Since it all came frozen, freeze-thaw cycles, steam-heavy baking, and underbaking keep that moisture from escaping, so the pastry compresses and oozes instead of flaking. In short, their pastries taste like they're optimized for efficiency and holding time, not mouthfeel--so we were tasting water where butter should have been doing the work. Absolute fail.
