Sat down: 9:00pm First course - 9:12pm: Scallops. Usually one of my favorite appetizers, but these were slimy and way too fishy. Second course - 9:50pm: Seal. First time trying it, so I can't say if it was the prep or just not for me. It tasted like raw tuna (which I love), but had the chew of a tough steak -- nothing like the melt-in-your-mouth texture I was hoping for. Exception: the bread was good! Third course - 10:30pm: Duck. Not terrible, not great. I love duck when it's cooked right, but the fat wasn't rendered enough -- it tasted like it had cooled and started congealing. Everything was chewier than it should've been. Maybe it was an off night. I know French dining is slower paced, but usually the food is better. For me, as a solo diner, nearly 40 minutes between courses was rough, and the food didn't make up for it. Cute atmosphere, great service, but the food fell flat and I still walked out having spent nearly $140 CAN. Can't recommend.

Overall: A // 5 stars…read more Exciting restaurant at the forefront of farm to table modern cuisine with new takes on common ingredients in an effort to reduce waste. Love the vegetable-forward nature of the menu, with every dish sounding amazing, and executed to perfection. Their presentation is unbeatable. (Grilled Broccoli: A+) - Fascinating dish that hits all the taste buds, including bitterness from the raddachio, which was tamed beautifully by the sweet pear. The green crack sauce is a majestic herb cream, and when combined with the fermented tofu sauce, and the savory and garlicky breadcrumbs, this was a complex dish that hit several impressive and underutilized profiles. (Delicata Squash: A+) - Fascinatingly presented dish that uses the top of a squash to create a volcanic canvas, with a squash puree on the bottom, and flavorful pumpkin seeds tossed in a spiced tomato xo . Hidden inside is a tender piece of pork belly as well. I enjoy the squash forward notes, one more sweet, one more salty, and then paired with a crunch that parallels with their waste reduction initiative and a mild spice to add an occasional kick. (Seared Duck: A+) - Fresh, vibrant duck breast that follows a savory palette moreso than sweet. The duck is tender and well rendered with a thin layer of fat remaining to permiate flavor. It works particularly well with the white beet puree, which adds an intense grassiness. The sea buckthorn is an interesting saline acidic flavor bomb with a more citrusy note than capers. Super big shout out to our host - she was absolutely superb in introducing the menu and making us feel welcomed. There is parking to the right of the building - which was super convenient. I decided to go with the tasting menu (menu dégustation). It is a ton of food. Started with a light corn cream - flavor was delicate and smoky. The bouillabaisse was perfect - scallop beautifully done. The roasted quail was also very good. All the garnishes and sauces complement perfectly. The foie gras with the super crispy bread was excellent. Even the sherbet for palette cleansing was superb. The scallop main course in mushroom sauce was an art. I honestly was super full by the time I got to the raclette and the panna cotta but they were both amazing. Would have given them an extra star if I could!

The service was friendly and prompt and I liked the trendy but relaxing atmosphere of the restaurant. We got the burrata appetizer which tasted super fresh and light. For the mains, I got the saffron cavatelli with scallop and veal with chanterelles and truffles. The flavour for the cavatelli could have been stronger as I didn't really taste any saffron at all and the veal was chewy, however the mushrooms that came with it tasted great. Dessert was really the star of the night. We got the beignets which came with caramel dipping sauce and it was such an amazing texture. Fluffy on the inside but crispy on the outside. I could've easily eaten another one. The caramel dipping sauce wasn't too overpowering or sweet and complimented the beignets wonderfully.

All of the items ordered appeared to be enjoyed by my guests. The prices were also reasonable, given the prime location and beautiful restaurant - I would say around $50pp before drinks. We shared a couple bottles of lower priced wine which was minimal when the cost was split. Overall, I am so appreciative to Gaspar Brasserie Française for the wonderful dining experience. My wife ordered their burger. For dessert, we split a Paris Brest. My meal was OUT OF THIS WORLD. I don't know how to find the words that describe how amazing my dish was. The beef - savoury and tender. The risotto - seasoned just right. But again, words don't do it justice. My wife's burger - good. Nothing out of this world. Not a bad burger, but not the best she's ever had, either. Finally, the wait time. Where did they lose points? The food came in a reasonable amount of time (17 mins.), but just waiting for the waitress to take our order took quite a while. But knowing this, if I'm ever in Montreal again, I would DEFINITELY go to this restaurant.
