well, no. We waited for over an hour for our food and once it arrived it had obviously been sitting for a while. My medium-rare carne asada came to me well-done, which was returned immediately and I had no patience to order anything more. When your 13-year-old daughter notes her simple bean burritto has been sitting for a while then we obviously have a problem!!! It took more than 20 minutes to even be seen by a server to order drinks. I am so unhappy with our experience last night and the fact we spent over 88 dollars for a dinner that was so awful with family in town is greatly uspetting! read more

Very disappointed in Rubia's.... first the waitress kept telling me that the chicken fried steak was really chicken... had to get another employee there to clear that up. Then ordering was a mess. There was SO much breading on the chicken fried steak, it was like eating flour (the steak was pounded to about 1/4 inch and a 'slice' with the breading was like 3 inches wide). Came out without gravy on it. Then was told they ran out of cream gravy (they brought like 1/2 of a small saucer of the cream gravy). Asked for a little more gravy, what they brought me was lukewarm lumpy brown gravy. Imagine their surprise when I asked for a togo box because maybe my dog at home would eat it. There wasn't even butter on the toast. I know I won't be returning anytime soon. But hey, at least they didn't screw up my salad. read more
