Stay away!! I'm not local. We were in Waco moving our son out of his dorm. We were tired and hungry, We decided to try Roberto's tacos. The menu said the tacos came with cheese and queso. Where I'm from queso means cheese sauce. I ordered the tacos. We got back to the hotel and I had chicken and lettuce. I was too tired to ho back then, so I returned the next day with the uneaten tacos. The manager Reese refused to give me a refund. I made a side trip on my way from Lake Dallas since I read about Roberto's Taco Shop in the news. I was expecting the usual taco place food I have been eating for decades. I was pleasantly surprised. The young man who took my order was very nice. Since I was on the road I ordered two entrees, one for that meal, then one for the next day. The first one I ate was the usual tacos, beans, and rice. The tacos were hard shell; which I like. Pretty well filled and tasty. The beans and rice were beans and rice. What really surprised me the next day were the enchiladas. I don't care for very many enchilada red sauces, but I really liked this sauce. It was a nice balance of spices, and a key point, it did not give me heartburn. The price was very reasonable. Ive lived in Texas from Pacific Beach San Diego for 3 years now. Bought a house in Leander, but made the drive to Waco for it. This used to be my spot growing up in Clairemont. Carne Asada is exactly how I remember it. The best you will get in central TX (since no one really does carne, or if they do it's fat cut undercooked steak). Growing up in California I got used to that style of Mexican food, coming to the free state of Texas and actually being further south then Tijuana Mexico I thought the food would be even better. Sadly somewhere along the way Mexican food became TexMex, where I was used to bold flavors and the kind of hot salsas that you would feel it over an hour later. TexMex is different, just not to my tastes. Coming to Roberto's reminded me a lot of back home and the California food I'm used to. The service was perfect, I didn't go inside as I only went through the drive through so I can't tell you what the ambiance is like. It is so crazy to me that Roberto's has been around for years and I'm just now trying it. The other day I saw Roberto's taco shop on DoorDash and decided to come here on yelp to view some photos of the food. I was impressed with what I saw, so I decided to give them a try for my self. I got the California breakfast burrito and sausage breakfast taco and I was literally blown away. I can wholeheartedly say that this is the best burrito and taco I've had in Waco so far, and I've been here majority of my life. Every bite was a taste of Cali. We were in Waco for a volleyball tournament and were looking for something to eat. My husband went to school in San Diego which is home to the original Roberto's so of course we had to try it. The restaurant is very clean and the employees are nice. I will say the ingredients offered in some of the items are paired differently. The food has flavor but not well seasoned, most things required salt. The chicken and beef were good but there were way too many veggies in it. Had to come back almost a year and let me tell you the food was not too good. The steak (carne asada) tasted as if the meat was steamed or boiled not grilled. Was fatty and chewy and no flavor. I was transplanted to Waco from San Diego (east San Diego in Lakeside) and was missing SoCal Mexican food in a world of Texmex.
