This place was hard to find because it's tucked in a corner of the shopping center by Kuni's and Suzies. When we got there there were a couple of people sitting at tables waiting. Heard a lot of people in the back but no one in the front of the house. After about 5 minutes, I rang the bell and someone finally came out. There were a couple more people waiting to be seated at this point. The lady seemed kind of agitated when giving us menus but she seemed to shape up towards the end of our stay. Cashier said she lives to complain....lol. She complained that I took longer to get there than what I said. Came here for lunch, it wasn't busy. Plenty of seatings. Service was fast and efficient, and the staff were genuinely friendly and welcoming. I ordered a medium brisket pho. The pho broth was rich and flavorful, and the medium bowl came with a very generous portion of brisket. We also tried the calamari, it had a light taste, though I wish the squid pieces were cut a bit thicker for more texture. The BBQ meat was also good, well-seasoned and cooked just right. Overall food and service is great. They should definitely play some music though. Tai has been the owner for over a year now. He renamed the place and renovated and painted the restaurant. The establishment looks cleaner and more spacious than the previous owner who owned it. The menu has expanded, and the quality of food has gotten better. Tai is a friend of mine and I have enjoyed eating at his restaurant since he took over. He has the best bun bo hue on the island. Best pho broth on island. We came in as a party of 5 on a Sunday night at 630p and they could seat us immediately. We ordered and had our pho served to us quickly within 15 mins. All soups come with basil, lemon, bean sprouts, hoisin & chile sauce. Good spot to get some fast Pho. It's 5 stars for what it is. Ambiance is Vietnamese. A local mom and pop shop located in Waipahu. It's in between Susie's and Kuni's Restaurant so you can't miss it. There is parking available, but it's a little tight and crowded depending on the time of day. Definitely one of the hidden gems on the Leeward Side, especially if you're craving for some hot Pho. When you enter the restaurant you can either go to the register and order take out or they will ask you if you're dining in. I ordered take out and got the Seafood Pho. It comes with shrimp, fish balls, calamari and imitation crab, and it really hits the spot. When you order take out they separate the broth, the noodles with ingredients and the add ons (jalapeños, lemons, and mint). They also give you sauce cups.However, if you're not used to spicy sauces like sriracha, tell them not to combine it with the Worcestershire sauce, because it's already together. It's convenient, but not for those who don't want sriracha. I recommend calling and placing an order because it is a popular hotspot and they're short staffed. So waiting for your food can take a while especially ordering take out. They do serve dine in customers quickly however, it should be a little organized on who ordered their food first. Living on Oahu, one can find many good Pho restaurants but to find a truly great one....it takes time, exploration outside one's comfort zones, and a fair amount of perseverance. Word of mouth also helps.... Someone I know made a comment about one of my other favorite pho spots: "oh yes that place good, but if you really want to try authentic like we make in Vietnam, then must try Pho Bistro" Fast forward to recent days when opportunity presented a chance to visit Pho Bistro. Small tucked away shop at the hidden end of an old strip mall (within sight of the taxpayer monstrosity known as "the rail"), the place is small but quaint. Ordered the seafood pho and my dinner companion ordered the spring rolls and Basa fish with vegetables. The food came out incredibly fast, and oh so aromatic! Basa fish: flaky, rich textured, with ragout of pineapple, cinnamon, cilantro and other vegetables. A+++. Spring rolls: my companion rated these as B+.... good Pho: the single most memorable characteristic element was the broth that was nuanced with complex notes of cardamom, cinnamon, ginger and several other flavors that I could not accurately describe or identify. But it was sublime all the same. AAA+++ I still enjoy some of my other pho spots primarily because of my friendship with the owners but will certainly be back to sample more of Pho Bistro's amazing pho broth. My go to spot for pho!! Their broth has so much flavor and they always give a lot of meat. Spring rolls are fresh, they also have a fried chicken spring roll which is so good. Not only do they have good pho but really like their lemon grass chicken vermicelli! You can add in spring rolls for only $1.25 Portions are always big and leaves me full and satisfied. Unfortunately, throughout the years and a change in owners the quality of Pho found outside of Honolulu is really hard to find. I was unhappy with the amount of oil that was in my take away order and was shocked to see the amount of oil sitting at the top of the broth. I took a few bites and instant upset stomach due to the oily broth. I eat Pho to settle my stomach and get the gut back right but the opposite happened.
