I could tell they used quality ingredients and the subtleties of the spices came out in great ways. Also had the flan and really enjoyed it, so many places have horrible out of the box stuff. After about 5-10 minutes of waiting, I got up to check on our salsa request and I was told that they hadn't given us any because they didn't know if we wanted mild or spicy. I have gone to Rosa's a couple of times and probably would go more often with business associates from Denver but the music is too loud. The first time I went I met a business woman and we had to shout at each other. My second time I went I had people who were hearing impaired. I asked if we could have a quiet table and explained why. The food is the finest in taste and presentation. We have tasted a variety of the items on their menu. My wife and I agree that every entre we have tasted is superior. The service is great. Adriana, at the Thorton location, works extremely hard and always has a smile on her face. She allowed us to feel as though our patronage was appreciated. We felt very welcomed. I cannot stress how much we enjoyed feeling like being their customer was appreciated by the employees of Rosa's. The service in Longmont is great as well. We feel welcomed at both locations. The decor was reflective of what I have experienced when visiting Mexico. I do like that it allows me to remember my experiences in Mexico. The decor is light and happy. I was very impressed with the overall flavor of all the food everything was fresh well prepared and tasted fantastic. I do plan to go back, I had couple tacos the fresh guacamole and sampled the salsas. I guess the only thing is and it might just be I'm old fashioned but the portion size and the prices are crazy $5.00 for one taco. I thought Mexican food was suppose to be cheap? I'm torn between giving 3 or 4 stars. I've driven past several times so thought I would give it a try today. I honestly can't say anything bad about the place. It just isn't my kind of Mexican food. Their menu is a lot of wannabe Mexican dishes but they miss the mark by a mile with a few boring recreations of traditional favorites. But the service was friendly and the restaurant was clean. Love this place!! From the moment you walk in you feel like you are no longer in a strip mall but in a trendy little taco bar. The decor is super cute and cozy. We started with guacamole for the table and it was delicious and fresh and served with warm blue corn chips. The margaritas are a must! Tried cucumber & mango. Both were delicious & refreshing.
