I recently started dining on seafood a few years ago. A little background of my childhood. Two of my siblings are deathly allergic to all seafood. So we could never have seafood growing up. The smell alone would send them to the hospital. But I was always curious about fish, scallops, shrimp, lobster... So now my siblings and I don't live in the same state anymore. I'm loving my new world of exploring seafood! The fish at Redfin was fried just right. I hate when fish is fried hard, and your only taste is fried skin. Redfin was more of a nice crispy outside biting into a white meaty inside. I wish I knew the recipe for the batter and the combo of seasoning. It was such a perfect combination. The tartar sauce was made with flavor. I used my tartar sauce for a dipping sauce for my fries too. The next time I'm going to ask for two cups of tartar sauce. Chef Mario's food is outstanding and if you see this truck, chase it. The delectable menu spans culinary bites from mahi mahi tacos to a fabulous gumbo, and folks were eager to place their order online. The gumbo had enormous shrimp, perfectly cooked scoop of rice (not soggy at all) and just enough spiciness to tickle the taste buds. We had a great dining experience on Friday night and if they keep it up I'm sure they will be even more successful. We met these guys at the Whitestone Brewery in CP. We  ordered the gumbo, braised rib tacos, and hushpuppies. Yea we were hungry.  Everything was excellent. I never order hushpuppies as they are usually just too dry and too doughy. These were off the charts as they were light not doughy, and had a nice spicy dipping sauce accompanying them. The Gumbo was just spicy enough and pretty filling. My braised short ribs tacos were excellent. the meat was tender and well spiced. I would ask for a little less cheese on top next time but not a deal breaker. The truck was on UT campus today so I decided to check it out. The manager recommended the shrimp tacos. There were two and the first was problematic in that some of the shrimp was cold and others were hot. The contents of the taco was also very wet with a flavorless sauce which caused the tortilla to break before I started making a big mess. Let me start off by saying I work at Tesla and this truck comes to our factory regularly. I decided to try it this week by getting the breakfast burrito. I got the egg, potato, avocado burrito. Man, it was Hugh wrapped in a healthy tortilla. I could hardly finish it. Very good for the price. Next day I got the Maui Maui fish tacos which were fantastic tasting and for a good price. Third day I decided to try their buffalo chicken sandwich. I was totally disappointing that price to what I got. It was a thin piece of chicken that look like it was beaten to represent a fried egg. ( Remember that ad from the 80's, where's the beef, same here with the chicken.) It was smothered with mayonnaise and buffalo sauce. I couldn't even taste the chicken. The fries were covered in some kind of Italian seasoning with salt. They were small and disgusting. Why can't I just have regular fries? I love regular fries. Why do people think they can get culinary interesting by adding spices to something that spices shouldn't be added. So no chicken buffalo sandwich most disturbing disgusting thing on their menu. Found out that Redfin seafood truck was in our neighborhood (vista ridge sub) shortly after I got home from work. My wife works in the evening so I was excited when I found something convenient was in our neighborhood that we all love (seafood) and I could pick up without any hassle. We share a vehicle /car seat right now since one of our vehicles is in the shop. Figured it's a nice day and not too hot outside so loaded the two littles in the stroller , put the dogs leash on and took off to walk and get some food. Unfortunately for me I left my phone at the house, guess that happens when you go too many things on your mind and trying to do too many things at once. Needless to say I was pretty disappointed when I walk over half mile with two children under two years old and our dog only to be told you have to order online? Like really ?! it didn't say that on your website nor flyers posted. I was hoping to view the menu and get some opinions on food before ordering considering I had 5 plates to order/people to feed with 3 plates for children. I purchased their Avocado Tacos and French Fries for ~$21, I feel like I was ripped off not just because of the price, but because the Avocado Tacos were more lettuce than avocado--one quarter in a taco. Fries tasted horrible because of the two different seasoning they used and they were not cooked enough. It was in the Westcreek neighborhood for special day and time during this pandemic. I went and got shrimp tacos, mahi mahi tacos and even churros. Yup they got not just the churros...but the best cinnamon sugar churro with cream inside. So delicious. Oh back to the entree with mahi mahi and shrimp tacos. They r unique with Cajun spicy flavors and the cilantro is excellent combination with fish and shrimp. Definitely underrated seafood truck that you will want to come back and try different foods. I had their Catfish basket today and it was phenomenal. The filets were butterflied and cooked to perfection with a crisp light batter. The seasoning was excellent and the portion size was generous. The fries had a tasty dusting of spices, some parsley and garlic. With a price point of $9 for made to order seafood served right outside my office, this is a big winner.
