    During a week long, extended family vacation at a large, streamside Vail rental house, dad chose to…read moreretain Double Diamond chefs to prepare three dinners for our extended family of 20 -- primarily to give my mom -- grandma -- a break from her usual desire to be in the kitchen. As a foodservice consultant, I have to admit being a little concerned about what to expect from this dad-hired catering company -- especially when I knew nothing about them. Catering experiences can vary greatly. What we experienced, from Adam Weinberger and his Double Diamond crew, were three great nights of well-prepared foods, served at the right termperature, plated thoughtfully, timed perfectly for the pace of each evening - and then cleaned up even to the extent of sanitizing our counters. Owner/Chef Adam's passion for what they do comes through in the variety of foods they prepared -- and in his and his fiance's (darn, I forgot her name) ability to work in the background of our family gathering, preparing menu items that demonstrated a real foodie focus. From the appetizers to the desserts -- wow...simply well done. High marks to the Double Diamond team. Three excellent dinners. Variety and service. Everything good. Would be completely comfortable working with this group, again.

Everything was so delicious and the process of working with Shelby was completely painless and could not have been easier. She sent over a list of menu options with so many great choices that it was difficult to narrow it down. In the end we settled on crispy pork belly and eggs for breakfast, beef and lamb birria tacos for lunch, and a three course dinner including elk empanadas, oxtail osso buco, and pistachio tiramisu. We could not have been more happy with the experience. The food was spectacular, Shelby was a joy to work with, and it's clear she really loves cooking for people and takes great pride in what she does. It was fun to watch someone who is so good at what she does execute on some of the best meals we could have asked for. Highly recommend Eat Dank Food and will definitely work with Chef Shelby again without hesitation.

By the time we got to our Castle Creek house Chef Daniel was waiting for us, and my God it was the most amazing, romantic and delightful night my family has ever had. Chef Daniel served us beef Wellington, gratin d'auphinoes, napoleon ratatouille, Chateauneuf du pape and iles flotantes for dessert. The snow was falling and we had a fire in the fireplace. After Congnac, we knew it was not possible for life to get any any better. We found pure heaven. It was Chef Daniel that lead us to heaven. We can not thank him enough. We have since flown him to Geneva and New Zealand. We love him like our family.

    As good as it gets!…read more Chief Daniel Theme has been one of the best French Gourmet Cuisine Chefs for over 30 years as far as I remember! [...but still looking fabulous!] We both meet at Regine's Miami in the 80's-- for the younger generations, this was the place to be for the jet set, celebrities and politicians. I was a waiter who became a 'Chef de Rank' in a few months by studying Daniel behind the line and interacting with the guests in the dining room. One night, Daniel came to the floor and recommended the "soup du jour" to one of the Spaniard royal families, and I followed him to the kitchen, to see how he created the most exquisite cream out of a few vegetables. Later, I served the cream soup to the marquise who delightfully enjoyed it and asked me to bring Daniel back to personally tell him how delicious it was! His menu is full of eccentricities carefully measured to massage the palate and discover the flavors of a fusion cuisine, full of bursting flavors covering from the Patagonia to Alsace while dwelling in the Mediterranean and the Caribbean creole with Asian reminiscences. " Le canard a la'orange flambé" gives him an opportunity to make his own show in the dinning room playing with real fire. He does that again with his famous Baked Alaska - Ganache and Raspberry Cardinale for dessert. The Salmon Mousseline with Lobster Bisque is to die for! His Jumbo Prawns with Mango Tequila-cilantro Salsa reminds you of a memorable Tex-Mex story, while the Lamb 'Lollipop' Chops with Dijon Mustard, Green Peppercorn, and Cognac Sauce takes you to a fairy tale land below the Sahara line. Daniel knows how to entertain the patrons while becoming a celebrity chef in the dinning room, kissing and hugging the guests that come to the restaurant following him as repeat customers, and the new ones who happen to fall in love with him the first time they visit. He is a true celebrity since he was one of the first Chef to entertain a TV program with Telemundo, if not the first with Cocina Crisco in the early nighties, and other spaces in Univision, and later in PBS. He is sought after the Moroccan royalty and other Caribbean tycoons to entertain their famous guests on their boats featuring his 'haut cuisine'. In a nutshell, I consider that Chef Daniel is BIG among the best chefs in the world. This is not an oxymoron: It is history that has been recorded during many years in the media and he remains trendy and up-to-date, like the Mexicans put it, " y sigue siendo el Rey"!
