However, even my non-GF friend agrees that the Gypsy Moon Cake macrons are amazing. The cookie part is light, flavorful, and melts in my mouth just the right amount. The filling is rich and creamy, with a terrific flavor that complements the cookie. To be honest, it tastes more like almond than pistachio to me, but I love almond flavor, so that's a wonderful thing. Another bonus is the owner is very friendly and interesting to talk with. She and Gypsy Moon Cake are examples of why I like to support local businesses--these macrons are far better than anything that can be mass produced, and she cares about her product and her customers more than any employees of a chain bakery would. Fortunately, we bought other macrons too, so we'll have more tomorrow. Unfortunately I live out of town, so I can only get the macrons when I visit my friend near Jamestown.
