This restaurant is pretty good. So let start with the not so great and end with the good stuff Not so great: there Mole is good, traditional made with chocolate. The issue is, is that mole should be slow cooked with the chicken for hours so the ingredients fuse. Here, they take the mole sauce and put it on top of the chicken like a bbq sauce The price. The prices are a pretty high. We have the mole, nachos and enchiladas. The bill came to $60 so with a tip you're looking at about $75. Good: The food overall is very good. The nacho chips are fresh and delicious. You could get the nachos and eat them as the meal. The enchiladas with chicken were very well made. It would have been awesome to have some re-fried beans but the beans were good and the way they make their rice...it was perfect. The corn tortillas and the enchiladas sauce were spot on. Would have like a tortilla with my mole though They also offer a pretty extensive bar and drinks. The environment is surprisingly authentic. They have done a great job with outside patio seating and the inside is decorated so you know you're in a Mexican restaurant The staff is really friendly but do tend to not check on your drinks as often as maybe they should but the service is overall very good If you get a chance, you should check this restaurant out. Really enjoyed the food here, I ordered the mole enchiladas and they were not to my taste but they grew on me. I could tell they used quality ingredients and the subtleties of the spices came out in great ways. Also had the flan and really enjoyed it, so many places have horrible out of the box stuff. The margs are a little on the pricey side, but I can tell they're trying to keep up with that price through high quality liquor and mixes. The food is the finest in taste and presentation. We have tasted a variety of the items on their menu. My wife and I agree that every entre we have tasted is superior. The service is great. Adriana, at the Thorton location, works extremely hard and always has a smile on her face. She allowed us to feel as though our patronage was appreciated. We felt very welcomed. I cannot stress how much we enjoyed feeling like being their customer was appreciated by the employees of Rosa's. The service in Longmont is great as well. We feel welcomed at both locations. The decor was reflective of what I have experienced when visiting Mexico. I do like that it allows me to remember my experiences in Mexico. The decor is light and happy. I stumbled upon this place while in the area and was craving fajitas (which were delish btw!). The table side guac was amazing and a decent portion. We also tried the tijuana, tromppo, and carnitas tacos- all super amazing and quickly gobbled up! Also there was live music which was a nice surprise. Will be returning! read more

Terrible experience, the grill steak was hard and chewy, not happy with the food presentation, I couldn't eat it all, the worst part seen one of the cooks blow his nose with his gloves on and them proceeding to cook on the line, I advised the waitress and acted like oh well, no discount was offed, never again. My wife and I ordered a fajita plate today to split between us. It was the "Two" meat entree. When they brought it to the table they only gave us one tortilla. Really, one tortilla? Even if I was eating it myself, I would need two tortillas to finish all of the ingredients. Then we asked for some salsa. After about 5-10 minutes of waiting, I got up to check on our salsa request and I was told that they hadn't given us any because they didn't know if we wanted mild or spicy. I'm torn between giving 3 or 4 stars. I've driven past several times so thought I would give it a try today. I honestly can't say anything bad about the place. It just isn't my kind of Mexican food. Their menu is a lot of wannabe Mexican dishes but they miss the mark by a mile with a few boring recreations of traditional favorites. But the service was friendly and the restaurant was clean. I was very impressed with the overall flavor of all the food everything was fresh well prepared and tasted fantastic. I do plan to go back, I had couple tacos the fresh guacamole and sampled the salsas. I guess the only thing is and it might just be I'm old fashioned but the portion size and the prices are crazy $5.00 for one taco. I thought Mexican food was suppose to be cheap? Enchiladas suiza- good overall, could use a little more flavor but I find many places over salt their food, which is worse, so I added some salsa to the rice and enchiladas and was happy. This was hands down the best Mexican food my wife and I have had in Colorado. We had the Poblano, chips and salsa, and Tres Leches. Simply incredible flavor profiles. Live about an hour away from it so can't return too much : but there is a Cabelas near by so maybe can use that as an excuse :-) read more

Love this place!! From the moment you walk in you feel like you are no longer in a strip mall but in a trendy little taco bar. The decor is super cute and cozy. We started with guacamole for the table and it was delicious and fresh and served with warm blue corn chips. The margaritas are a must! Tried cucumber & mango. Both were delicious & refreshing. Chips n salsa: all 3 salsas were great but the mango was killer. I usually don't like mango salsa, but this has a great flavor and kick to it. Great Mexican food. The taquitos are very tasteful and the people working there are very nice and helpful.

The food was really good I do recommend it. The only problem was my waiter, he was not very friendly. He took my order and once it was ready he brought it out to but not once did he pass by my table to see if everything was okay and if I needed anything else.
