This is a great Vietnamese food restaurant! Being out side of Vietnamese centers like Westminster or little Saigon, it is hard to find Vietnamese food done right. One example that surprised me was their egg rolls, I'm used to eating the pork egg rolls, then using beef was a brilliant variation! Very crispy shell! Odd location and even more odd that theyve taken over a. Old Ruby's or other burger place. The interiors are not the nicest and space was cold being next to the skating ring. The owners did not spend much sprucing up the joint unfortunately. The servers are super friendly and helpful. They kept checking up on us to make sure we had all we needed. This is where Ruby's used to be, right next to the skating rink. I came around lunch time and I parked by Chico's. It can be a bit hard to find, if you're not familiar with the place. The interior was simple. I can see it to be a great place for families to gather and eat. It wasn't busy when I came and I was seated tight away. The menu is simple and had enough to choose from. I was in the area for Fika Fika next door, when I saw this place. I was a little hungry so I thought I would grab a quick snack before getting some ice cream. I t was about 4pm so in between major mealtimes and so it was a bit slow. I think I was the only one in there. Located in the Promenade. It's right next to the entrance near the skating rink. I was greeted by friendly staff who was ready to take my order. The decor inside is quite nice with colorful Asian lanterns and black tables and chairs. Although I should have ordered pho, I wasn't feeling it on this day. I just had a couple items on the appetizer menu. Wagyu sliders: these were pretty good. I tend to like lettuce in my burgers and the sliders didn't have any so I grabbed some leaves from the egg rolls to stuff in it. They were very tasty. What a great Vietnamese restaurant! I got to try their pho wagyu A5 and it was truly amazing. The broth was so rich and the meat was fatty and thinly sliced but so flavorful. We also got the shaken beef rice plate and it came with a side of broth which was a good combo! Their menu consists of various dishes featuring American, Australian and Japanese A5 Wagyu. From starters like Wagyu Sliders to Main Entrees like Wagyu Beef Stew to Pho with Wagyu Oxtail, this restaurant is all about premium beef and quality ingredients. I started off my meal here with their famous Flaming Wagyu. This is not your ordinary appetizer. The slices of premium American Wagyu is brought to the table raw and the server will then torch the beef tableside on a hot stone. It's a fiery show and one that ends with the most mouthwatering, tender pieces of Wagyu beef. The thin slices of meet simply melt in the mouth and has the perfect smoky flavor. There have been a few Vietnamese restaurants expanding from Little Saigon (Garden Grove and Westminster) into the South Bay, including Pho Hue Oi and Pho Redbo. Having visited Pho Redbo's Garden Grove location many times, I was excited to try its Rolling Hills Estates branch. Unfortunately, while still good, it wasn't nearly as memorable. The menu at the Rolling Hills Estates location differs somewhat from the Garden Grove and Westminster branches. I appreciate that Pho Redbo is willing to experiment with new dishes and fresh interpretations of Vietnamese cuisine. That said, I didn't find the food here as satisfying as what I've consistently enjoyed at the Garden Grove location. Pho Combo - 4/5. As with every Pho Redbo I've visited, the meats are excellent - high-quality, tender, and well-prepared. One thing I've always loved about the Garden Grove and Westminster locations is their pho broth. It tastes like it's made in-house with fresh ingredients, carefully simmered to develop depth and complexity. The broth at the Rolling Hills Estates location, however, tasted much more generic. It reminded me of the broth served at many other pho restaurants. To be clear, it's still better than what you'll find at most pho spots in the South Bay, but it lacks the richness that makes Pho Redbo's original locations stand out. In my palate, the broth could use more rendered beef fat, along with a stronger balance of aromatics and spices, to create a fuller, more layered flavor. On a positive note, the rice noodles were cooked well - springy and pleasantly al dente. Pho Sandwich - 2.5/5. This is essentially Pho Redbo's take on a Vietnamese-inspired Philly cheesesteak, and I genuinely love the creativity behind the concept. Unfortunately, the execution didn't quite come together. The beef is, once again, excellent. Although the beef can use a bit more flavoring. Instead of traditional cheese, the sandwich uses a Sriracha mayo, which I thought was a clever substitution. However, the hoisin sauce (or what I believe was hoisin) was overly sweet and overpowered the other flavors. I understand this isn't meant to be a bánh mì, but I think the sandwich would benefit greatly from some pickled carrots, daikon, or/and cucumbers. The acidity and freshness would help balance the richness of the beef. The promotional photos also show a generous amount of onions, but my sandwich had very few, making it feel somewhat one-dimensional. Then there's the bread. A great Vietnamese-style sandwich still depends on a great baguette. Mine lacked the signature thin, crackly crust and slightly chewy interior. Instead, it was dry overall and overly soft and pillowy inside. One aspect I did enjoy was that the sandwich comes with a side of the same beef broth served with the pho. It's a thoughtful pairing that complements the sandwich well. Overall, I'm admittedly picky when it comes to noodle dishes, especially pho. Despite my criticisms, I still think Pho Redbo is one of the best pho restaurants in the South Bay. However, compared with its Garden Grove and Westminster locations, the Rolling Hills Estates branch falls short. My friend and I went to diner here last week. This place is located inside of a building with an ice skating rink right next to it! There's a parking structure nearby so there's plenty of parking! Just take a little stroll over to the location! It was previously a Ruby's Diner, but it's all super cute inside with their decorations! It gave a pretty cozy vibe to it overall! Drinks we got were the lychee tea and the peach tea, both were very fruit forward, not super sweet, and it goes perfectly well with all the food you'll order! Starters: Wagyu Beef sliders, it comes with caramelized onions and melty cheese and their sauce right on top. It was juicy and the buns were perfect. Honestly just give me that and I could be settled. But we're not done! Beef and Shrimp Eggrolls, super crispy, that perfect amount of filling. And you can even use the lettuce to wrap it! It was super tasty! Flaming Wagyu, the star of the appetizers, cooked right in front of you on a lava stone with a blowtorch. We got it medium rare, and it came out perfectly. It completely melted in your mouth and they give you a ponzu sauce to dunk it in. It was amazing! Mains: Wagyu Fried Rice: Oh boy, how fried rice has now been tainted forever. I love this one so much. The beef melting in your mouth, and the broth that it comes with to heighten the flavor. *chef's kiss* Wagyu Stew: Okay, Vietnamese stew, I've never tried it, but let me say that it was actually amazing. You can taste the different flavors melting together. The meat and the veggies just melt in your mouth. You get a choice between Noodles, Rice, or a baguette, and you bet I got that baguette!!!! Pho A5 Wagyu: Now this just isn't fair. It's basically a delicious shabu with wagyu beef. The pho broth is in the stone bowl to keep it warm, and they give you the beef and noodles on the side. But best believe it was just the most amazing thing I've tasted. It's rich, you can still do some modifications, it's just overall amazing! Wow, this menu was top tier quality! You can really taste the difference with Wagyu beef. The Phở was so rich and the Bò kho stew had all the flavors from my childhood. What's really unique is their menu items which is a modern twist on Classics like the Phở French Dịp, Wagyu Sliders and Wagyu fried rice and that table side flaming Wagyu was both fun /interactive and a tasty bite. The Rolling Hills location was located in an outdoor type shopping plaza with a parking lot attached to the plaza. Pho Redbo is tucked away in the corner of the Promenade in PV and is a great find if you're a meat lover. Their Vietnamese pho leans heavily into beef, with options like rich beef broths and even Wagyu pho that really cater to people who want a hearty, meat-forward bowl. Just a heads up for vegetarians--there are no vegetarian options here except the fries. One thing that surprised me is that they don't offer chicken pho. They do have shrimp pho though, and it's actually really tasty. They're generous with the shrimp too, which I appreciated. I'm a sucker for anything truffle, so I had to try the white truffle fries. Unfortunately, they were a letdown. The truffle flavor was barely there, and for $9 you get a pretty small basket of shoestring fries. Not really worth it in my opinion. Service, however, was great to amazing. Even about five minutes before closing, they were still welcoming and didn't turn anyone away. That kind of hospitality definitely stood out. Another nice touch is the view overlooking the ice skating rink in the mall--it's a fun little scene while you eat. Overall: great spot for beef lovers and solid service, but I'd skip the truffle fries next time. read more

We had dinner here the other night. There is ample parking in the structure next to the center they are located in. The restaurant itself is large and the former home of Ruby's Diner. We started with a lychee tea and a peach tea. Both were so flavorful and refreshing. We got the wagyu sliders. Tasty and super tender wagyu burgers. Nice way to start. Next was the flaming wagyu plate. They torch the wagyu tableside. It is quite the show. Dip the wagyu in the ponzu sauce they give you. You won't regret it. We got the wagyu fried rice as well. I am still thinking about it. So flavorful and putting the broth on the rice took it to another level. For mains we got the wagyy beef stew. As one who isn't a stew fan, well this changed me. The broth was so tasty and the beef and vegetables literally melted in my mouth. Would totally get this again. Finally, we got the A5 wagyu pho. Game changer. The A5 melts in your mouth. A surreal experience. The staff here was incredibly friendly and helpful. This will be your pho restaurant of choice. read more

PV is so lucky to have a good pho spot! This restaurant replaced Ruby's. It still overlooks the ice skating rink. The service is fast. All of the employees are super nice and friendly. The banh mi here is delicious! I ordered the pho well done brisket and thought it was great. They give you all the sides to add to your soup. The menu is quite small, so if you don't like pho soup, there isn't much else to choose from. However everything here is good! They don't sell alcohol but they have great drink options like thai iced tea. The ambiance is chill and casual. read more

This pho is fancy, and the prices reflect that. The Pho Combo is worth the price, IMO - the broth is rich, and the rare steak is great, the brisket fatty and tender, and the rib cubes melt in your mouth. Don't pay for the upgrades - I tried the Wagyu Oxtail, and the meat so tough I had to take it home to avoid ugly-gnawing on it in public. Shaken Beef uses a quality cut but is bland, and the Wagyu Beef Stew is alright but the beef chunks have varying levels of tenderness. Great Eggrolls! So crispy that the crunch vibrates through your head. The beef is extra good, and the shrimp adds extra flavor. There were some mehs and misses but I would come back for the regular pho. read more

The broth was very tasty and comforting. Perfect for cold weather. I have been wanting pho since it's been raining/ cold. Would definitely order again and recommend. Something I probably would pass on are the egg rolls. They were just ok. I also didn't eat it right away. We ordered way too much food. I had an egg roll later and it was not crispy, but I also ate it later that day. Service was fantastic. Friendly and fast service. Our waiter was incredible!!!! Located next to the ice rink you'd think this random pho place wouldn't be anything special but it's definitely worth a visit! First of all there is plenty of seating and very nice decorations in the restaurant. For parking there is a parking lot (which can get full when there's hockey practice) or street parking. As for the food, we got the rare steak and tender beef cube pho which were just so delicious The tender beef pho was my fave and they definitely don't skimp on the meat. They really live up to their wagyu pho name! Lastly, the service is wonderful, they were always making sure we were taken cared of. Definitely would recommend! read more

Expensive, but overall good quality pho. It's located in Rolling Hills estates right by the ice rink. It's a smart location, lots of families come by after ice skating lessons and have dinner there. There's plenty of seating inside. Service is a bit slow or they're just understaffed. We came when it was relatively empty around 5pm, but the one waitress/front desk person told us to wait a few minutes since she was the only person I saw taking orders, serving, and seating. Eventually someone came out and seated us. I think during time we dined there, they only had 2 waiters taking orders and serving for the entire place and one person packing up all of their to-go orders. Took a while also to take our orders, I saw the same waitress seat and take orders from another table before we finally got our server to acknowledge us and take our order. Staff is very friendly and helpful when they get to you. The food is of good quality. I think because of their location and the locals they're targeting in the area, it's well done. Food is generally expensive for what you get. You're looking at a $20 regular sized and $24 large pho, with more premium options up to $45 with A5 wagyu. I miss the days when pho was an affordable comfort food. They give you plenty of bean sprouts, basil and jalapenos. Don't hesitate to ask for more if you need, no additional charge. The broth is delicious, maybe slightly saltier than I'd like, but very flavorful. We got the large combo and it was a good amount of noodles. All of the beef is really good (rare steak, cubes, brisket). Perfectly tender and just the right amount of fat. The meatball is nothing special. Overall, while the pho is good and worth a try, it's not a place I'd come back to often. It's a bit out of the way in Rolling Hills, and there's a lot of other options in my opinion for good pho and better value. read more
