I tried two distinct pizzas - one with grilled artichokes, grilled red peppers, broccoli rabe, and mozzarella, and the other featuring tomato sauce, mozzarella, grilled artichoke, Kalamata olives, mushrooms, and tomatoes. I visited a friend in Sarasota, and he told me about a pizza joint that I HAD to try that served up Roman pizza. I'm a pizza nut but I was unfamiliar with "Roman" pizza. I think pizza is the world's most perfect food - all pizza is good. It all starts out good and just gets better depending on how it's made, what the crust is, how thick it is, how dense it is, what the sauce is like, etc. etc. etc. I was skeptical just a bit. We went to RomanSQ, a small pizza restaurant in a rough looking block of restaurants and other businesses. I was even more skeptical when I saw the area. RomanSQ is a small, clean, comfortable little shop. Plenty of tables to eat at, a good selection of bottled beer, soda, teas and water. We went in and my eyes were immediately drawn to the pizza that was laid out for choice behind the glass counter. Rectangular pizza with some really amazing looking toppings. We ordered Margherita Pizza, a sausage pizza and the carbonara pizza (that was a lot of pizza for 2) to share. OMG! Best pizza I have ever had. Molto bene! ! ! Sorprendente! Pizza insolita e deliziosa! Amazing. Unusual, very different. The crust was outstanding. It was a substantial crunchy crispy outside crust with a thick but not dense, airy, light delicious interior covered in a substantial amount of toppings that were so incredibly flavorful. I could have stayed there all afternoon and eaten every one of the varied offerings. The pizza is fresh, fresh ingredients and authentic. You can taste the thoughtfulness and pride that goes into the making of these pizzas. Behind the counter were the owners. Real Italians from Italy. Friendly, engaging, helpful, funny people. Tom and his Hoa were great fun to talk to. When I asked about the unusual pizza dough and crust, they explained that it is fermented and kept for 96 hours in the refrigerator to get the taste and consistency that is really amazing. The texture of the pizza dough is unlike any I've eaten before and was unbelievably delicious. The pizza, in addition to the standbys of loaded pepperoni, cheese and margherita, came in some amazing combinations. The carbonara was intensely flavorful with a load of fresh garlic (one can never have enough garlic!). There was a variety of Parmesan pizzas a wonderful looking eggplant parmigiana, a pesto that looked mouthwatering, and a prosciutto crudo with arugula and lemon oil. The mushroom pizza looked over-the-top loaded and really remarkable. Fabulous! RomanSQ, Tom and Hoa offer up a huge variety of fresh, high quality Roman pizza, and pizza trays. You can order online or in person. I wish I lived closer. I'd eat here 3 or 4 times a week. I commend RomanSQ to you wholeheartedly without reservation. This pizza is fantastic! Excellent toppings & sauce adorning the most amazing dough - 96 hour dough! Sourdough - all natural, no added sugars, no additives. The key is the gradual formation of air bubbles and the pH of the water. Too high the acidity/alkalinity and the fermentation drops, giving you less bubbles and airiness. Roman SQ uses their own filtration system to make their light and airy pizza dough. Why 96 hours? That's what perfection takes. The slices look dense, but they are not. They are so weightless! Not like a thin-crust or even Sicilian. I was told this is 'Roman Style'. The toppings are amazing looking. Fresh and appetizing. Another thing is these come out so fresh, they pull them out and I don't think a pizza has the chance to sit out and get cold. The vibe is very friendly and the owners will talk to anyone and make you feel welcome to the city and make recommendations for you. Holy moly.... This is the best pizza I've had in Florida !! The margherita was amazing , the sauce tasted homemade , not too sweet and slightly acidic , a perfect balance coupled with the mild buffalo cheese, the dough was crispy , no flop , thick yet light , the aroma of the crust was reminiscent of the aroma I've had from New York pizzas. Absolutely divine and the perfect way to find out if any pizzeria has good pizza to offer. The potato el taglio , I hope I'm saying that right want as impressive. I opted for this because it was very unique and something I've never had before. Personally I like the contrast between cheese and sauce with dough. This was more like eating a bread with potato's and pesto on top so it felt like it was absorbing the liquids in my mouth due to the potatoes. SO good! Seeing that this was noted as one of the top places to grab a bite in Sarasota, our expectations were set high. Low and behold, the pizza actually exceeded our expectations! The crust was to die for. It was perfectly crisp, yet thick. The margherita pizza was perfectly simple. It allowed the sauce to speak through with the crust, and was accompanied by fresh cheese and basil. It was clearly thoughtfully prepared. The pepperoni pizza was very good, as well. Using true pepperoni with the right kick to it, it was a hearty slice. My husband was bold enough to grab a slice of the pizza that had spicy salami paste and layers of jalapeños on it. He enjoyed the strong heat and unique composition, but thought that the amount of jalapeños on it ended up diluting the salami a bit too much for him to give it a full 5 stars. He loved the meat so much that he wanted more of that for proper balance. The owners were friendly and clearly very proud of their restaurant, as they should be. They had a number of people come in while we were there, and they all chatted for a while as though they've known each other for a while. You definitely got a family feeling. read more

I wanted some thicker pizza so I gave this a try. It isn't deep dish or Detroit thick, but thicker than a standard NY. What I was surprised at was how crunchy the bottom was. I really liked this. I got the margherita buffalo. Make sure you ask for that because if you just say margherita you will just get cheese pizza even though the website shows pictures of the buffalo labeled just margherita. They probably need to update the site. Anyways, nice and crunchy, light sauce, and some delicious and creamy buffalo mozzarella. Each piece had a fresh basil leaf on it.
