I paired them a glass of Brut Excellence champagne and it went great with the dishes. Both are done perfectly and the presentation is Michelin delightful level. For the crab fish, I ordered a half of the portion on the lunch menu and it's still a generous amount. I wasn't hungry to begin with. I never am crazy about capers as they always overkill the natural flavors of the seafood. But this one is garnished with dill, lime mayonnaise, cress, cashew nuts, cucumbers, pickled tomatoes, red grapefruit, capers, olive oil and avocado cream. Bravo for the innovative twist for freshness and wellness. My daughter ordered the steak and lobster bisque. Both are delicious. Service attentive and friendly. We shared some oysters that were super fresh. I had a Zander fish that was pan fried. Loved it. My wife had the moules frites and ate them all down. Service was attentive. The large space was virtually full on a Wednesday night.

    EXCEPTIONAL! 5.0+…read more Our earliest dining experience with Noma was at their first Kyoto Pop-Up in 2023. Needless to say, it was an amazing experience, to which we added Noma CPH, back in their homeland, to our ever-expanding Bucket List. Dining at Noma is not just for people who enjoy eating; it's so much more than that. It's an all-encompassing experience. It's the senses being activated and heightened. The sights, sounds, smells, tastes, and touch are awakened, and new discoveries are made. It's an absolute appreciation of the culinary world. It began with a taxi ride. The anticipation grew minute by minute as we peered out of the window, wondering, "Is that it over there?" Being tucked away in a former industrial setting and shipyard district, the seclusion from the city center gives you a sense of being far, far away in a distant land. After being warmly greeted, we were asked to enjoy a drink with several other guests in the greenhouse. From a bleak winter shipyard to the lush, beautiful, and characteristically Noma environment, our senses were being awakened. It only fueled our curiosity even more as to what lay ahead. From the greenhouse, there is a lighted pathway leading to the building where the magic continues. You can see and witness the current cold season leaving the landscape a brownish-gray with the winter season. The tall entrance door is adorned with mussel/mollusk shells. The texture and color are stunning and piqued our curiosity even further. Ocean Season (menu offering at the time of our reservation) was one of my favorite Noma seasons. The elements of the sea are brought into the space with draped seaweed, light wood, clean lines, and warm lighting. Service was exemplary, and the dishes and wine pairing were both delicious and eye-opening. One of my favorite desserts, which had been made in Kyoto in 2023 and 2024, is the ice cream made to look like an oyster. Phenomenal! After the completion of the residency in Los Angeles for the Noma LA 26 Pop-Up, which we thoroughly enjoyed as well, the crew has returned to Copenhagen for limited reservations. Noma 3.0 is to start in 2027. Their menu now follows 12 micro-seasons which highlights ultra specific ingredients. For now, we continue to be a part of Noma Projects, where it keeps us connected to the wonderful flavors and concepts of experimentation from the Noma kitchen. We enjoy seeing and experiencing all that Noma has to share with the world, now and in the future.

When you're sitting there, paying an obscene amount of money for a tasting menu, it's impossible to ignore what's widely known about how this place has operated for years. The tension in the room is palpable. Service feels rigid and strained rather than warm. It doesn't feel like people who love what they're doing. It feels like people trying not to make a mistake. After going, I looked deeper into the restaurant and its leadership, and it only confirmed what I felt. René Redzepi has openly admitted in interviews that he was abusive and a bully as a leader for much of the restaurant's rise. For years, Noma relied heavily on unpaid or underpaid labor, with brutal hours normalized as part of the "experience." Knowing that completely reframes what you're eating and who paid the real price for it. As for the food, some dishes were interesting, but plenty crossed the line from thoughtful into gimmicky. Once the mythology wears off, a lot of it feels like provocation for its own sake. Innovation loses its shine when it's built on exhaustion and fear behind the scenes. I'm glad I went once, if only to see through the illusion. I won't go again, and I wouldn't recommend it unless you're more interested in checking off a status box than supporting a restaurant that treats people with basic dignity.

Atmosphere: The interior is Nordic chic, rustic and elegant. Even though we had a reservation, we were seated at a long table with other guests. At the time we were there, the angle of the sun hit me right in the eyes and I had trouble reading the menu and seeing for a few minutes. Their curtains are sheer, so they didn't help. The captain apologized, and said there was nothing he could do. Service: we were seated and given drinks menus. Everyone around us was served water, given menus and a description of what was available. Finally, a server came by to take our order, apologized for us not having menus nor water. I requested tap water, so I was surprised to be charged 30krone per carafe. Food: Every item shows technical proficiency and attention to detail. We ordered the schnitzel. It came with a small serving of fresh peas, cream, horseradish and a brown butter sauce. It was delicious. I would have liked more horseradish and peas. The sautéed leeks were served with salad greens and hard to cut. They tasted fine, but a sharper knife would have been appreciated; through our meal, no one came by. We also tried the hake. It looked small, but was very filling.
