This is the kinda jawn where you walk in and immediately feel like you should've worn your good sweatpants. First thing you see is the Amarosa rolls sittin' there like a care package from home. Six packs. For the exiled East Coasters who been wanderin' the desert west lookin' for salvation. You grab one and whisper "Go Birds" under your breath like a prayer. But here's the kicker. The thing that made me sit back and whisper "holy jawn" to myself. They got water ice. Not "Italian ice." Not "shaved ice." Not "snow cones." Wuddir ice. A dozen flavors deep. A rainbow of frozen Philly childhood trauma therapy. Cherry that stains your lips like you just fought someone behind a Wawa. Mango that tastes like summer in Wildwood. Lemon that hits you with that perfect sour slap. Blue raspberry that should be illegal but isn't because God loves us. The dining room? Bro. It's a time capsule. A couple Rocky posters, a faded Eagles banner, and some Philly relics that look like they were stolen from a South Street pawn shop in 1998. Nobody's here for ambiance. The ambiance is the sound of the flat-top hissin' and some guy in a faded Brian Dawkins tee orderin' "two to tree" sangwidges like he's callin' plays at the Linc. And the cheesesteak? Best one west of the Mississippi, swear on my mother's gravy. Meat chopped proper, cheese melted like it's tryin' to hug you, onions sweatin' harder than a Cowboys fan in December. You grab a sack of these beauties, waddle out to your car, and eat 'em in the front seat like the feral Delco rat you truly are. Grease on the steering wheel. Roll crumbs on your hoodie. Tears in your eyes. Pure joy. By the time you're halfway through, you're poundin' the dashboard yellin' "BIRDS" at nobody. A stranger walks by and you nod at him like, yeah, we from the same tribe. Texturally it was way too thick and dense, which would have been fine if it actually tasted like key lime. But it was severely lacking in that tart key lime flavor that it's known for. I'd definitely go back because of the service and vibe. But I'll maybe try a burger and the cheesecake instead.

I get that smash burgers are all the rage these days, but if a burger patty spends as much time on the second side as it did on the first, it's not crustified; it's as tough and juiceless as jerky. an abundance of aging primals are on display at the WISE OX. when they're cut into steaks, the trimmings are ground for burgers. a not-particularly-wise cow died for our sins (so said the family's vegan son who begged off lunch). honor that and cook the meat properly. to not do so is beyond sacrilegious. if I told the meat cutter (aka the "butcher") I was going to use the dry-aged Rib Eyes or New Yorks he'd just carved up to make jerky, he'd be horrified. so, why isn't he raging at the guy on the grill doing that to our burgers? the BEEF FAT FRIES (aka Tallow Fried Fries) still have great flavor, but are still way, way, way too salty. check the photo, and count the visible salt crystals if your cardiologist's on speed dial.
