Avocado Toast with Smoked Trout
Tim H.

This is the one cafe that I have gone back to more than once on my visit to Sydney. Not that the others were bad but Paramount is just that good. The staff are delightful, the coffee wonderful, and the food is fantastic. I highly recommend the Avocado Toast with Smoked Trout.

Chicken burger

I ordered a Mocha and a chicken burger, it was served in a good portion, and tastes delicious. The Bakery upstairs is also good, had ordered a freshly made cardamom and orange flavored pastry. High scores for quality of food, and for the good vibes.

Amazing breakfast and coffee!! Came here early on a Saturday morning and were sat very quickly. We started with iced coffee (amazing) and a cappuccino, then had the eggs on toast and chicken and waffles. The chicken and waffles was probably the best I've ever had. It was the perfect balance of flavors - sweet, savory and with texture. Highly recommend!!

So hungry I had to take a bite before the pic

Having drooled of their Instagram Ham Hock Toastie, I walked in the rain 3km, took a few wrong turns thanks to Siri and my lack of direction and tried to start my visit on a positive note by ordering the toastie. Only to be told that they only have a cauliflower toastie. Another waiter said the Ham Hock was his fave and it might return. Coffee was good, not as ordered (extra hot) but had good flavour. The cauliflower toastie had cold ingredients as cauliflower and onion were cold and not toasted right through. The service was excellent, as was the ambience, when you come for food you want it to be on par. Sadly a once only visit, but worth checking out the concept.

What a vibe this place is! My goodness. Staff are super friendly and helpful as well-I opted for the Stracciatella, chilli & hazelnuts on rye, with heirloom toms, smashed avo & sautéed greens. SO GOOD! Highly recommend the dish. Find out more in my video review https://youtu.be/QMf9tiKt6c8

Crumbled Eggs

We were in Sydney for 2 days in November last year. We stopped by different parks, fish markets, quays, restaurants, coffee shops, and bakeries during our time there and yet, 6 months later, my wife and I still look at Paramount Coffee Project as a major highlight. Our fondness for this place grows with each passing day as we reminisce about the year of our Lord, the Two Thousandth Nineteenth. What a beautiful year it was, minus the Australia fires and stuff. Paramount was a short walk from our hotel, which was a short walk from the train station, which is why I had it on our food-schedule for the day. I had seen that it was highly rated and had great looking food, but I wasn't prepared for the general ambiance and atmosphere of the place. Paramount has this nice hotel lobby + coffee shop feel to it that's just barely closed off to the outside world, but lets in a ton of natural light. It's a beautiful dining area and just lends to the overall wondrous-ness of the place. The food is just...wow. Praicy and I were just looking at each other after each bite, just having a hard time believing we were eating something so good. I'd recommend the crumbled eggs and chicken & waffles any day. My favorite between the two depends on the day of the week because they're both just so flavorful and unique. Paramount's regular drip coffee is great as well and, if I remember correctly, served in a really unique decanter that you can pour yourself. I can't think of a good reason not to stop by. Give it a shot if you're in Sydney; it's within walking distance of the trains and will more than likely be a totally fresh and memorable experience.

Coffee was good but they only have almond milk, no soy... Doesn't reallllly matter, I just like having the option :) Two of us had ordered food from the mostly lunch-looking menu and they were just ok.. Nothing memorable. The menu had lots of interesting sounding items on it, just nothing we'd want to eat for breakfast... And perhaps not even for lunch lol. Fun to read though. Service was fast and friendly but we prob shoulda been topped off of the ok-ness since it was lacking the bustling crowd at every other popular cafe on a weekday. If you're nearby and need a stop for coffee for takeaway, it'd be worth it. If you're looking for food, I'd say take a pass.

Paramount Coffee Project is a blend of rustic interior meets modern minimalist style. Serving up bites and drinks full of flavor, there's definitely nothing minimal about the taste here. Tucked in a corner of the Surry Hills district of Sydney this unassuming cafe offers much more than your typical neighborhood hang. Stop in for breakfast, lunch or whatever. Everything's served all day, and coffee drinks are top notch

Flat white

Sometimes, you make mistakes in your life. But you wouldn't know it was a mistake until you've made it right? Well, this particular mistake I've made was getting the cronut. I first heard about this croissant and donut hybrid a couple of years ago when it came to NYC. People were waiting for hours and hours for this thing and I never understood the appeal of it. So when I saw it on the menu of Paramount Coffee Project, I decided to try it. Of course, I wasn't expecting it to be as good as I've heard the original was, but I was expecting better. This imposter was dry and almost chewy. It tasted like it was baked a week ago. And it was $5 so it was definitely not worth it. Their mains were not much better. I ordered the baked eggs ($17) It had chorizo, cannelini beans, and came with a piece of toast. The eggs were good but the chorizo was really salty, and super dry. I'm sensing a theme here. To wash it all down, I had a flat white ($4) which wasn't bad. I guess if they have the word, "coffee" in their name, then that's what you should come here for. And that's it. I mean, you wouldn't go to a gas station to buy sushi so the same concept applies here. Just stick to the coffee, avoid the food and you should be fine.

Tim tam milkshake

No host aka. open seating situation, which made it awkward when my party of 10 arrived for sit-down breakfast, and the only large table available was occupied by a lone diner on his laptop... Fortunately, he moved to bar seating for us - thanks, mate! PCP had a coffee shop vibe with restaurant-quality food. Fave brunch items: chicken and waffle (more like a quarter waffle) and the soft-baked eggs with sausage. Also, I chugged my tim tam milkshake like beer because it was so good (just wished it came with a tim tam biscuit garnish). The rest of my group thought their flat white coffee was fine, nothing special. Not a bad choice for brunch if you're in Surry Hills area.

This place is an absolute culinary masterpiece! The baked eggs and chicken and waffles were an experience on my tongue! I'm obsessed.. we didn't get to try the pastries because we didn't want to overdo it, but definitely will be back when I'm in the area to try it all!

All sorts of cronuts

Whoever says you can't eat chicken and waffles for breakfast is crazy and you should no longer be their friend. It's pretty much the best way you can start the day, particularly the gourmet version they dish up at PCP. In fact, I wouldn't be surprised if it had PCP in it. The rest of the brekky/brunch menu is similarly appealing in that menu-paralysis what'll-I-have kind of way, and when you tee it up with a Magic (flat white on a double ristretto base, not on the menu but the baristas are down with everything coffee and took this order with a knowing nod, the kind one connoisseur gives to another, even though I'm kinda faking it til I make it). The interior feels like some kind of fancy designer's living room, all open and light with a semi-industrial feel and the Slurry fashion crowd schlepping past with their Boston Terriers and their red velvet loafers.

Walking up William St towards the Kings X coke sign, a landmark that defines the area, we cross the…read moreroad and veer to the right as we are headed for our destination, Frankie's Beans. Being in the Cross, the name could mean anything, thankfully for us it refers to coffee. With two highly rated cafes on the bean hunter App, 'Frankie's Beans' and 'cafe with out a name', we had to check this place out. We arrived at the cafe, looking back down William St, this cafe perched on the hill has a good outlook of the city skyline. Inside the cafe, it has a modern Scandi theme, with light coloured wood and whites. There is plenty of coffee paraphernalia to keep you distracted. We meet the friendly Frank and select a table outside and take in the view before ordering. We had been hearing good things about the coffee at Frankie's Beans. Frankie heads out to his roaster every Monday to experiment and create his award winning specialty coffee. The pour over method, the preferred drinking method of many coffee aficionados wanting to taste the flavours of the coffee. These flavours can be influenced in many ways, be it origin, variety or how they are prepared. The pour over method can be a timely process, but Frankie is an innovator and has modified his coffee machine to produce a pour over type coffee in an efficient manner. The process is call FAB, short for fractional atmospheric brew. Pop in to see Frank, he will happily explain the process in detail. After hearing so much about the FAB we are intrigued and must try. Frank suggests we try two single origin varieties with a single origin from Elsalvador and Costa Rica. This was a way of sampling the FAB method as well as an experiment to taste the difference first hand. The experiment worked both brews were very different in taste and appearance, with the Costa Rican's fruity characteristics being my preference. This being a brunch visit, some food was also in order. Frankie's Beans has a range of sandwiches, cakes and breakfast options available. We had it on good word that their toasties were the bomb. Deciding on the Rueben and the Slow cooked lamb with Tzatziki, we were not disappointed. Asked to pick which was our favourite, almost an impossible task. However on this day the Rueben won for me, but this may change on any given day as both were fine examples of a toastie. Having also heard about the 3 Colombians blend, for milk based coffee. A triple blend single origin, being in the East I ordered my usual latte. A smooth coffee drinking coffee with a strong flavour, perfect to drink without sugar. A great cafe worthy of a visit for coffee lovers, we left buzzing and not only from the coffee consumed. Frank is a top guy and his staff friendly and welcoming, they have great coffee and do kick arse toasties. Suffice to say we will return and be hunting down the 'cafe with out a name' for a coffee as well.

What attracted me to Crave Coffee was its unusual exterior and location. Situated on Maddox Street,…read more(Nothing unusual about that), it has the appearance of a warehouse, a small outlet for coffee related paraphernalia and the coffee itself. Then, if you follow the instructions and go upstairs, you'll find the actual cafe in a sort of loft, hovering over the warehouse section of the business. I entered the establishment, unsure of whether I was supposed to be in there, the place was empty. Apart from the massive sign which read, "Now Open" there was no way of knowing whether it was open or not. (Give me a sign lord!) I walked upstairs and was met by the barista, I asked if they did milkshakes, I wanted a shake badly, eager for something refreshing to sooth my dehydrated skin. I could feel the dryness in my hands. They didn't serve milkshakes, "Coffee" she said, was all they did. (That and food.) I told her of how I had already had four coffees that morning. This was no lie, I had one when I woke up and then I had three meetings, all involving a caffeinated beverage. I succumbed, such was my desire to find out about this small and mysterious cafe. However, in order not to further destroy myself with these caffeinated treats, I decided to get a Macchiato, a small coffee (Still probably with the same amount of caffeine.) The coffee was really, really tasty. I sat with a bottle of tap water and sipped some water with my coffee at a ratio of ten to one in order to get some liquids into my body, other than the rain.

I turned up today to buy my regular kilo bag of their signature "Lindt Blend" beans (for home) and find that they have expanded to the restaurant space next door! Now with more room to hangout for Coffee and Breckky or Lunch. They also do a mean takeaway coffee at the front. (Okay so I'm excited for them!)
